SOUTHERN PINTO BEANS
Steps:
- Inspect the beans to remove any small rocks or debris. Rinse well.
- Place the beans, 8 cups of water, ham hock, bouillion cubes, and chopped onion in a large pot with a lid. Bring to a boil, then reduce the heat to a simmer. Add salt to taste. I usually add about 1 teaspoon, but the exact amount of salt needed will vary based on the sodium level in the brand of bouillon and your taste.
- Cook over medium low for 1 1/2 to 2 hours or until tender to your liking. Remove the ham hock, shred the meat, and return it to the pot, if desired.
SOUTHERN-STYLE BAKED BEANS
A classic Southern-style baked beans recipe made with brown sugar topped with bacon.

- Combine ketchup, barbeque sauce, brown sugar, mustard, worcestershire sauce, Liquid Smoke, garlic and pepper in a medium-sized bowl then mix well; set aside.
- Open each can of beans and pour off all the standing liquid in the top of the can. Discard liquid then add beans to the ketchup mixture. Mix beans gently with the ketchup mixture until thoroughly combined then pour into a shallow 2-quart baking dish.
- Cut bacon into 1/2 inch pieces then place pieces evenly in a single layer on top of beans. I like to kinda crumple each piece a bit instead of laying them flat - like little inchworms. The cute ride-on toys from the 80's not actual worms. Bake beans, uncovered, at 350 degrees for 1 to 1.5 hours or until bacon is cooked through and starting to crisp. Enjoy!

- 1. pick through and rinse beans well
- 2. place beans and all ingredients in crock pot
- 3. add water till beans are covered by 5 inches
- 4. turn crock pot on high for two hours.
- 5. turn crock pot to low and go to bed! A total cooking time of 12 hrs. two hours on high and ten hours on low.
- 6. check in morning for liquid, spices and doneness....adjust spices and add water or tomato sauce if needed
- 7. if you love heat, add chopped peppers at the beginning
