I got this out of a cookbook while looking for one dish crock meals. It has all my favorite flavors, ham, sour cream, onion and cheese.

2 packages boxed hash browns
2 tablespoons butter, melted
2 cups water
1 can cream of mushroom soup
1 can Mexican-style corn (optional)
1 container chive and onion sour cream
1 1/2 cups shredded american and cheddar cheese (6 oz)
1/2 lb cubed cooked ham
French-fried onions (regular or cheddar flavor)

Steps:

  • Place butter and potatoes in crock pot.
  • Stir to coat (this helps the potatoes keep their shape do not skip that step!).
  • Stir in all remaining ingredients (including season packets) and blend together slightly.
  • Turn on low for 5-6 hours.
  • Sprinkle on french fried onions on top before serving.

12 large potatoes, peeled and halved
2 (10.5 ounce) cans cream of chicken soup
2 cups sour cream
2 cups shredded Cheddar cheese, divided
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain. Cut potatoes into cubes and place into a large bowl.
  • Stir chicken soup, sour cream, and half the Cheddar cheese into potatoes until evenly incorporated; season with salt and black pepper. Spread potato mixture into a 9x13-inch casserole dish; sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until cooked through and Cheddar cheese is melted, about 30 minutes.

3 tablespoons butter or margarine, melted
5 cups water
1 can (10 3/4 ounces) condensed cream of mushroom soup
2 containers (12 ounces each) chive and onion sour cream potato topper
2 cups shredded Cheddar and American cheese blend (8 ounces)
1/2 cup French-fried onions (from 2.8-ounce can)

Steps:

  • Toss potatoes (dry) and butter in 3 1/2- to 4-quart slow cooker. Stir in water, soup, potato topper and cheese.
  • Cover and cook on low heat setting 5 to 6 hours or until liquid is absorbed.
  • To serve, sprinkle onions on top. Potatoes will hold on low heat setting up to 2 hours.

Steps:

  • Heat oven to 375°F. Spray 1 1/2-quart glass baking dish with cooking spray.
  • Make potatoes as directed on box for stove-top directions. Stir in sour cream dip. Pour mixture into baking dish. Top with onions.

1 lb bacon
1 cup sour cream
1 can cream of mushroom soup

  • Fry bacon until crisp and drain well on paper towels.
  • Discard all but 1T bacon grease; saute onions in bacon grease and drain well Slice potatoes thinly.

3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups fat-free milk
1/2 cup shredded reduced-fat cheddar cheese
2 pounds red potatoes, peeled and thinly sliced (about 4 cups)
1 cup thinly sliced onions, divided

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-in. square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. Repeat layers. , Bake, covered, 50 minutes. I spent years developing this recipe to finally being what we refer to as the best ever scalloped potatoes. Every time I had an issue of what was wrong with the dish I figured out a way to correct it. I love to hear people's honest opinions as it helps me to become a better cook. I invite you to give my scalloped potatoes a try and tell me what you think.

6 baking potatoes, peeled & sliced thin
2 (10 1/2 ounce) cans cream of mushroom soup (or cream of celery)
1/2 cup sour cream
1 1/2 cups of grated medium cheddar
6 ounces Velveeta cheese, cut into thin squares (approx 1 1/2 Inch Piece off a Large Block)
1 small yellow onion
1/4 cup chives (Freshly Chopped)
1 teaspoon Lipton Onion Soup Mix (Dry)

Steps:

  • In a large covered casserole dish spray entire dish with a cooking spray and then spread 1 entire can of Cream of Mushroom soup evenly on the bottom (best way I've found to prevent the potatoes from sticking & adds flavor).
  • Chop the onion into very small pieces & set aside.
  • In a separate bowl mix 1 can of Cream of Mushroom soup, the Sour Cream and 1 TSP of Dry Lipton Onion Soup Mix (added for the flavor of the seasonings which makes it extra tasty).
  • Peel & Slice the Potatoes Thin.
  • LAYER #1: Start layering in the casserole dish with the Cream of Mushroom soup on the bottom: Layer of POTATOES then spread approx 6 spoonfulls of the SOUP & SOUR CREAM mixture on top, then ONIONS then ½ cup of CHEDDAR CHEESE.
  • LAYER #2: POTATOES then approx 6 spoonfulls of the SOUP & SOUR CREAM mixture, then VELVETA CHEESE squares distributed evenly across.
  • LAYER #3: POTATOES then all the remaining SOUP & SOUR CREAM mixture then the remaining 1 cup of CHEDDAR CHEESE.
  • Sprinkle the chives evenly across the top.
  • BAKE COVERED in the oven at 300 degrees for about 1½ hour.
  • BAKE UNCOVERED for approx another 1 hour or as needed until done and top is slightly browned (test with a fork and make sure the potatoes are done). Note: Baking uncovered at the end helps reduce the excess moisture.

1/4 c chopped green onion or chives
1/4 c butter
1 1/4 tsp salt
1/8 tsp pepper
1/4 c all purpose flour
2 c milk
1/2 c sour cream
5 large baking potatoes

Steps:

  • 1. To make sauce, cook green onion in butter until crisp-tender. Stir in flour, 1 1/4 teaspoon salt, and 1/8 teaspoon pepper. Add milk. Cook and stir until thickened and bubbly. Stir in sour cream until smooth.
  • 2. Place half of the sliced potatoes in a grease 2 quart casserole. Cover with half of the sauce. Repeat layers.
  • 3. Bake, covered, in a 350 degree oven for 45 minutes, stirring once. Uncover, bake about 30 minutes more or until potatoes are done. Makes 4-6 servings.
