Sour Cherry Fritters image

Dried sour cherries give these bite-sized, fried Bisquick® mix fritters a sweet-sour taste - a delicious donut like treat ready in 20 minutes.

1 cup Original Bisquick™ mix
1/4 cup cold water
2 tablespoons granulated sugar
1/4 teaspoon almond extract
1 egg
2/3 cup dried sour cherries, chopped
Vegetable oil for deep frying
2 tablespoons powdered sugar

Steps:

  • In medium bowl, stir Bisquick mix, cold water, granulated sugar, almond extract and egg until blended. Stir in cherries.
  • In deep fryer or 4-quart heavy saucepan, heat 2 to 3 inches oil to 350°F. Drop about 5 to 6 small spoonfuls of batter into hot oil. Fry 1 to 2 minutes or until browned; drain on paper towels. Repeat with remaining batter. Sprinkle fritters with powdered sugar. Serve warm.

This fritter recipe you can use virtually any fruit that you want to make the fritters! Experiment and see for yourself!! They are just so scrumptious!!

1 c flour, sifted
1 tsp baking powder
1/2 tsp salt
2 Tbsp sugar
1 large eggs, separated
3 Tbsp water
1 c pitted sour cherries

Steps:

  • 1. Sift together the flour, baking powder, salt and sugar.
  • 2. Combine the beaten egg yolks with water and mix until smooth.
  • 3. Fold in the stiffly-beaten egg whites and add the cherries.
  • 4. Drop by spoonfuls into hot fat (360-f) and cook 2 to 5 minutes or until browned.
  • 5. Drain on absorbent paper and serve with powdered sugar or fruit sauce.
  • 6. Other fruits or berries may be used.

"1/2 cup rolled oats (not instant)", "1/2 cup shelled walnuts, chopped fine", "1/2 cup flour", "1 tsp baking powder", "1/4 tsp salt", "1/2 tsp ground cinnamon", "3 large eggs", "1/3 cup sugar", "2/3 cup milk", "2 tbsp butter, melted", "1 cup fresh Stemilt cherries, pitted and chopped", "Vegetable oil, as needed"

Steps:

  • Mix oats and nuts together until blended then add dry ingredients and set aside.
  • Using an electric mixer, beat the eggs and sugar on high speed for about 3 minutes, until fluffy.
  • Stir the milk into the dry mixture, then fold in the eggs and sugar, followed by the melted butter, and then the sliced cherries.
  • Heat about one tablespoon of oil in a skillet over medium heat.
  • When the oil is hot, drop a heaping tablespoon of batter into the pan.
  • Cook until golden crusty on one side, then flip to cook the other side.
  • Three or four fritters should fit in the skillet at once.
  • Add oil for additional fritters as needed.
  • Serve the fritters warm with a dollop of sour cream, or with maple syrup.

  • Add water, butter, and salt to a saucepan, then bring to a boil, stirring constantly. Add flour and cinnamon to the saucepan, and mix in thoroughly with a wooden spoon. Remove from heat and let cool to room temperature, then beat eggs into mixture one at a time. Let sit for 20 minutes.
  • Take a large piece of parchment paper and cut into 7.5 x 7.5 centimeter squares. Using your pastry bag, create a ring of dough on each square of paper.
  • Pour vegetable oil into a pot with high sides until it reaches several inches high. Heat the oil to 375 F (190 C), then carefully lower two to three pieces of paper with rings attached into oil, batter side down, making sure to keep your fingers away from the oil. The parchment paper will separate from the ring once it hits the oil, at which point you should remove the parchment using metal tongs. Fry the rings until golden-brown, turning once, then remove using a slotted spoon to a paper-towel lined plate. Repeat until all rings are fried, then set aside to cool.

  • In a medium bowl or large measuring cup, whisk together the milk, eggs, butter, and almond extract. Add the wet mixture to the dry and gently fold it in with a spatula until most of the dry ingredients are wet. Gently fold in the cherries. Set aside while you heat the oil.
  • Heat the oil over medium-high heat, until a thermometer reaches 350 degrees. Keep an eye on it. It can get really hot all at once. If the heat rises too much, set the dutch oven or pot off the heat until the temperature comes back down to 350 degrees, and be ready to drop the fritter dough into the pot.

  • Add the remaining 7 Tablespoons of sugar, eggs, butter, vanilla extract, salt, nutmeg, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
  • Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size.
