My family always requests this light, tender bread with a hint of lemon. This loaf is so scrumptious that it complements almost any meal. I serve slices with a creamy lemon spread for an early-morning treat or late-night snack that's simply dreamy. -Barbara Strickler, Syracuse, Indiana

Yield 1 loaf (1 pound) and about 1/2 cup spread.

Number Of Ingredients 16

1/4 cup sour cream
2 tablespoons lemon juice
2 to 3 tablespoons warm 2% milk (70° to 80°)
2 tablespoons butter, softened
1 large egg, room temperature
2 teaspoons grated lemon zest
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon baking soda
2 cups bread flour
1-1/2 teaspoons active dry yeast
LEMON SPREAD:
3 ounces cream cheese, softened
1/4 cup confectioners' sugar
1 tablespoon lemon juice
1 teaspoon grated lemon zest

Steps:

  • In a measuring cup, combine sour cream and lemon juice. Add enough milk to measure 1/2 cup. In a bread machine pan, place the sour cream mixture, butter, egg, lemon peel, sugar, salt, baking soda, flour and yeast in order suggested by manufacturer. Select sweet bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , In a small bowl, combine the spread ingredients; beat until smooth. Serve with the bread.

1/4 cup sour cream
2 tablespoons lemon juice
2 -3 tablespoons warm milk
2 tablespoons butter
1 egg
2 teaspoons grated fresh lemon rind
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon baking soda
2 cups bread flour
1 1/2 teaspoons active dry yeast
1 (3 ounce) package softened cream cheese
1/4 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon grated fresh lemon rind

Steps:

  • In a measuring cup, combine sour cream and lemon juice.
  • Add enough of the milk to make 1/2 cup.
  • Place all bread ingredients in bread machine according to your manufacturer's directions.
  • Select sweet bread or basic setting.
  • Do not use timer delay for this recipe.
  • For spread, beat all ingredients together until smooth.

This is a scrumptious sweet bread that is very fitting for any holiday breakfast or just when you want something special. This also works with Splenda in place of the sugar. Baking time is however long your machine takes. *EDIT*: On Jan 22 2009, I reduced the flour amount by a 1/2 cup and increased the sour cream from 1/3 to 1/2 cup. 2/3 cup water (add extra water by tablespoons if dough is too dry)
1 1/2 tablespoons vanilla
1/2 cup sour cream
1 egg
1 tablespoon softened butter or 1 tablespoon margarine
3 1/2 cups bread flour
2 teaspoons cinnamon (or to taste)
1/4 cup sugar
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
1/2-2/3 cup golden raisin (optional)

  • Measure all ingredients carefully and place into bread machine pan in the order recommended by manufacturer.
  • Select Sweet or Basic/White cycle.

The introduction states: "Lemon pepper is a spice blend that is available in specialty food shops, especially those that sell Middle Eastern foods. High-gluten flour can be found in health food stores." This recipe is geared toward the Zojirushi machine; if you try this and have a DAK, Welbilt, Hitachi, Panasonic, National, Regal, Maxim, Sanyo, Small Welbilt, or Small Panasonic/National machine, just zmail me and I'll communicate somehow the recommendations for whichever of those machines you're using.

2 teaspoons baking powder
1 teaspoon salt
2 cups white sugar
1 cup butter, at room temperature
3 eggs
1 cup sour cream
1 large lemon, zested and juiced, divided
½ cup powdered sugar
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Sift together flour, baking powder, and salt into a bowl.
  • Combine sugar and butter in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs, 1 at a time, beating well after each addition. Add flour mixture in 3 batches, alternating with sour cream, beating batter briefly after each addition. Stir in lemon zest and pour batter into the prepared pan.
