CLASSIC SPINACH DIP RECIPE

1 (10 oz.) package of chopped spinach, thawed and squeezed the life out of (drained)
1 (16 oz.) container of sour cream
1 cup of mayonnaise
1 package of dry vegetable recipe (soup) mix *You can usually find this by the dry broth mixes, and dry onion soup mixes
1 can of sliced water chestnuts - drained and chopped
1/2 cup of chopped green onion - optional
1 Sour Dough bread bowl
Dipping Items - Extra bread - like French Bread - cubed
Optional - carrots, sliced broccoli, sliced celery, etc...

Steps:

  • Grab a big bowl and mix the first 6 ingredients
  • Cover and refrigerate for at least 1/2 hour or up to 2 days ahead
  • When you are ready to serve...Slice a big circle off of the top of the sourdough bread bowl
  • Scoop the soft bread out and cube it (some people toast the bread, but we never did)
  • If you want, you can save the top to place on the dip bowl - *that's what my mom used to do
  • When you're ready, spoon the cold dip into the bread bowl
  • Place the cubed bread, optional vegetables and/or crackers around the bread bowl

The Best Beginner Sourdough Bread Recipe image

This is a homestead-version of sourdough bread, which is a non-fussy technique that will not require complicated measurements or instructions. This recipe is perfect for people (like me) who like a simple, hearty loaf that doesn't require tons of effort and time.

½ cup active sourdough starter (learn how to make sourdough starter)
1 ¼ cup lukewarm water
3 cups all-purpose flour
1 ½ teaspoons fine sea salt (I use Redmond Salt*)

Steps:

  • In a large bowl, combine the starter and water.
  • Stir in the flour, and then add the salt.
  • Use a fork to mix everything together until it becomes stiff- then switch to your hands to bring the dough together in a rough ball (Remember: don't overmix! This is supposed to be a no-knead-style wet dough.)
  • Keep the rough dough in the bowl, cover it, and let sit for 30 minutes.
  • After this resting time is complete, stretch and fold the dough a few times to form it into a ball. (See the video for a walk-through on how to do this.)
  • Cover the dough with a clean dish towel and let it rise in a warm place overnight or until doubled in size (or about 8 hours). I like to make the dough before bed and leave it in my turned-off oven (I leave the oven light on) to rise overnight.
  • The next morning (or after 8 hours), turn the dough out on your counter. Fold it over a couple of times to tighten it into a ball, then let sit for 15 minutes.
  • After this resting period is complete, gently shape the dough into a ball once more place into a well-floured proofing basket or a bowl lined with a well-floured dish towel. Remember: don't add too much flour and do not knead the dough!
  • Cover and rise for 2-3 hours, or until doubled.
  • Preheat the oven to 450°F.
  • Sprinkle a thin layer of cornmeal in the bottom of a Dutch oven (optional, but this helps the bottom not to scorch).
  • Tip the loaf out of the proofing basket onto a sheet of parchment. Lower the parchment into the Dutch oven.
  • Place the lid on the pot and bake for 20 minutes.
  • Remove the lid and bake for an additional 30 minutes, or until the loaf is deeply browned and crispy on top. (For a less crusty finish, bake for the entire time with the lid on.)
  • Move to a cooling rack and allow the loaf to cool completely before slicing it.

Steps:

  • In a saucepan, combine sour cream, cream cheese, onions and Worcestershire sauce; cook and stir over low heat until blended. Add cheese and ham; cook and stir until cheese is melted and ham is heated through. Cut off top of loaf; carefully hollow out top and bottom, leaving a 1/2-in. shell. Cut bread into cubes. Bread pudding is a classic dessert you can make with just about any bread and flavoring you want. It's a great way to use stale bread that might otherwise be thrown out. This bread pudding recipe is a personal favorite; I find the tangy sourdough flavor paired with sweet cream and vanilla unbeatable. It's rich and warm, perfect when you're craving something cozy, and it will make your kitchen smell amazing.

2 tablespoons unsalted butter, plus more for the pan
1 cup heavy cream
1 cup whole milk
1/2 cup sugar
1 tablespoon pure vanilla extract
1 teaspoon kosher salt
2 large eggs
1 large egg yolk
5 cups (225 grams) 1/4-inch cubes sourdough bread (from about 5 slices)
3 cups hulled and sliced strawberries
2 tablespoons sugar
1/2 teaspoon lemon zest
1/2 lemon, juiced
Kosher salt
Ice cream, for serving, optional

Steps:

  • For the bread pudding: Preheat the oven to 325 degrees F. Butter a loaf pan or 8-inch round cake pan.
  • Combine the cream, milk, sugar, vanilla and salt in a medium saucepan and place over medium heat. Cook, stirring occasionally, until the sugar melts. Remove from the heat.
  • Put the butter in a large bowl and slowly pour a third of the hot cream mixture into the bowl, whisking gently to melt the butter. Add the eggs and yolk and whisk until combined. Whisking constantly, slowly pour in the remaining cream mixture.
  • Once fully mixed, add the bread and let soak for 10 minutes. (Note: If you're not in a rush or are making this ahead of time you can soak the bread for longer before baking. A longer soak makes the bread more flavorful and very tender.)
  • Pour the mixture into the prepared pan. Bake until the top is golden brown and the edges have pulled away from the pan slightly, 25 to 30 minutes.
  • For the macerated strawberries: Toss together the strawberries, sugar, lemon zest, lemon juice and pinch of salt in a medium bowl with a wooden spoon. Let sit at room temperature for 30 minutes.
  • Serve the pudding warm, scooping it right out of the pan, or let it cool and cut it into slices. Serve with the macerated strawberries and ice cream, if using. Enjoy!

8 oz block cream cheese (at room temperature)
1/2 cup sour cream
3 Tbsp mayonnaise
1 Tbsp lemon juice
2 tsp horseradish
1/2 tsp Worcestershire sauce
1/4 tsp dry mustard
Pinch Old Bay Seasoning
Salt and freshly ground pepper (to taste)
1/2 cup Gruyere cheese (shredded (See notes for alternate cheese ideas))
1/4 cup green onion (diced)
2 4 oz cans cans lump crab meat (drained and picked over, if needed)
3/4 cup shredded Gruyere cheese
Additional diced onion (for garnish)

Steps:

  • Preheat oven to 425F.
  • In a large bowl with a hand mixer or the bowl of a stand mixer fitted with a paddle attachment, mix together the cream cheese, sour cream, mayonnaise, lemon juice, horseradish, Worcestershire, dry mustard and Old Bay seasoning and some salt and pepper, until well combined. Add the shredded cheese, green onion and crab, mixing on low (or with a spoon), just until combined. Set aside or spoon into a bowl, cover and refrigerate if making ahead.
  • With a serrated knife, cut a round out of the top of your Sourdough bread round, leaving 1 - 1/2 inches around the outside of the round and about 1 1/2 inches deep. Gently pull the slice out of the top of the bread and set aside. Cut slices around the outside of the bread round, slicing down in about 1 inch intervals, slicing about 2/3 of the way down the side. Place bread round into your skillet. *Cut the round that you removed from the top into cubes and toast or serve plain with your finished bowl.
  • Spoon your dip into the hollowed out center (it may sit above the top of the bread at this point but that's ok). Once filled, gently pull the slices around the outside outwards a bit. This will allow them to toast, but will also make your hollow a little bigger, so your dip should drop down into the bowl some more.
  • Loosely cover top of bread bowl with a piece of aluminum foil and place into preheated oven. Bake for 15 minutes (or more if your dip was cold from the fridge). Remove from oven. Remove and discard aluminum foil. Sprinkle top of dip (and onto the tops of the bread as well), with the additional shredded cheese for topping. Return to the oven and bake a further 10 minutes, or until dip is warm and cheese is golden. *If toasting additional bread cubes, scatter on a baking sheet and place on the rack under the bread bowl for the last few minutes of baking (after the cheese has been added).
  • Garnish with additional diced green onion and serve warm in the skillet. **Wrap the hot skillet handle if sering hot from the oven, just so no one is tempted to grab a hold of it!

1 (4 ounce) package chipped beef, chopped
1/4 cup finely chopped green onion
1 dash Worcestershire sauce

1 loaf sourdough bread, 8 inch round

Steps:

  • Mix well all ingredients except bread.
  • Slice top off bread round and hollow out carefully, making sure there are no weak places in bread shell.
  • Fill bread shell with chipped beef mixture and put top back on the shell.
  • Wrap shell in foil and bake at 300 degrees for 1 1/2 hours.
  • Use soft bread from the interior of the loaf to dip in hot mixture.

2 cups grated cheddar cheese

  • Make the Dough: In the evening, whisk the starter and water together in a large bowl with a fork. Add the flour and salt. Combine until a stiff dough forms, then finish mixing by hand to fully incorporate the flour. The dough will feel dense and shaggy, and it will stick to your fingers as you go.   • Prep your sourdough bread starter. The night before you plan on baking, remove your starter from the fridge (if that's where you're keeping it) and feed it so it is ready to work.
  • Mix the dough. Using your happy, active, well-fed starter, mix it with the water, salt, and flour. The dough will be very sticky. Use wet hands when handling the dough if you need to.
  • Take a nap. Let your dough rest (autolyse). This jump-starts gluten development and makes the bread much easier to handle. Plus, strong gluten means great tasting (and textured) bread.
  • Give a tuck. Fold, don't knead, your dough. First, it's a lot easier for you to simply fold the dough over on itself a few times. Second, it's a lot better for the bread.
  • Shape the dough. If you're making smaller loaves, lightly dust your work surface with flour and cut the dough in half with a bench scraper or knife. If you're make one large loaf, place the dough on a flour-free surface (otherwise it's difficult to shape).
  • Let it rise. The long rise, or bulk fermentation, is where the magic happens. This helps develop flavor, structure, and texture in your sourdough. Some folks like to leave their dough in a warm spot, covered with plastic wrap and a clean towel for 3 to 12 hours.
  • Let it rise (again!). Wake up the dough from its long, cold sleep. This is a shorter rise than the first, letting the dough recover from all the work it has been through and to activate the natural yeasts.
  • Bake it. Now is the good part, where your kitchen fills with the smell of homemade bread. Baking bread in a Dutch oven will keep a moist, humid environment and let the bread get a good rise and develop a perfect crust.
  • Cool down. As mouth-watering as your bread may smell and look, make sure to let it cool for at least one hour before slicing. It's still working a bit inside the loaf, and if you cut it open too soon, it will be a gummy mess.
