SOUR CREAM-DIJON MARINATED CHICKEN KABOBS



Sour Cream-Dijon Marinated Chicken Kabobs image

You can easily double this recipe and I suggest you do so, this chicken is fantastic! Plan ahead the chicken needs to marinate in the sour cream-Dijon mixture for a minimum of 5 hours. If you are using wooden skewers make certain to soak them in cold water for a minimum of 30 minutes before threading.

1 (8 ounce) container sour cream
1/4 cup Dijon mustard
2 tablespoons minced fresh garlic
1 tablespoon prepared horseradish
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper (or use cayenne)
6 boneless chicken breasts (cut into about 1-1/2-inch pieces)
1 large red bell pepper (seeded and cut in desired pieces)
1 large cherry tomatoes (use as many as you want)

Steps:

  • In a large glass bowl mix together the sour cream, Dijon mustard, minced garlic, horseradish, honey, salt, pepper and red pepper; mix well to combine.
  • Add in the chicken to the bowl and toss to combine with remaining marinade; cover and refrigerate for 5 hours.
  • Remove the chicken and discard marinade.
  • Thread the chicken onto skewers alternating with bell pepper pieces and cherry tomatoes.
  • Grill covered with lid over medium-high heat for about 10-12 minutes or until the chicken is done.

thawed chicken breasts
sour cream
dijon mustard
bread crumbs or extra crispy chicken coating

Steps:

  • 1. USE 2 PARTS SOUR CREAM TO 1 PART OF DIJON MUSTARD, IT ALL DEPENDS HOW MANY CHICKEN BREASTS YOU ARE MAKING. MIX THE TWO TOGETHER AND SPREAD ON ONE SIDE OF THE BREAST, PLACE THAT SIDE INTO THE BREAD CRUMBS, AND ADD MORE TO THE TOP SIDE AND PLACE ON A COOKIE SHEET EITHER COVERED WITH TIN FOIL OR SPRAYED WITH PAM OR ANY COOKING SPRAY
  • 2. COOK AT 350 UNTIL GOLDEN BROWN, ABOUT 30-40 MINUTES AND THE CHICKEN IS COOKED THROUGH

1 lb boneless skinless chicken breast, cut into 1 1/2 inch cubes
3 tablespoons soy sauce
1/3 cup plum sauce
1/4 teaspoon red pepper flakes
2 teaspoons grated orange rind
1 teaspoon grated gingerroot
1 medium sweet vidalia onion, cubed into 1-1/2 inch chunks
4 slices fresh pineapple, spears cut into 6 pieces

Steps:

  • Marinate cubed chicken in soy sauce for 15 minutes.
  • Cut onion into 1 1/2 inch chunks.
  • Cut pineapple spears into 6 pieces each.
  • Set aside.
  • Lightly oil grill rack and heat grill or preheat oven broiler.
  • In small bowl, combine plum sauce, orange rind, gingerroot and red pepper flakes and mix well and set aside.
  • Alternately skewer chicken, onion and pineapple onto 15 inch metal skewers.
  • Discard leftover soy marinade.
  • Place kabobs 4 to 6 inches over medium high heat or charcoal grill.
  • Brush plum mixture over kabobs.
  • Cover grill and cook 4 to 5 minutes.
  • Turn and brush again.
  • Cover and cook an additional 4 to 5 minutes.
  • If broiling, place on broiler pan 4 to 6 inches from heat using above times.

2 cups sour cream
3 tablespoons fresh lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons celery salt
2 teaspoons paprika
½ teaspoon salt
½ teaspoon ground black pepper
4 cloves garlic, minced
12 bone-in chicken breast halves, skinless
1 ¾ cups dry bread crumbs
⅓ cup butter

Steps:

  • To Marinate: In a large nonporous glass dish or bowl, combine the sour cream, lemon juice, Worcestershire sauce, celery salt, paprika, salt, pepper and garlic; mix well. Add chicken breasts and coat well with sour cream marinade. Cover dish or bowl and refrigerate to marinate for at least 8 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bread crumbs in a shallow dish or bowl. Remove chicken from marinade and discard marinade. Dredge chicken in bread crumbs to coat well and place in 2 lightly greased 9x13 inch baking dishes. In a small saucepan or skillet, melt butter and spoon evenly over chicken.
  • Bake at 350 degrees F (175 degrees C) for 60 to 70 minutes, or until chicken is cooked through and fork-tender and juices run clear.
