Nice crust on the outside and light and fluffy on the inside. Yummy sourdough rolls for soups or sandwiches!

Steps:
- Bring sourdough starter to room temperature.
- Heat water to 120 degrees F (49 degrees C) to 130 degrees F (54 degrees C) in a saucepan. Transfer to a glass bowl; add yeast. Cover with plastic wrap; let stand about 10 minutes.
- Stir melted butter and sugar together in a bowl. Add butter mixture to yeast water; stir in starter.
- Combine 3 cups flour and salt in a large bowl. Add starter mixture slowly; mix well. Stir in 2 cups flour; turn dough out onto a lightly floured surface.
- Knead in as much remaining flour as possible to create a stiff, smooth ball, at least 10 minutes. Transfer ball to a lightly oiled bowl; cover with plastic wrap. Let rise until doubled, 45 minutes to 2 hours.
- Punch dough down; turn out onto a floured surface. Divide into 14 balls; cover and let rise for 30 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Sprinkle cornmeal onto a baking sheet; place dough balls on top.
- Place baking sheet into the preheated oven. Spray the walls of the oven with water once to create steam; bake until tops are golden, for a total of 20 to 25 minutes. Cool on a wire rack.

Steps:
- Stir together all ingredients except flour.
- Add flour, mixing until it comes together enough to be turned out and kneaded.
- Knead until dough is smooth and satiny (this can be done on a mixer or bread machine, if preferred).
- At this point dough may be refrigerated up to 24 hours for a more flavorful bread. Bring dough back to room temperature before contiuing with shaping.
- Let dough rest for 15 or 20 minutes and then roll it out to 1/2" thick.
- Cut with a 4" round cutter.
- Cover and let rise until doubled in bulk.
- Bake at 350°F for 15 to 18 minutes.
- Cool on wire rack.

SOURDOUGH HAMBURGER BUNS
These are simply delicious and although you have to plan ahead (feed the starter the night before), they are easy to make. The dough is very easy to work with. Most of the cook time is in the rising time. It is made for the bread machine's dough cycle. I did not include the time it takes for rising. Hope you enjoy.

Steps:
- In a medium bowl, using an electric mixer such as Kitchen Aid, combine 2 cups sourdough starter with 1 cup flour and 1/2 cup whole wheat flour.
- Mix on low speed until well blended, about 2-3 minutes.
- Cover slightly with plastic wrap and let sit on the counter for 2 hours.
- When dough has sat for 2 hours, add to the bread machine pan the milk, 2 tablespoons of melted butter, egg, salt and sugar.
- Add the sourdough mixture (I just dumped it in from the bowl).
- Add the 1 3/4 cup flour and gently smooth out evenly with your hand.
- Turn on the dough cycle.
- For the first 5 minutes check dough and add additional water or flour, which ever is needed.
- When dough cycle is completed turn the dough onto a lightly floured surface and form into a ball.
- Using a roller, flatten the dough to a large oval 1/2 inch thick.
- Cut dough into 4 inch rounds using a sharp cutter.
- Transfer rounds to a greased baking dish.
- Gather up excess dough and repeat until all dough is used.
- Brush tops with 1 tablespoon melted butter, cover and let rise.
- NOTE: The buns will rise some more once placed in the oven.
- For quick rise starters 1-1 1/2 hours.
- For slow rise starters 2 to 2 1/2 hours.
- Bake for 15-18 minutes in 350 F oven or until golden brown.
- Cool slightly then slice with bread knife before serving. (For best results I think, place on the grill cut side down for 15-20 seconds before applying your burger).
- NOTE: All starters are different so the amount of flour, water and rise time may be different. For this recipe I used Donna M's SF Starter.

- In a large bowl, combine all the ingredients except the salt. Cover and let rest 3o minutes at room temperature.
- Add the salt and knead for 5-7 minutes, until a soft, smooth dough is formed. The dough can be kneaded by hand, stand mixer, or bread machine on the dough cycle. If the dough is sticking too much to the bowl, add flour a teaspoon at a time. It the dough seems dry or stiff, add water a teaspoon at a time. You want the dough to be smooth, elastic, and just slightly sticky. Place into a clean, lightly oiled bowl and allow to rise in a warm place for 3-4 hours, until very puffy. (It may not quite double in bulk.)
- Divide into 10 pieces (or 15 for slider-sized buns), shape into balls, and place on parchment lined baking sheet. Cover with heavily greased plastic wrap and allow to rise in a warm place for 3-4 hours, or overnight in the refrigerator, until puffy. Preheat oven to 400 degrees with the rack in the center.
- Brush the buns with beaten egg and sprinkle with sesame seeds. Bake about 18 minutes for larger buns, 15 minutes for smaller, until golden brown. (For a higher rise, place an empty, rimmed backing sheet in the oven while it is preheating, and pour in 1 cup of water to create steam when you place the buns inside.)
- Remove burger buns to a cooling rack. Allow to cool completely before using for burgers. Best when served the same day they are made.

- Melt the butter and set aside.
- In the mixing bowl for your stand mixer, stir together the water, sourdough starter, eggs, honey, 3 1/2 cups bread flour, sea salt and yeast.
- Put the dough hook on your stand mixer, set the mixer to speed 2 and knead for about 7 minutes. While the dough is kneading, drizzle the butter in, a bit at a time and flour, a bit at a time (alternating between butter and flour until the butter is gone). Keep adding flour, just a bit at a time, until the dough stops picking up the flour. Keep kneading until the dough picks up all the flour in the bowl.
- Shape the dough into a ball, put a little bit of olive oil on your hands and coat the dough with oil. Set the dough back in the bowl, cover and let rise for at least an hour or up to 4 hours. (If using yeast, the dough might rise all the way to the top of the bowl!)
- Remove the dough from the pan and cut into 3 pieces. If baking right away, cut each piece of the dough into 4 - 8 pieces (depending on how big you want your buns). 4 pieces will yield large buns suitable for 1/4 lb. burgers, 8 pieces are more slider sized buns. Alternatively, you can wrap the dough loosely in plastic wrap and refrigerate at this point to be baked later.
- Shape each piece of dough into a spherical shape by using your fingers to stretch the top of the dough down and pinching it underneath. Keep doing this, rotating as you go, until the ball of dough is nice and round. Oil each ball with olive oil and set on a baking sheet, leaving plenty of space between balls. Cover with plastic wrap or a clean towel and let rise in a warm place for about 45 minutes (if using yeast) or 1 - 2 hours if not, until the buns are nearly doubled in size.
- Preheat the oven to 400 F. Bake at 400 F for about 15 - 20 minutes or until the buns are golden brown on top and firm when tapped.
- Remove from oven and brush lightly with olive oil. Let cool for at least 10 minutes before cutting.
