SOURDOUGH CHICKEN CASSEROLE
I got this recipe when I lived in California several years ago. I can't remember the source but it is not my original recipe. My late husband loved this dish and I hope you will, too.

Steps:
- 1. In a medium bowl mix bread cubes, 1/4 melted cup butter, cheese, and parsley. Set aside.
- 2. In a large skillet saute onions (stirring most of the time) in remaining butter for about 15 minutes or until caramelized and dark golden brown. Preheat oven to 400 degrees. Add mushrooms to onions and cook for 5 minutes, stirring. Add remaining ingredients and continue to cook for another 5 minutes. Mixture should be hot and bubbly.
- 3. Pour hot mixture into a buttered 9 inch square pan or casserole dish. Top casserole with reserved sourdough bread cubes. Bake, uncovered, for 15-20 minutes or until golden brown and heated throughout.
CHICKEN & SOURDOUGH DUMPLINGS
A nice change from traditional chicken and dumplings. A little more work, but worth the effort. Can easily be increased to accomodate more.

Steps:
- Chicken: Over medium heat add flour to melted shortening.
- Stir constantly while adding all other ingredients except chicken.
- Add chicken, pour into a 3-quart casserole dish.
- Dumplings: In large mixing bowl thoroughly stir together flour, salt, baking soda and baking powder.
- Combine milk, egg, sourdough starter, and oil.
- Add to dry ingredients all at once, stirring just till moistened.
- Drop dough from tbsp into boiling water (dip spoon in hot liquid before dropping dumpling each time to help batter slide right off).
- Cover and simmer for 15 minutes.
- Remove with slotted spoon, drain and place on top of cooked chicken.
- Cook, uncovered in over, at 350º for 10 minutes.
- Serve hot.

- Toss 4 tablespoons melted butter with next 3 ingredients; set aside.

- Stir in wine and next 3 ingredients; cook, stirring constantly, 5 minutes or until bubbly. Spoon mixture into a lightly greased 9-inch square baking dish; top evenly with bread mixture.

- Preheat oven to 375°F and lightly spray a 9" x 13" casserole dish with cooking spray. Bring a pot of water to boil and cook pasta until "al dente" according to package directions. Drain and pour into a large mixing bowl.
- To the pasta, add the chicken, marinara sauce, 1 cup of parmesan cheese and 1 cup of the mozzarella cheese. Stir together until evenly mixed. Pour the mixture into the casserole dish and spread evenly. Sprinkle the remaining mozzarella cheese on top.

- Preheat the oven to 350º Fahrenheit. Grease a 9x9" baking pan with cooking spray. (You can use a 9x13" baking pan if you'd like.)
- Sprinkle the cooked chicken on the bottom of the prepared baking dish.
- In a small bowl, stir together the cream of mushroom soup and the sour cream. Pour and spread this mixture over the chicken.
- Prepare the box stuffing mix as per the instructions on the back of the box using the 1 1/2 cups chicken stock and 1/4 cup butter. We switch out the hot water for chicken stock for added flavor.
- Spoon the prepared stuffing over the sour cream mixture.
- Cover the casserole with foil and bake for 30 minutes, then uncover and bake for an additional 10 minutes. (If you used a 9x13" baking pan, it may heat through more quickly since it won't be as thick in the pan.)
- Serve immediately.

- The night before you want to bake, make the levain starter. Pour 50ml of tepid water into a large mixing bowl. Use your fingers to gently stir in the mature sourdough starter until fully dissolved, then repeat with the flour until smooth and combined.
- Leave, covered, in a warm place for at least 8 hours – it’s ready when lots of bubbles appear on the surface and the dough has a milky-sweet aroma.
- The next day, to make the final dough, pour 325ml of tepid water into a large mixing bowl and add 100g of the levain, which should float (the remaining levain can be fed and used as a new sourdough starter, or gifted to a friend).
- Now add the salt and 25ml of tepid water, scrunching them into the dough until fully combined. Set aside, covered, in a warm place for 30 minutes.
- Wet your hand slightly and give the dough four folds in the bowl, one at each ‘corner’. This is one turn. Repeat this process another three times at 30-minute intervals, turning the dough four times in total across 2 hours.
- To shape the loaf, tip the dough onto a clean surface and gently dust the top with a handful of semolina flour. Roughly shape into a round, being careful to keep as much air in the dough as possible.
- Dust a basket or cane banneton with semolina flour (or you can simply use a medium bowl lined with a clean, floured tea towel). Lightly flour the dough again and flip it over, so the flour side is on the worktop.
- Cover the dough with a shower cap (or oiled cling film) and allow to rest for 1 to 2 hours, or until increased in size by a quarter and looking bubbly.
- Place a heavy lidded casserole pot on the bottom shelf of the oven, then preheat to full whack (240ºC/464ºF/gas 9).
- Bring your loaf out of the fridge and scatter semolina over the top. Working carefully, remove the hot pot from the oven, take off the lid and gently tip your dough out into the pot, so now the pattern should be the right way up.

- Mix it up. Start by combining all of your ingredients in a bowl. I used all-purpose flour in this recipe, but you can swap it out with whole-wheat flour or a combination of spelt or buckwheat flour and all-purpose flour for a healthier twist.

- Bake and rotate. Spray lightly with cooking spray (or carefully brush with olive oil) and sprinkle with flaked salt. Because these crackers are so thin and delicate, and because ovens often have hot and cold spots, it's important to rotate the baking sheets halfway through the bake time.
- Cool it. You're going to be tempted to eat these right away, BUT for the best texture, let them cool completely before you start snacking.
