THE NEELYS' BUTTER COOKIES
Customize the texture of the Neelys' butter cookies by adjusting the thickness of the dough. Roll it thin if you want crisp cookies and thick if you like softer ones.

Steps:
- Sift together the flour and salt into a large bowl.
- Put the butter into the bowl of an electric mixer fitted with the paddle attachment, and beat on medium speed until fluffy and light, about 2 minutes. Add the confectioners' sugar and vanilla, and mix until combined. Reduce the speed to low, and slowly add the flour and salt mixture to the butter and sugar mixture, mixing on low speed until the dough comes together and is smooth. Turn the dough out onto a sheet of plastic wrap. Cut the dough into quarters, wrap each piece in plastic wrap, and chill in the refrigerator for 2 hours.
- When you're ready to bake the cookies, preheat the oven to 350 degrees F. Line two 9 by 13-inch baking sheet with parchment paper.
- Remove the dough from the refrigerator and let it soften slightly. Using a rolling pin dusted with flour, roll out one of the dough quarters, (keeping the others refrigerated until you need them), on a lightly floured work surface to 1/4- to 1/8-inch thickness. Cut the cookies into the desired shapes, and then use a metal spatula to transfer the cookies to one of the prepared baking sheets, spacing about 1 1/2 inches apart. Sprinkle the cookies with decorating sugar, if desired.
- Repeat with the remaining dough.
- Bake the cookies until they are light brown around the edges and on the bottom, 8 to 12 minutes. Cool briefly on the sheets, and use a metal spatula to transfer the cookies to a wire rack to cool completely.
EASY BUTTER COOKIES I
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- Mix together all ingredients until well-blended.
- Roll 2-inch sized pieces of dough into balls and place on cookie sheet. Flatten each with the back of a fork.
- Bake 13 to 15 minutes until light brown. Let cool on wire rack.

SOPHIE'S BUTTER COOKIES
My Grandmother owned/operated a bakery in Philadelphia, this recipe is hers and is over 50 years old. A Beautiful delicate butter cookie, not too sweet with just a hint of lemon and mace. My family loves these cookies, hope yours likes them to.You can halve the batch, it makes alot

Steps:
- Cream the butter, Crisco and sugar together.
- Then add eggs, vanilla, lemon and the pinch of mace.only a pinch!
- Gradually add 3lbs of flour.
- When dough is getting less wet and forms a ball, begin to knead flour in with your hands. You must stop adding flour once it doesn't stick to your hands.
- Put dough in bowl and refrigerate overnight, will keep for a week in fridge or you can freeze for two months.
- Roll out dough a little at a time on a lightly floured surface and cut with your favorite cookie cutters. Take a metal spatula and quickly slide it under the cookies to pick them up.
- Dip one side of cookie in the cinnamon sugar mixture and place with c/s side facing up on a greased cookie sheet, we then sprinkle with crystals.
- Bake for 10-13 in a preheated 375° oven. They should be lightly brown around edges. Cool on racks and grab a glass of milk, mmmmm.
- I usually can fill about four medium sized cookie tins. Yield is approximate.

SHELBI'S BUTTER COOKIES

Steps:
- Sift together flour and salt into a bowl.
- In the bowl of a standing mixer, add the butter and mix on medium-high until fluffy and light. Add the sugar and the eggs, 1 at a time, until and mix until combined. Add vanilla and cinnamon. Reduce the speed to low and gradually add the flour to the butter, sugar, egg mixture. Mix until batter looks smooth. Place dough onto a flowered cutting board and cut the dough into quarters, flatten and wrap with the plastic. Chill in the refrigerator for 2 1/2 hours.
- Preheat oven to 350 degrees F.
- With a rolling pin covered in flour, roll out dough quarters 1 at a time, on a floured work surface to 1/4 to 1/8-inch thick. Use a variety of cutters to cut out cookies. Transfer to a baking sheet lined with parchment and space cookies about 1 1/2-inches apart.
- Bake cookies until they are golden brown, about 8 minutes. Using a using a spatula, transfer cookies to a wire rack to cool.

Steps:
- Preheat the oven to 350°.
- With an electric mixer (even the hand-held kind), cream together the butter and the sugar.
- Add egg yolks and vanilla and mix well.
- Sift flour and salt together, shaking back and forth in a fine sieve.
- Beat into the butter mixture until well-mixed.
- When ready to bake, use an ungreased cookie sheet and place the cookies 1 inch apart.
- Bake for about 10 minutes and DO NOT BROWN THEM.
- Remove the cookies from the cookie sheet while still warm and cool on sheets of waxed paper.
- Decorate if you like:.
- Shape dough into a roll the width of a cookie.
- Wrap in waved paper and chill.
- Before baking, roll in chocolate shots.
- Slice 1/2 inch thick and bake on ungreased cookie sheet at 350° for 10 minutes. Do Not Brown.

- Heat the oven to 200C/180C fan/gas 6. Beat the salted butter, vanilla and sugar together with an electric whisk until pale and fluffy. Sift over the flour and beat again until just combined. Spoon the dough into a piping bag fitted with a medium star nozzle.

BETTY BROWN'S BUTTER COOKIES
This recipe came from Great Gramma LaLonde's neighbor - Betty Brown. It is the only cut-out cookie I remember Grams Lorette ever making. I like them really thin and crispy. Dad prefers them thicker. Frosted is the best, using confectioners' sugar, flavoring, and milk.

- Beat butter, sugar, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy. Sift flour, cream of tartar, baking soda, and salt together in a separate bowl; mix, 1 cup at a time, into creamed butter mixture until dough is just mixed. Form dough into 1-inch-thick disks and place on a plate; chill in refrigerator, 2 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
