FRENCH MEAT AND VEGETABLE PIE
Some time ago, a co-worker brought a meat pie to lunch. The aroma was familiar-after one taste, I was amazed to discover it was the same pie my grandmother used to serve when I was a youngster! She shared the recipe, and I have been enjoying it ever since. -Rita Winterberger, Huson, Montana

- Preheat oven to 375°. In a skillet, heat oil over medium heat. Saute onion until tender, 1-2 minutes. Remove and set aside. Brown beef and pork together until no longer pink; drain. Combine onion, meat, potatoes, vegetables and seasonings. , On a lightly floured surface, roll one half of dough to a 1/8-in.- thick circle; transfer to a 9-in. pie plate. Trim even with rim. Roll remaining dough to a 1/8-in.-thick circle. Fill crust with meat mixture. Place crust over filling; trim, seal and flute edges. Cut slits in top. If desired, brush with egg. , Bake until golden brown, 30-35 minutes.

RUSTIC MEAT AND POTATO PIE
Steps:
- Heat oven to 425°F. Prepare pie crusts as directed on box for two-crust pie, using 9-inch glass pie plate.
- In 12-inch skillet, cook beef and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Transfer beef mixture to large bowl. In same skillet, heat oil over medium heat. Add carrots; cook 3 to 4 minutes, stirring occasionally, until crisp-tender. Add carrots, potatoes, bacon, thyme and pepper to beef mixture.
- In small bowl, mix broth and cornstarch with whisk; pour into skillet. Heat to boiling over medium heat. Cook about 2 minutes or until thickened. Pour over beef and vegetables; stir to combine. Spoon mixture into crust-lined pie plate.
- Top with second crust; seal edge and flute. Cut slits in several places in top crust. In small bowl, beat egg and water. Brush over top crust.
- Bake 15 minutes. Reduce oven temperature to 375°F; bake 40 to 45 minutes longer or until crust is browned, placing sheet of foil over entire crust for last 20 minutes. Let stand 10 minutes before serving.

BEEF AND POTATO PIE
Beef and vegetables baked in a delicious pie. Great for dinner and excellent warmed-up the next day as well. Other vegetables can be interchanged like celery, peas, etc. Two pounds ground beef can be substituted for sirloin.

- Place a baking sheet on rack in the lower third of the oven. Preheat oven to 400 degrees F (200 degrees C).
- Heat oil and butter together in a large saucepan over medium heat; cook and stir onion until softened, about 10 minutes. Add beef; cook and stir until browned on all sides, about 5 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
- Stir flour, pepper, and salt into beef mixture; cook and stir until beef is coated, 2 to 3 minutes. Add wine; bring to boil, reduce heat, and simmer, 3 to 5 minutes.
- Mix beef stock, potatoes, carrots, tomato paste, and Worcestershire sauce into beef mixture; bring to a boil. Reduce heat and simmer until vegetables are tender, 30 minutes to 1 hour. Remove from heat and cool.
- Line a 9x13-inch baking dish with 1 pie crust. Spoon beef and potato filling into crust; top with remaining pie crust, crimping the 2 crusts together around the edges using a fork or your fingers. Brush top crust with milk.
- Place baking dish on the baking sheet in the oven and cook until crust is golden brown, 40 to 45 minutes.

- 1. Prepared the pie crust mix according to the package directions; roll out for 2 crust 9 inch pie. Line 9 inch pie plate with pastry.
- 2. Combine meat, milk, soup mix, pepper, salt, and allspice; mix gently. Lightly pat into pastry lined pie plates top with potatoes. Adjust top crust and seal flute edge. Cut design in top pastry.
- 3. Bake at 350 degrees about 1 hour or until browned. Serve warmed catsup or Stake Sauce. Makes 6 to 8 servings. Enjoy

- In a large bowl, combine the flour, salt and onion powder; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half. Line a 9-in. pie plate with bottom crust; trim pastry even with edge. , In a large skillet, saute peppers and onion in 1 tablespoon oil. Just about everyone's mom or grandma had some version of creamy hamburger potato casserole for dinner. An easy recipe, old-fashioned hamburger casserole relies on creamy canned soup and a few other simple ingredients for its flavor and texture!

- Preheat your oven to 350 degrees and prepare a 13x9 inch baking pan with cooking spray. Set aside.
- Prepare your potatoes and slice them.
- In a large skillet sauté onions, mushrooms, and garlic.
- Add ground meat and cook until no longer pink. Drain if necessary. Set aside.
- In a medium bowl, combine soup, broth, cream, paprika, salt and pepper with a whisk.
- Layer about half of the potatoes across the bottom of your prepared pan. They can overlap and should touch. Your goal is to cover the entire bottom of the pan.
- Next, pour about half of the soup mixture over top of the potatoes. Then dump half the meat mixture and followed by the cheese.
- Repeat all the layers in the same order with the remaining ingredients.
- Top with fried onions and more cheese.
- Cover with lightly sprayed aluminum foil or lid and bake for 90 minutes or until the potatoes are fork tender. Make sure to coat your lid or tinfoil in cooking spray so the cheeses do not stick to it.
- Remove cover and broil to brown the cheese, if desired. Allow to rest for 10 to 15 minutes before slicing and serving.
- Serve and enjoy!

SOUPER MEAT 'N' POTATOES PIE
This is a tasty little pie,easy to do, that my Mom used to make us. Not sure where she got the recipe. You can adjust the seasonings to taste and play around with it, once I added green onions to the potatoe mixture and also used some grated parmesan on top with the melted cheddar. I like this with some peaches 'n' cream corn niblets on the side and some homemade pickles and/or chow. Nice with a side salad too.

- (I usually dab with some paper towel if i get any excess, not much with lean beef though) Frost the pie with mashed potatoes that have been mixed with the remaining soup.
