Categories     weekday, pastas, soups and stews, appetizer

Time 30m

Yield Four to six servings

Number Of Ingredients 8

2 large garlic heads, about 36 cloves
1 tablespoon butter
2 teaspoons olive oil
8 cups water
Salt and freshly ground pepper to taste
3 ounces vermicelli or angel-hair pasta, broken into small pieces
6 eggs, separated
1/4 cup white-wine vinegar

Steps:

  • Peel the garlic cloves and chop them coarsely.
  • Heat the butter and oil in a saucepan or a small kettle. Add the garlic and cook, stirring, for about one minute. Do not brown the garlic. Add the water, salt and pepper. Bring to a boil, cover and simmer for 15 minutes.
  • Strain the garlic and reserve the cooking liquid. Put the garlic and a half cup of the reserved cooking liquid in a blender or food processor and blend to a fine puree. Put the remaining cooking liquid in a saucepan and add the puree. Bring to a boil. Add the vermicelli. Stir and cook for about four minutes. Do not overcook.
  • Meanwhile, blend the egg yolks and vinegar in a bowl.
  • Turn off the heat under the saucepan. Drop in the egg whites. Do not stir. They will form a cloudlike mixture. Add the egg yolk mixture and stir very slowly. Serve immediately.

GARLIC SOUP

Garlic Soup image

Simple yet delicious. Cook garlic slowly to bring out the sweetness (the longer it simmers in the broth the better). I serve a bowl of this with a few grilled skewered shrimp laid over the rim of the bowl and crusty bread as a starter. Everyone that tastes it will want the recipe. This recipe is even better if you use a low sodium prepared chicken stock in place of the water and chicken bouillon

40 CLOVES OF GARLIC SOUP

40 Cloves of Garlic Soup image

This simple vegetarian soup bursts with garlic, both roasted and simmered. It's a satisfying, bold soup equally worthy of kicking off a fancy dinner party or completing a quiet, cozy evening at home by the fire. Oh, and it will probably also help you ward off vampires. Bonus!

Provided by Kare for Kitchen Treaty

Time 1h50m

Number Of Ingredients 10

25 garlic cloves (unpeeled + 15 garlic cloves, peeled)
2 tablespoons olive oil
2 tablespoons unsalted butter
2 1/4 cups sliced onions (about 1 medium onion)
1/2 teaspoon dried thyme (or 1 1/2 teaspoons fresh thyme)
3 cups vegetable broth
1/2 cup heavy whipping cream
Kosher (coarse salt and freshly ground pepper)
1/2 cup shredded Parmesan cheese
4 lemon wedges

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Cut the top(s) off of your head(s) of garlic and separate out 25 cloves, making sure each clove has an end chopped off (this will help with squeezing out the roasted garlic later on).
  • Place the 25 cloves in a small glass baking dish, pour the 2 tablespoons of olive oil over the top, and sprinkle with a little salt and pepper. Toss to coat. Cover the baking dish with foil and bake for about 45 minutes, until cloves are light golden brown and very tender. Remove from oven and cool.
  • Squeeze the roasted garlic between your fingertips to release the garlic and discard the peel. Set roasted garlic aside.
  • In a large saucepan, melt the butter over medium heat. Add the onions and thyme; cook until onions are soft and translucent, about 5 minutes. Add both the roasted garlic and the 15 peeled raw garlic cloves and cook, stirring, for about 3 minutes.
  • Add vegetable stock and, continuing over medium heat, bring the soup just to a boil. Reduce heat and simmer, covered, for about 20 minutes, or until garlic is very tender. Remove from heat and cool slightly.
  • Using an immersion blender or working in batches with a blender, puree soup until smooth.
  • Return soup to pan and stir in heavy whipping cream. Season with salt and pepper, to taste.
  • Sprinkle Parmesan cheese into each bowl and ladle the soup over the top. Squeeze one lemon wedge over each bowl and sprinkle with additional Parmesan if desired. Serve.

Provided by Queen Dana

Categories     Potato

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 14

1 head garlic
1/4 cup shallot, diced
2 tablespoons butter
7 cups chicken broth
1 cup cream
2 teaspoons salt
1/4 teaspoon sage
1/4 teaspoon thyme
1 small bay leaf
1 teaspoon parsley
3 cups potatoes, peeled, cleaned and diced
1 pinch saffron
6 slices French bread
1 cup gruyere or 1 cup swiss cheese, grated

  • In a 3 qt sauce pan saute shallots. Combine all the ingredients in the same sauce pan except for the potatoes, cream and saffron. Bring the soup to a boil and simmer for 20 minutes.
  • Use an immersion hand blender to puree the soup (or run through a food processor).
  • Add the potatoes, cream and saffron to the soup and simmer for 20 minutes or until the potatoes are tender.
  • Divide the soup into 6 oven safe bowls and top with french bread. Sprinkle cheese on top of the bread and broil until the cheese begins to brown. Serve while warm.

SOUPE A L'AIL / CREAMY GARLIC SOUP

SOUPE A L'AIL / CREAMY GARLIC SOUP image

Categories     Soup/Stew     Vegetable     Vegetarian     Low/No Sugar     Wheat/Gluten-Free     Christmas Eve     Simmer

Yield 4-6 people

Number Of Ingredients 8

2 Tablespoons olive oil
2 Tablespoons butter
1 cup whole, peeled garlic cloves
1 small yellow onion, peeled & diced
1 cup potato, peeled & diced
4 cups chicken stock
2 cups half & half
salt & white pepper to taste

Steps:

  • Melt butter with olive oil in a 5 quart heavy-bottomed non-reactive pot over medium heat. (I prefer enameled iron for even heat conduction.) Add whole garlic cloves and onions. Saute over medium to medium-low heat for 15-25 minutes. Stir often. Cook until garlic and onions are soft and light golden brown. Cook slowly to develop the sweetness of the garlic. Add the chicken broth and the potato. Bring soup to a boil. Cover, reduce heat and simmer, stirring occasionally, until the potato is fork tender, about 15-20 minutes. Remove the pot from the heat. Carefully pass the soup through a food mill. A food processor or blender will work, but will not give you the same texture, because the food mill removes the fibrous parts of the garlic, while a process chops them up and they remain in the soup. Return soup to heavy bottom pot. Heat just to boiling over medium heat. Reduce heat to medium low, add half and half and heat, stirring often, until warmed through. Taste for seasoning and add salt and white pepper to taste. Ladle into serving bowls and garnish with a chiffonnade of tangy greens, like arugula or mesculin.

CHICKEN, WILD RICE & GREEN GARLIC SOUP

Chicken, Wild Rice & Green Garlic Soup image

Try this healthy, quick soup which pairs green garlic with lean chicken and wild rice. Green garlic emerges upwards from the bulb in spring. They are also known as garlic "scapes" or "whistles." They are delicious and have a milder flavour than cloves of garlic. Find them at your local farmer's market.

Provided by Developed for CFC by Nancy Guppy, RD, MHSc

Yield 10

Number Of Ingredients 16

1 tbsp olive oil
1 cup green garlic (scapes), finely-sliced
2 cups carrots, sliced
½ cup celery, sliced
2 tbsp sage, fresh, minced
1 tsp sweet paprika
½ tsp black pepper, freshly ground
12 cups low-sodium chicken broth
¾ cups wild rice, dry
2 cups cooked chicken, diced
1 cup snow peas, fresh
½ tsp salt
¼ cup parsley, fresh, minced
½ cup green garlic, for garnish
or
½ cup green onions

Steps:

  • Cut garlic scapes into 1 inch (2.5 cm) segments and chop finely in a food processor.
  • Heat olive oil over medium high heat in a soup pot. Add minced garlic scapes and sauté a few minutes.
  • Cut carrots in half length-wise and slice into half moons. Slice celery into similar thickness. Add to garlic scapes with the minced sage, paprika and freshly ground black pepper. Sauté five minutes, stirring occasionally.
  • Stir in chicken broth, wild rice and cooked chopped chicken. Cover and bring to a boil. Reduce heat and simmer 40 minutes or until rice is tender.
  • Stir in snow peas. Cook a few minutes more until peas are tender crisp.
  • Season with salt. How much salt to add is a matter of preference but this also depends on the saltiness of your broth. If you used ready-to-serve broth the soup may require no additional salt.
  • To serve ladle into bowls and garnish with minced fresh parsley and a fresh sprig or two of green garlic.

  • Trim root end off one head of garlic. Set cloves, trimmed side down, in a small, oven-proof ramekin. Add 1 tablespoon olive oil and a pinch sea salt. Cover with foil, set on a rimmed baking sheet, and slide into oven. Roast garlic about 15 minutes, or until garlic is soft, but not at all brown. Once garlic is done, carefully remove foil and set aside to cool. When cool enough to handle, slide cloves out of their skins and reserve. Reseve garlic-infused olive oil.
  • Trim, smash, and peel remaining head of garlic. In a heavy bottomed 2- or 3-quart pot, 1 tablespoon olive oil over medium heat. Add cloves to pot, along with the sliced shallots, a generous pinch sea salt, chili flakes, and several twists black pepper. Sauté 2 - 3 minutes, then turn heat to low and cover; cook, stirring occasionally, about 30 minutes.
  • Remove cover, up heat to medium, and sauté until shallot and garlic brown just a bit on the edges. Add white wine, scrape up any brown bits, then pour in 3 cups stock and add potatoes, reserved roasted garlic and olive oil, and tied herbs (or bouquet garni), along with a 1/2 teaspoon sea salt.
