SOUR CHERRY RELISH



Sour Cherry Relish image

The sour cherry relish can be used in a similar way to cranberry sauce. Its tart, fruity flavor is perfect with pork, but it's also great with ham or turkey.

Yield Makes 2 cups

Number Of Ingredients 9

1 tablespoon extra virgin olive oil
1 small brown onion, finely chopped
1 tablespoon thyme leaves
500g frozen pitted sour cherries
1 tablespoon finely grated orange rind
1⁄4 cup (60ml) orange liqueur
1⁄3 cup (80ml) red wine vinegar
1 cup (220g) caster (superfine) sugar
Sea salt and cracked black pepper

Steps:

  • Place the oil in a medium saucepan over medium heat. Add the onion and thyme and cook for 1-2 minutes or until just golden. Add the cherries, orange rind, liqueur, vinegar, sugar, salt and pepper and stir to combine. Bring to the boil and cook for 30-35 minutes or until reduced and glossy. Allow to cool completely at room temperature.

3 cups fresh or frozen pitted tart cherries, thawed
1 large sweet onion, finely chopped
1 small green pepper, chopped
1 small sweet red pepper, chopped
1/3 cup packed brown sugar
1/4 cup balsamic vinegar
2 teaspoons minced fresh gingerroot
1-1/2 teaspoons grated orange zest
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground allspice

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until vegetables are tender and mixture achieves desired thickness, stirring occasionally. Serve warm or chilled. Refrigerate leftovers.,

A sweet & sour condiment made from fresh cherries, cherry chutney is perfect on grilled meat.

1 1/2 lb. fresh cherries, pitted and roughly chopped, about 3 cups
3/4 cup diced red onion, 1 small
1/3 cup dried currants or raisins
2 cloves garlic, minced
2 tsp. fresh grated ginger
1/2 cup red wine vinegar
1 TB. whole grain mustard
2 TB. light brown sugar
1 1/2 tsp. kosher salt
1 tsp. ground black pepper
1 TB. canola oil

Steps:

  • In a medium pot, heat oil over medium low heat then add onions and garlic.
  • Cook until softened, but not browned, 6 - 7 minutes, then add red wine vinegar and cook a few minutes more.
  • Add in cherries, currants, ginger, brown sugar, mustard, salt and pepper.
  • Simmer for 30 minutes, stirring occasionally, until cooked down and thickened. *see note
  • Cool completely then pack in an airtight container and refrigerate.

I live in the Columbia River Gorge. So many cherries are produced in a very short period, that during cherry harvest, farmers sell pounds of the stuff. I created a savory recipe because there's only so much cherry pie and ice cream one man can eat!

1 pound cherries, pitted
1 cup cider vinegar
½ cup rice vinegar
1 large onion, chopped
1 Granny Smith apple - peeled, cored and chopped
¼ cup white sugar
¼ cup brown sugar
2 tablespoons minced fresh ginger
2 tablespoons Chinese five-spice powder
1 teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • Place the cherries, cider vinegar, rice vinegar, onion, apple, white sugar, brown sugar, ginger, five-spice powder, salt, and nutmeg into a large pot. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer for 1 hour, stirring occasionally. Remove the lid, and continue simmering until the desired consistency has been reached. Chill before serving.

Spicy Cherry Chutney image

This Spicy Cherry Chutney is sweet and sour with a bit of a kick. The perfect condiment to serve at your summer barbecue!

Number Of Ingredients 9

1 teaspoon olive oil
1 cup chopped red onion
2 tablespoons minced habanero or jalapeno pepper, (use as few or many seeds as you'd like depending on your preferred spice level)
1 teaspoon freshly grated ginger
2 cups pitted, halved cherries, (can use frozen cherries out of season)
1/4 cup sugar
3 tablespoons cider vinegar
1 tablespoon lemon juice
1/4 teaspoon Kosher salt

Steps:

  • In a medium sauce pan, heat olive oil over medium-high heat. Saute onion and pepper until onion is translucent, about 5 minutes. Stir in ginger and saute until fragrant, about 1 minute.
  • Add cherries, sugar, cider vinegar, lemon juice, and salt. Bring to a boil; lower heat to a rapid simmer and cook until sauce thickens, about 40 to 45 minutes.
  • Transfer to a bowl or serving dish and set aside to cool. Chutney will continue to gel and thicken as it cools. Serve room temperature or store in fridge and serve cold.

Cranberry, Sour Cherry, and Grapefruit Chutney image

Sweet-tart and spiced with cardamom and cloves, this chutney is delicious with any type of poultry or game bird, including duck and quail.

1 bag (12-ounce) fresh or frozen (thawed) cranberries
3/4 cup sugar
2 tablespoons cider vinegar
1/4 teaspoon ground cardamom
Pinch of ground cloves
Pinch of salt
1/2 cup dried sour cherries
2 Ruby Red grapefruits, pith and peel removed, separated into segments

Steps:

  • In a medium saucepan, combine cranberries, sugar, vinegar, cardamom, cloves, and salt. Stir to combine well. Place over medium heat; cook, stirring constantly, until cranberries just begin to burst and soften, about 5 minutes. Turn off heat; stir in the cherries, and transfer mixture to a medium bowl. Let cool completely, then gently mix in grapefruit. Cover with plastic wrap, and refrigerate until ready to serve, up to 5 days.

6 cups chopped pitted sour cherries (Tart)
1 1/2 cups finely chopped red onions
2 1/2 cups packed light brown sugar
1 tablespoon dry mustard
1 teaspoon pickling salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground cloves
1 cup cider vinegar

Steps:

  • Prepare jars, lids and bands.
  • In a large pot, combine cherries, onion, brown sugar, mustard, salt, pepper, cloves and vinegar. Bring to a boil over medium heat, stirring often.
  • Reduce heat and boil gently, stirring occasionally, for about 40 minutes or until onions are translucent and mixture is slightly thickened.
  • Ladle into prepared jars leaving a 1/2" headspace. Check for air bubbles. Adjust headspace if needed. Process jars in a boiling water bath for 10 minutes. Adjust time according to your altitude.
  • NOTE: If using frozen sweetened sour cherries, measure when frozen, let thaw and drain off half the juice. Reduce brown sugar by 2 tablespoons.

  • Melt the butter in a medium saucepan, then add the onion, garlic and a good pinch of salt. Cook over a low-medium heat, stirring often, for about 10 minutes until softened but not coloured. Add the mustard seeds, bay leaf, cinnamon stick and sugar, then cook for a further 3-4 minutes until fragrant.
  • Add the red wine vinegar, cherries in kirsch and the sour cherries. Bring to a gentle simmer, then cook for 45-50 minutes, stirring occasionally, until everything has broken down into a sticky chutney. Taste, add the extra kirsch or brandy and season. Cool, then serve.
