  • Bring 2 cups cooked rice, 1 2/3 cups milk, 1/2 teaspoon vanilla and a pinch of salt to a simmer in a saucepan over medium heat. Cook, stirring occasionally, until creamy, 6 to 8 minutes. Remove from the heat, stir in 3/4 cup white chocolate chips and let sit a few minutes. Serve over cherries.

My little granddaugher loves pink, I can't wait to make this wonderful treat for her. Best of all it tastes delicious and is really quick and easy to make. A perfect dessert served plain or with some vanilla bean ice cream. It is best served warm.

1 2/3 cups sugar, divided
1 cup flour
2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup milk
1 teaspoon almond extract
14 1/2 ounces tart cherries, pitted and undrained
1 tablespoon butter
1/3 cup sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees.
  • Combine 2/3 cup sugar, flour, baking powder and salt in a small bowl.
  • Mix milk and almond extract together and lightly stir into the flour mixture.
  • Pour batter into a greased 11 x 7 " pan and set aside.
  • In a small pot, add the cherries, butter and 1 cup sugar and bring to a boil.
  • Cook, constantly stirring for 2 minutes until the sugar disolves.
  • Add the toasted almonds, stir well and spoon the mixture over the batter.
  • Bake at 350 degrees for 30 minutes or until golden brown.

4 cups basmati rice
1 teaspoon coarse salt
3 tablespoons unsalted butter
1 tablespoon plain yogurt
2 teaspoons saffron water
32 ounces whole sour cherry preserves, drained, liquid reserved
2 tablespoons extra-virgin olive oil

Steps:

  • Place rice in a medium bowl, and add enough water to cover. Pour off water, and repeat process 2 to 3 more times. Add enough cold water to cover. Add salt, and let stand for 10 to 15 minutes. Drain.
  • Bring a large pot of water to a boil. Add rice, and cook until almost tender, 5 minutes. Drain.
  • Meanwhile, in a medium nonstick stockpot, combine 2 tablespoons water, butter, yogurt, and 1 teaspoon saffron water. Add rice, layering with the cherries, and cherry liquid. Sprinkle with remaining saffron water and the oil. Cover top of stockpot with a thick kitchen towel, and place lid on top. Cook over medium heat for 5 minutes. Reduce heat to low, and cook for 30 minutes more. Invert rice onto a large platter. Serve immediately.

Danish Christmas Rice Pudding With Almonds and Warm Cherry Sauce image

Danish Christmas rice pudding with warm cherry sauce or Risalamande is traditionally served on Christmas Eve. Whoever finds the hidden almond receives a small gift. I like this recipe because it is cooked entirely on the stove top and cooks in one hour, rather than in the oven for two hours or more. Can be made in advance and refrigerated until serving time. The Danes often buy a store bought cherry sauce, but I've included a recipe for home-made. :) Adapted from an online source.

4 cups full-fat milk
1/3 cup short-grained white rice (65 g)
1/2 vanilla pod (reserve the other half for the sauce)
1 cup whipping cream
3 tablespoons granulated sugar
1/3 cup almond paste (or use almond flakes or finely chopped almonds)
1 whole almond (more if you have several children present)
1 1/2 cups frozen pitted cherries (about 185 g)
1/2 tablespoon lemon juice
3 tablespoons sugar
1/2 vanilla pod
1 1/2 cups water
2 tablespoons cold water
1 tablespoon potato starch (corn starch can be substituted)
fresh mint leaves (optional for garnish)

Steps:

  • Split half of the vanilla pod length ways, scrape out the seeds.
  • Place the milk and vanilla in a heavy-bottomed pan. Bring to a boil.
  • Reduce the heat. Add the rice gradually, stirring constantly.
  • Increase the heat and bring to a boil again.
  • When the milk boils, reduce the heat, cover and simmer on a very low heat for about 1 hour or until the rice is cooked. Stir from time to time, making sure that the rice doesn't stick too much to the bottom.
  • Leave to cool completely.
  • Whip the cream together with sugar. Fold the whipped cream and almonds into the rice. You can add more sugar or more almonds if you wish. Serve with warm cherry sauce.
  • Now make the cherry sauce. Place the cherries in a medium saucepan. Add sugar and 1 1/2 cups water. Add the vanilla pod. Simmer until the cherries are tender.
  • Combine the potato starch with 2 tablespoons cold water.
  • Bring the cherries to a boil. Remove the vanilla pod from the pot. Reduce the heat, and , stirring constantly, slowly pour the water with the starch. Simmer for a few minutes until the sauce thickens slightly.
  • Stir in the lemon juice and serve warm over the rice pudding. Garnish with a fresh mint leaf, if desired.
  • * I used frozen sour cherries in this recipe, but regular sweet cherries should work as well.

DRIED CHERRY RICE PUDDING

3 cups whole milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
3/4 cup uncooked white rice
1/2 cup dried cherries that have been rehydrated in 1/4 cup warm brandy
1/2 cup granulated sugar
1 cup heavy cream

Steps:

  • Combine the milk, vanilla, and cinnamon in a heavy pot. Slowly bring the mixture just to the boil over medium heat, being careful not to scorch the milk. Reduce the heat to low, add the rice, and cook at a low simmer for 1 hour, uncovered and stirring occasionally, or until the rice is thoroughly cooked and creamy. Remove from the heat. Stir in the cherries and the sugar and cool as quickly as possible. Refrigerate until completely cold.
  • Whip the heavy cream into stiff peaks with an electric mixer. Using a spatula, fold the cream into the chilled pudding, spoon into pudding cups, and serve immediately or refrigerate until needed.

1 tablespoon baking powder
1 cup milk
2 tablespoons vegetable oil
3 cups pitted tart red cherries
1 cup white sugar
¼ teaspoon almond extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, stir together the flour, 1 cup of sugar, baking powder, milk, and vegetable oil to make a smooth batter; scrape batter into the prepared baking dish.
  • In a separate bowl, stir the cherries with 1 cup of sugar and the almond extract; spoon the cherry mixture over the batter.
  • Bake in the preheated oven until the cake is lightly browned and a toothpick inserted into the center of the cake comes out clean, about 30 minutes.

Steps:

  • 1. Combine water, rice and evaporated milk in a 2- to 3-quart round slow cooker. 2. In a small saucepan, cook the sugar and milk over medium-high heat for 1 minute or until bubbles appear around the edges and the sugar has dissolved. Stir into slow cooker with salt. Cover and cook on LOW for 4-1/2 hours. 3. While rice is cooking, bring cherry juice to a boil and pour over cherries in a small bowl; let stand 10 minutes. Drain, reserving juice. 4. Stir in the cherries, 3 tablespoons juice, cinnamon and nutmeg into slow cooker; cover and cook on LOW for 20 minutes more. 5. Turn cooker off and allow pudding to cool, partially covered, for 30 minutes.

In a saucepan, mix together the sugar and milk; cook over medium-high heat for 1 minute or until bubbles appear around the edges and the sugar has dissolved. Stir into Crockpot with salt. Cover and cook on LOW for 4 1/2 hours. Meanwhile, bring cherry juice to a boil and pour over cherries in a small bowl; let stand 10 minutes. Drain, reserving the juice. After cooking the rice 4 1/2 hours, stir in the cherries, 3 Tbsp. cherry juice, cinnamon and nutmeg. Cover and cook on LOW for 20 minutes more, then turn the cooker off, slide the lid open so it is partially covered and allow to sit an additional 30 minutes. Scoop into a bowl, cover and refrigerate. (To clarify, the whole cooking and sitting amount of time is just under 5 1/2 hours).
