SOURDOUGH CHEESE BREAD

Sourdough Cheese Bread image

A very rich, gooey appetizer, but wonderful for football Sundays!

Provided by LISA FRIEND

Categories     Appetizers and Snacks

Time 45m

Yield 35

Number Of Ingredients 8

1 (1 1/2) pound round loaf sourdough bread
1 cup butter
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 tablespoon poppy seeds
1 tablespoon seasoned salt (such as Spice Islands® Beau Monde Seasoning)
1 tablespoon minced onion
1 pound Swiss cheese, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Cut a checkerboard pattern into the sourdough bread round by cutting 5 or more slices about 1 inch apart into the sourdough bread round with a serrated knife, taking care not to cut all the way through the loaf. Rotate the bread a quarter turn, and cut 5 or more slices going the other way, to finish the checkerboard pattern. The slices will still be attached at the bottom.
  • Melt the butter over low heat in a saucepan, and stir in the mustard, lemon juice, poppy seeds, seasoned salt, and onion until the mixture is well combined. Place the bread loaf onto the prepared baking sheet, and carefully pour the butter mixture all over the bread, including in the cracks between squares, letting the butter mixture soak into the bread. Stuff slices of Swiss cheese into the spaces between the bread squares.
  • Bake in the preheated oven until the cheese is melted and bubbling, and the loaf is browned, about 30 minutes. To serve, let guests pull the bread apart into individual squares.

  • Using a serrated knife, cut a crosshatch pattern in the bread by slicing it lengthwise then widthwise without cutting all the way through the bottom crust.
  • Melt the butter in a small saucepan or in the microwave then stir in the minced garlic. Brush the garlic butter inside the bread, carefully pulling apart each section so it’s distributed throughout the entire loaf.

  • Prepare the spice blend, by combining the za'atar and olive oil in a bowl and mixing well. This will help the spices to adhere to the bread.
  • Slice the sourdough loaf. First slice the loaf across - as if you're going to cut medium-thick slices from the loaf but leaving 1/2-inch at the bottom of the loaf (you don't slice all the way through). Then slice the other way, an inch or so apart, so you have a crisscrossing grid pattern in the bread.
  • Brush down in the bread cracks ('pockets') with the za'atar oil combination, adding a little to the top too. You could also use a turkey baster to distribute this mixture easily.

  • Preheat the oven to 400°F. Put the bread on a large sheet of heavy-duty foil. Using a large serrated knife, make 1-inch-wide cuts from top to bottom, stopping about 3/4 inch from the bottom (this will hold it all together). Rotate the bread and make the same 1-inch-wide cuts in the opposite direction to form a crosshatch pattern.
  • In a medium bowl, mix the cheese with the parsley and the garlic and onion powders. Season the mixture generously with salt and pepper. Using your hands, gently spread the bread open and scatter the cheese mixture inside the cuts. Drizzle the melted butter inside the cuts and all over the top of the bread. Wrap the loaf tightly in the foil and put it on a baking sheet. Bake for about 15 minutes, until hot. Unwrap the loaf and bake for 8 to 12 minutes more, until the cheese is melted and the bread is crusty. Transfer to a platter and serve hot.

Switch to the dough hook and knead on medium-low speed until the dough is quite elastic, about 10-15 minutes. Resist the urge to add more flour - you want the dough to be very soft.
  • Transfer the dough to a large, buttered bowl. Cover and allow to rise at room temperature for 8-12 hours, or until doubled.

  • Cover the pan and allow to rise at room temperature for 6-8 hours, or until the rolls are quite puffy and fill the pan.
