1/2 cup butter, softened
1-1/2 cups packed brown sugar
3 large eggs, separated
1 teaspoon vanilla extract
1-3/4 cups cake flour
1-1/2 teaspoons ground allspice
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
1 cup sour cream
FROSTING:
1 cup packed brown sugar
1/3 cup water
2 large egg whites
1/4 teaspoon cream of tartar
1-1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk, flour, allspice, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with sour cream, beating well after each addition. With clean beaters, beat egg whites on medium speed until stiff. Fold into batter., Pour into two greased and floured 9-in. round baking pans. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., In a small heavy saucepan over low heat, combine brown sugar, egg whites, water and cream of tartar. With a hand mixer, beat on low speed 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 20 minutes., Pour into a large bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Spread between layers and over top and sides of cake. Refrigerate leftovers.

1 1/2 sticks unsalted butter, at room temperature

Steps:

  • For the sour cream cake: Preheat the oven to 350 degrees F. Grease three 6-inch cake pans with cooking spray.
  • Combine the flour, baking powder and salt in a large bowl. Reserve.
  • Combine the butter and granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat until light and fluffy. Turn the mixer off and scrape down the sides of the bowl.
  • Beat in the eggs, one at a time. Slowly add the vanilla, milk and sour cream. Scrape down the sides of the bowl as needed. With the mixer on medium speed, gradually mix in the flour.
  • Divide the batter evenly among the cake pans and bake until a toothpick inserted into the middle of a cake comes out clean, about 20 minutes. Let cool completely on a wire rack.
  • For the cream cheese icing: Beat together the cream cheese, butter, powdered sugar, vanilla and lemon juice in a stand mixer or with a hand mixer until light and fluffy. Spread icing on each layer, stack layers and cover with icing.

This is one of my all time favorite fall cakes! It's perfectly moist and brimming with lots of those sweet autumn spices. It has a tender crumb and so much flavor in every bite. No one can resist a slice!

2 1/4 cups (318g) all-purpose flour ((scoop and level to measure))
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/2 tsp ground cinnamon*
1 tsp ground nutmeg
1 tsp ground ginger
1/2 tsp allspice
1/4 tsp ground cloves
1 3/4 cups (370g) packed light-brown sugar
3/4 cup (175ml) vegetable oil
3/4 cup (185g) unsweetened applesauce
4 large eggs
2 tsp vanilla extract
1 cup (240ml) buttermilk**
1 cup chopped pecans ((optional))
12 oz cream cheese, (nearly at room temperature)
1/2 cup (4 oz) unsalted butter, (nearly at room temperature)
3 1/2 cups (440g) (440g) powdered sugar
1/2 tsp vanilla extract

Steps:

  • Preheat oven to 350 degrees. Spray two 9-inch round baking pans well with non-stick baking spray then lightly dust with flour and shake out excess.
  • Wrap cake strips around pan if you have them (for a more level cake). Set pans aside.
  • In a mixing bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, allspice and cloves for 20 seconds, set aside.
  • Pour brown sugar into the bowl of an electric stand mixer. Break up brown sugar with fingertips until no clumps remain.
  • Pour in vegetable oil and applesauce, set mixer with paddle attachment and blend until well combined (occasionally stop and scrape bowl throughout mixing process).
  • Mix in eggs and vanilla.
  • Add in 1/2 of the flour mixture and mix on low speed until combined, then blend in buttermilk, then add remaining 1/2 of the flour mixture and mix until well combined.
  • Divide mixture evenly among two prepared baking pans. Bake in preheated oven until toothpick inserted into center comes out clean, about 28 - 32 minutes.
  • Allow to cool in pans about 5 - 10 minutes then run a knife around edges to ensure cake is loose and invert upside down onto a wire rack to cool.
  • Cool completely then level tops of cakes as needed. Frost with cream cheese frosting, sprinkle pecans around edges if desired.
  • For the frosting: In the bowl of an electric stand mixer fitted with the paddle attachment cream butter and cream cheese until smooth.
  • Mix in powdered sugar and vanilla and mix until well blended***.

4 cups icing sugar ((confectioner's or powdered sugar)*)

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour 2 8-inch cake pans.
  • In a medium bowl, whisk together the flour, baking powder and salt.
  • In a stand mixer fitted with the paddle attachment, cream together the butter, oil and sugar on medium speed until light and fluffy, about 3-4 minutes.
  • To the stand mixer bowl, add the eggs, egg yolk, vanilla and orange zest. Beat until well combined, scraping down the sides of the bowl as needed.
  • In a measuring cup, combine the milk and orange juice.
  • With the mixer on low speed, alternate adding the flour mixture and milk/OJ mixture, in 3 instalments each, beating until JUST combined (do not over beat).
  • Remove the bowl from the stand mixer and give it a good stir with a rubber spatula, scraping the bottom and sides of the bowl. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  • Allow the layers to cool in the pan for 15-20 minutes and turn them over onto a cooling rack to cool completely.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and cream cheese on medium speed until smooth. Beat in the vanilla extract and orange zest.
  • Add the confectioner's sugar, one cup at a time, until the frosting is smooth and creamy. If you think it is too soft, put the bowl in the refrigerator for about an hour to firm up.
  • Place one cake layer on a plate or turntable, and using an offset spatula, frost the top with about 1 cup of frosting. Place the second layer upside down on top and frost the top and sides of the cake. Decorate with orange slices if desired.

1/3 cup milk
1/4 cup oil
3 eggs

  • Cake:.
  • Sift cake mix and spices into a mixing bowl.
  • Add sour cream, milk, eggs and oil.
  • Beat at low speed until dry ingredients are incorporated.Beat at high speed for 3 minute.
  • Pour batter into appropriate sized pans. (Look at cake mix package for suggestions. I used 2 nine inch round pans).
  • Bake according to cake mix package instructions. Cool before icing.

  • Put the zest of two oranges into a mixing bowl.
  • Mix the cream cheese, zest, and 1 tbsp juice until smooth.
  • Gradually add pwd sugar until you reach desired consistency and sweetness.

1 cup brown sugar
1 cup sour cream
3/4 cup flaked coconut
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup brown sugar
1/3 cup butter
1/3 cup milk
1 cup icing (confectioners' sugar)

Steps:

  • Preheat oven to 375 degrees F. Beat egg. Gradually add sugar and continue to beat until light. Stir in sour cream and coconut.
  • In small bowl combine flour, baking soda and salt. Add to egg mixture and beat well.
  • Spread batter in a greased 9 inch square pan. Bake for 25 minutes, until top of cake springs back when touched lightly. Cool.
  • Combine brown sugar, butter and milk in a small saucepan. Bring to a boil. Continue to boil, stirring constantly, for 3 minutes.
  • Cool to lukewarm. Stir in icing sugar and continue to stir until the right consistency to spread. Spread over cooled cake.
  • Use regular sour cream, not light.
