TURKEY AND CHEDDAR QUICHE
Add fresh dill to this shredded-turkey quiche with a homemade crust.

Steps:
- Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers, it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly and take care not to overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
- Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
- Sprinkle the scallions evenly into the crust. Combine the turkey with the Cheddar and sprinkle it in an even layer over the scallions.
- Whisk together the heavy cream, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the dill.
- Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

- Preheat oven to 400°F and position racks in the top and bottom thirds of the oven
- In a medium-size skillet over medium-high heat, cook the bacon until brown and crispy, 6-8 minutes
- Using a slotted spoon, transfer the bacon to a paper towel-lined plate
- In a large bowl, combine the half-and-half, eggs, egg yolks, thyme, salt, pepper and nutmeg
- Lightly spray the muffin tins with cooking spray
- Roll the puff pastry sheet out on a lightly floured work surface into a 9"x12" rectangle
- Cut the rectangle into 6 equal squares and place each square into the each muffin round so that the dough extends slightly over the top of the muffin tin
- Divide the Gruyere, spinach and bacon between each of the cups and fill them with the egg custard just to the top of the cup line
- Fold each overlapping corner of each square over top of the filling to enclose it
- You can bake the quiches immediately or freeze and bake them later
- Pop the quiches into the oven and bake about 20 minutes, switching the position of the tins halfway through baking, until the filling is puffed and the crust is golden brown
- Serve with your favorite salad alongside
SOPHISTICATED INDIVIDUAL CLUB QUICHES

- 1. Spray each hole in the cupcake pan lightly with non stick spray.
- 2. Form a piece of deli ham into each cup to make a liner for the quiche, making sure to raise the ham a little higher than the cupcake hole so that the mixture stays inside cup.
- 3. In large bowl, combine eggs, cream, milk, salt, pepper, garlic and Tarragon. Beat with electric mixer until smooth and well blended. Add the turkey, tomatoes, cheddar cheese, Swiss cheese and blend well with spatula.
- 4. Take a ladle and add egg mixture to each prepared hole in the cupcake pan about 3/4 full. Top with Parmesan cheese and a little extra cheddar cheese.
- 5. Bake 350 degrees 10-15 minutes or until puffy and done in the middle. Serve with a dollop of hollandaise sauce.
EASY WEEKNIGHT DINNER: PERSONAL-SIZED QUICHE

- Cut pie crust dough to line each individual ramekins.
- Divide cheese between the ramekins.
- Beat together eggs, milk/cream, salt, and pepper.
- Pour the egg mixture over the cheese in the ramekins.

- Bake for 20-25 minutes until eggs are set and the tops and crust are lightly golden.

- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 mini muffin pans. In a large skillet over medium heat, fry bacon and onion together for about 5 minutes, or until bacon is crisp. Drain and set aside.
- In a medium bowl, beat the eggs. Stir in the baking mix, parsley, shredded cheese, bacon and onion. Spoon into greased muffin cups.

Cool remaining quiches; cover and freeze for up to 3 months., To use frozen quiches: Carefully remove frozen quiches from ramekins. Place on an ungreased baking sheet or microwave-safe plate. Bake, uncovered, at 350° for 30-35 minutes or microwave at 50% power for 4-6 minutes or until heated through.
