Yield Makes one 9-inch pie

Number Of Ingredients 8

4 cups frozen sour cherries, defrosted until easily separated and drained
1 cup sugar
1 tablespoon all-purpose flour, plus more for rolling out dough
2 1/2 tablespoons cornstarch
Juice and zest of 1/2 lemon
Pate Brisee
1 large egg, lightly beaten
2 tablespoons heavy cream

Steps:

  • Preheat oven to 450 degrees. In a medium bowl, combine cherries, sugar, flour, cornstarch, lemon juice, and zest.
  • On a lightly floured surface, roll one disk of dough into a 12-inch round, about 1/8-inch thick. Fit into a 9-inch glass pie plate. Pour in cherry filling. Roll second disk of dough into a 12-inch round. Cut the dough into 3/4- to 1-inch strips and lay over filling, creating a lattice. Trim edges to 1-inch, and seal by crimping edges with thumb and forefinger. Place on a parchment-lined baking sheet.
  • In a small bowl, whisk together egg and cream. Brush over top of pie. Bake for 10 minutes. Reduce temperature to 400 degrees and bake until golden brown, and juices are bubbling, 40 to 50 minutes more. Remove from oven, and let cool for at least 2 hours before serving.

SOUR CHERRY CRUMBLE PIE

Sour Cherry Crumble Pie image

This is an amazing sour cherry pie that I bake every summer with fresh sour cherries that we pick up in our garden! I got the original recipe from epicurious. The pie can even be cooked with Bing cherries if you add 1 tablespoon of fresh lemon to the filling.

Categories     Pie

Time 2h10m

Yield 1 pie, 10-12 serving(s)

Number Of Ingredients 15

SOUR CHERRY PIE

Sour Cherry Pie image

Craving a slice of sour cherry pie this summer? It's easy to make this old fashioned dessert from scratch with canned cherries-just like Mom does. The flaky crust and sweet, juicy filling make this a simple but delicious treat.

Provided by Emma

Categories     Pies

Time 1h25m

Number Of Ingredients 11

2 15- ounce cans sour cherries in water
1/2 cup liquid from canned cherries
1 cup granulated sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon salt
1 tablespoon unsalted butter
1/2 teaspoon almond extract
15 ounces flaky shortcrust pastry
1 large egg (beaten)
2 tablespoons demerara sugar (optional)

Steps:

  • Preheat the oven to 400 F. Place a large rimmed baking sheet in the oven to preheat.
  • Open the cans of cherries and drain them, reserving the juice from one can. You'll need 1/2 cup of liquid.
  • Pour the liquid, sugar, cornstarch, lemon juice, and salt into a 2-quart saucepan and set over medium heat. Whisk constantly over the heat until the mixture is boiling and has thickened. This will take a few minutes, so be patient. You'll know the mixture is thickening when globs suddenly appear in the mixture.
  • Remove from the heat and whisk in the almond extract and butter until smooth and well blended. Gently fold in the drained cherries with a flexible spatula, then set aside to cool.
  • Roll the chilled pastry on a lightly floured surface until it's about 1/8 inch thick. Use it to line a 9-inch metal pie plate, then trim off the excess pastry with a knife. Gently spread the cooled cherry filling in the pastry.
  • Wad up the remaining pastry and re-roll it to about 1/8 inch thick. Cut into strips, using a ruler for straight lines. Lay several of the strips horizontally across the top, then weave the remaining strips under and over the other ones to create a lattice top. Cut off the excess pastry, crimp the crust, and brush the pastry with beaten egg. Sprinkle liberally with demerara sugar if desired.
  • Bake at 400 F for 20 minutes, then reduce the heat to 375 F and bake for another 20 minutes. The crust should brown beautifully and the filling should bubble gently.
  • Remove the pie from the oven and let it cool for 3-4 hours on a wire cooling rack to allow the filling to cool and set. Cutting it too soon will make the filling runny.
  • Serve with vanilla ice cream.

FRESH SOUR CHERRY PIE

Fresh Sour Cherry Pie image

This is a tart, yet sweet, pie I make with sour Montmorency cherries found on a tree in my yard. I recommend using Trader Joe's French Pastry pie crust, and a woven top really shows off the cherries. It turns out perfect every time! Serve plain or with a scoop of vanilla ice cream.

  • To make the pie crust, mix together flour, some of the sugar, and some of the salt. Add butter and use your fingers or a food processor to combine, just until large clumps form. Make a well in the center of the mixture and pour in the water a little at a time, using your fingers to lightly mix. Continue until all the water has absorbed and a crumbly dough has formed. If dough seems dry, add more water, a tablespoon at a time.
  • Scrape dough onto a lightly floured work surface and press the dough into a compact disc, then halve and form each half into a disc. Wrap in plastic wrap and refrigerate for an hour.
  • For the filling, combine remaining sugar with lemon zest in a large bowl. Add cornstarch and salt and whisk until combined, then add cherries and toss to coat. If using frozen cherries, be sure to drain off any excess juice after thawing and before combining with other ingredients for filling.
  • Preheat oven to 190°C/375°F and grease a pie dish (9-inch/23-cm.) Take dough out of refrigerator and let warm up for a few minutes. On a lightly floured work surface, roll one disc into a 0.25-in./0.5-cm thick round. Transfer the round to the pie dish, letting the excess hang over the edge, and distribute cherry filling evenly on top.
