KIMCHI SCRAMBLE
The unique taste and texture of radish kimchi pairs surprisingly well with scrambled eggs. I've made this dish for many skeptics, and they've all loved it. The "4-6 pieces of radish" refers to the root, but I usually include a few pieces of radish green too. You can find radish kimchi at many Asian food stores.

Steps:
- Cut the pieces of radish root in half lengthwise and slice into thin crescents. Chop the mushrooms and some radish kimchi greens.
- Heat the old over medium high heat. When hot, add the mushrooms and saute for 1-2 minutes. Add the radish root and greens and saute for another minute.
- Reduce the heat to medium. Add the egg and cheese (if using) and season with pepper. Scramble until cooked through.

Steps:
- Dice onion finely. Dice tomato into small pieces.
- Fry onion in oil until it brown. (Not all onions will brown, however, so be careful not to burn it!).
- Add ginger-garlic paste and tomato and fry for about 30 seconds.
- Add eggs and salt. Turn down heat to low. Scramble the eggs by stirring until desired consistency is achieved.
- Enjoy while hot!
OMELET SCRAMBLE
This is really just scrambled eggs with a whole bunch of stuff in it. Easy, delicious and comforting!

- Crack all 4 eggs into a bowl.
- Add the milk, salt and pepper to the eggs and whisk. Set aside.
- Sauté mushrooms in a bit of butter for 2 or 3 minutes.
- Add the shredded cheese, bacon crumbles and sauteed mushrooms to the egg mixture and mix.
- Pour egg mixture into a pan at medium-high heat and cook eggs, scrambling constantly, until no liquid is visible.
- Top with additional cheese and parsley if desired.

- Brown sausage, onion and bell pepper; drain.
- In small bowl, combine eggs and milk; beat well.
- Add to sausage mixture; cook over medium heat, stirring occasionally until eggs begin to set.
- Add cheese; mix lightly.
- Continue cooking until cheese is melted and eggs are set.
- Remove from heat; stand tortilla chips around edge of skillet.
- Spoon salsa over egg mixture.
- Serve immediately with additional salsa and chips.
