Souffle Potato Pancakes image

This is a light version of potato pancakes (I don't mean low fat just not as heavy as regular potato pancakes). Make smaller pancakes and add a topping of your choice for an appetizer.

2 1/2 cups potatoes, grated
4 eggs, separated
1/2 cup onion, finely diced
1/2 cup flour, sifted
2 teaspoons salt
1/4 teaspoon pepper
6 -8 tablespoons margarine

Steps:

  • Place egg yolks in a large bowl. Lightly bat yolks.
  • Add salt and pepper to flour and mix.
  • Stir in onions and flour mixture in with egg yolks.
  • Squeeze potatoes in a towel to release unwanted moisure. Add potatoes to egg and onion mixture and blend well.
  • Whip egg whites until fluffy but not dry and fold into batter.
  • Melt 1 tablespoon of margarine in a large skillet over medium heat. For each pancake, drop 1 heaping tablespoon of batter into pan. Flatten into thin, 3 inch wide pancakes.
  • Saute 2-3 minutes or until golden brown. Flip and cook other side till golden brown.
  • Add more margarine to the pan as necessary to complete cooking all the batter.
  • Serve warm.

Seasoned with garlic and lightened with egg whites, a potato souffle is delightfully puffy out of the oven.

Unsalted butter, for dish
3 tablespoons fine dried bread crumbs
1 cup leftover mashed potatoes
2 large eggs, separated
3 tablespoons heavy cream
3 tablespoons grated Parmesan cheese
1/2 teaspoon minced garlic
Salt and freshly ground pepper
Freshly grated nutmeg

Steps:

  • Heat oven to 375 degrees. Butter an 8-inch-long, 1/4-inch-deep oval gratin dish. Coat with bread crumbs, and set the dish aside.
  • In a large bowl, whisk together the potatoes, egg yolks, cream, Parmesan cheese, and garlic until creamy and well combined. Season with salt and pepper, and set the potato mixture aside.
  • Place egg whites and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Whip on medium speed until the whites are glossy and stiff.
  • Fold the egg whites into the potato mixture. Transfer mixture to the prepared gratin dish, and bake until golden and puffy, about 40 minutes. Top with nutmeg, and serve.

2 lbs potatoes, peeled and quartered
1/2 cup butter
1/8 teaspoon nutmeg
2 egg yolks
1/2 cup light cream
1/2 teaspoon salt
1/2 teaspoon pepper
2 egg whites, beaten stiff

Steps:

  • Boil potatoes in lightly salted water for 15 minutes or until tender.
  • Drain and mash well.
  • Add butter, nutmeg, egg yolks, light cream, salt and pepper and mix well.
  • Fold in egg whites.
  • Place potato mixture into a greased casserole pan (large enough hold all the mixture, but be only 2/3 full).
  • Bake in preheated 375°F oven for about 20 minutes (until puffed and heated through).
  • Serve immediately.

Steps:

  • Preheat oven to 300 degrees Fahrenheit.
  • Beat the egg whites in a bowl until you can make peaks in them.
  • Meanwhile, add the egg yolks, cheese, salt, pepper, and nutmeg to the mashed potatoes.

150 g plain flour
50 sugar
3 eggs, separated
1/2 teaspoon vanilla essence
450 ml skim milk

Steps:

  • Stand the jam or compote in a basin on top of the aga to warm and soften.
  • Sieve the flour into a mixing bowl stir in the sugar and make a well in the centre of the flour mixture.
  • Add the egg yolks and some of the milk.
  • Whisk or beat in gradually adding more milk to make a smooth batter.
  • Beat in the vanilla essence.
  • Whisk the egg white until white and fluffy but not stiff.
  • Beat 1 tablespoon egg white into the batter and then gently fold in the remaining egg white.
  • Heat the pan on the boiling plate.
  • Transfer to the simmering plate and add enough butter to grease the pan.
  • Pour in enough batter to cover the.
  • base of the pan and cook the pancake until set flip over and cook the second side briefly.
  • Slip onto a warm plate or dish spread softened warm jam or fruit compote over half the pancake and fold over the second half.
