Here's a mouthwatering cheeseburger that's easy and quick. I came up with it one night when I realized I'd run out of hamburger buns. My husband loved the tang and toasty crunch of the sour-dough bread.-Michelle Dommel, Quakertown, Pennsylvania

3 tablespoons mayonnaise
1 tablespoon ketchup
1 tablespoon sweet pickle relish
1/2 pound ground beef
Salt and pepper to taste
1 small onion, sliced and separated into rings
4 tablespoons butter, divided
4 slices sourdough bread
4 slices Swiss cheese

Steps:

  • In a small bowl, combine the mayonnaise, ketchup and relish; cover and refrigerate. , Shape beef into two oval patties. In a large skillet, cook burgers over medium heat for 4-5 minutes on each side or until a thermometer reads 160°. Season with salt and pepper; remove and keep warm. In the same skillet, saute onion in 1 tablespoon butter until tender. Remove and keep warm., Using 2 tablespoons butter, butter one side of each slice of bread. Melt remaining butter in the skillet. Place bread, buttered side up, in the skillet; cook for 2-3 minutes or until golden brown. Turn; top two of the bread slices with the cheese. Cook 2 minutes longer or until cheese is melted., To serve, place toast cheese side up on a plate. Top with a burger, relish mixture, onion and remaining toast.

1 sourdough loaf
1 1/2 - 2 pounds ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon salt
1 tomato, sliced
1 onion, sliced and sauteed
1 8 oz package of sliced mushrooms, sauteed
1/2 cup packed spinach
8 pieces bacon, cooked

Steps:

  • 1. Preheat oven to 350˚F/180˚F. 2. In a circular cake pan, add the ground beef and season with garlic powder, onion powder, pepper, and salt and mix to combine. Press the beef into patty form and bake for 12 minutes. Repeat this process for the second patty. 3. Slice off the top of the sourdough loaf and scoop out the inside. 4. Begin by laying down slices of cheese at the bottom, then add your first burger patty. 5. Layer more cheese on top of the patty and continue by adding bacon, sauteed mushrooms & onions, spinach, and tomato. 6. Add a second burger patty and repeat step 5. 7. Place the top of the loaf back on the bread and wrap in aluminum foil. 8. On a level surface, use a heavy object to press the sandwich down for at least 30 minutes. 9. Remove aluminum foil and bake for 25 minutes. 10. Enjoy!

I got this recipe out of one of those little coupon booklets that come with some of the recipe magazines. Not sure which one, but probably TOH or QC. I added the mushroom, simply because we love them. As empty nesters, I am always on the lookout for recipes that are already geared toward two servings. This recipe was one of those.

3 tablespoons mayonnaise
1 tablespoon ketchup
1 tablespoon sweet pickle relish
1/2 lb ground beef
salt and pepper
1 small onion, sliced and separated into rings
1/2 cup button mushroom, sliced
4 tablespoons butter, divided and softened
2 slices swiss cheese

Steps:

  • Combine mayo, ketchup and relish in a small bowl.
  • Cover and refrigerate.
  • Shape beef into 2 patties, season with salt and pepper, and pan fry in a large skillet over medium heat for 4-5 minutes on each side (160 on meat thermometer).
  • Remove and keep warm.
  • In the same skillet, saute onion and mushrooms in 1 Tablespoon butter.
  • Saute until tender.
  • Remove and keep warm.
  • Using 2 Tablespoons of the butter, butter one side of each slice of bread.
  • Melt remaining butter in skillet; low heat.
  • Place bread, buttered side up in skillet and cook until golden brown; 2-3 minutes.
  • Turn and top the bread with the Swiss cheese.
  • Cook 2 minutes longer or until cheese is melted.
  • To serve, place toast, cheese side up on plate.
  • Top with a burger, relish mix, onion/mushroom mix and remaining toast.
  • Serve with dill pickle spears and chips.
