FROSTED BANANA BARS
These are a big hit for snack days at work. Very moist and easy to make.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
- In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.
- Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Stir in bananas. , Spread into a greased 15x10x1-in. baking pan. Bake until a toothpick inserted in the center comes out clean (do not overbake), 20-25 minutes. Cool., For frosting, in a large bowl, beat cream cheese, butter and vanilla until fluffy. Gradually beat in enough confectioners' sugar to achieve desired consistency. Frost bars. This recipe has been around FOREVER in my family. When I was growing up I don't think the pan ever had the chance to cool before they were all gone! They're sooo moist and wonderful! Note: you can make these in a 9x13 pan, they'll just be more like banana cake :) Make sure to check for "done-ness" in the center with a toothpick before removing from the oven. - Grease and flour jelly roll pan.
- Cream butter and sugar, add sour cream and eggs and beat for 1 minute. Add bananas and vanilla - mix well. Beat in flour, salt, and soda on medium for 1 minute. Stir in nuts if desired.
- Pour and spread dough in pan.

- Preheat oven to 375 degrees F.
- Grease and flour a 15-1/2 x 10-1/2 x 1 inch jelly roll pan.
- In bowl of a stand mixer combine sugar, sour cream, butter and eggs on low speed for 1 minute; scrape the sides of the bowl once or twice to ensure that the ingredients are all combined.
- Add the bananas and vanilla and beat for 30 seconds on low speed.
- Add the flour, salt and baking soda and beat until combined; medium speed, scraping bowl when necessary, for about 1 minute.
- Fold in the nuts, if desired.
- Spread dough in prepared pan; use a spatula to get the dough evenly spread on the pan.
- Bake for 20 to 25 minutes or until light brown.
- Cool in the pan.
- Prepare the frosting by heating the butter in a medium size saucepan over medium heat until slightly frothy and just brown but not burned; remove from heat.
- Mix in the powdered sugar, vanilla and milk; whisk until smooth and fluffy.

- To a large mixing bowl, add the butter, sour cream and sugar. Using a hand mixer (or stand mixer), mix on medium speed until the sugar is well incorporated into the butter and sour cream. Add the eggs and vanilla and mix for about 1 minute until everything is well combined. Add the dry ingredients and mix just until they are almost fully incorporated. Add the mashed bananas and nuts and mix for a few seconds. Stop and scrap down the sides of the bowl with a spatula and mix just until incorporated.
- Pour the batter into the prepared pan and use a spatula or an offset spatula to spread the batter out evenly. I also gently shake the pan back and forth a few times.

Cool until just slightly warm and frost with Browned Butter Frosting (recipe below).
- In a small saucepan, brown butter over medium heat until golden brown in color and golden brown flecks appear, swirling pan frequently. (Butter will become a little foamy). Remove from heat and pour into a medium size bowl, cool slightly. Add powdered sugar, vanilla and half & half, mix until smooth and spreadable. (I like to use my hand mixer for this).
