1 (10 lb) smoked bone-in ham
2 cups honey
1/2 cup whole grain mustard
1/2 cup packed dark brown sugar
2/3 cup butter

Steps:

  • Heat the oven to 350°F and arrange a rack in the lower third. Remove any packaging or netting from the ham. Trim away any excess fat, leaving about a 1/4-inch layer all over. Set the ham aside to rest at room temperature for 30 minutes.
  • Line a baking pan with aluminum foil. Place the ham, cut side down, on the baking sheet and cover it with a piece of parchment paper. Tightly cover the ham and parchment paper with aluminum foil and bake for 45 minutes.
  • Meanwhile, combine the remaining ingredients in a small saucepan over medium-low heat, stirring occasionally, until the butter melts and the brown sugar has completely dissolved, about 3 minutes. Set aside and let cool to lukewarm (the glaze should be the consistency of room-temperature honey).
  • When the ham is ready, remove it from the oven and increase the oven temperature to 425°F. Discard the foil and parchment paper and, using a sharp knife, score a 1-inch-wide diamond pattern (don't cut more than 1/4 inch deep) over the entire ham.
  • Brush the ham with a quarter of the glaze, return it to the oven, and bake uncovered for 15 minutes. Remove from the oven, brush with another quarter of the glaze, and repeat every 15 minutes until all of the glaze has been used and a dark golden-brown crust has formed, about 60 to 75 minutes total. Let the ham rest 20 to 30 minutes before slicing.

1 (3 -5 lb) cooked boneless ham
1/2 cup water
1 cup honey
1/2 cup packed brown sugar
1 teaspoon ground cloves
1/2 teaspoon ground mustard

Steps:

  • Score the ham, making diamond shapes 1/2 inch deep.
  • Place on a rack in a well-greased foil-lined roasting pan.
  • Add water to pan.
  • In a small bowl, combine the honey, brown sugar, cloves and mustard; pour over ham.
  • Bake, uncovered, at 350 degrees for 1 1/2-2 hours basting with pan juices often. Add additional water to pan if necessary.
  • *If you don't have a roasting pan - line a 9x13 pan with double layer foil. And proceed with recipe.

You'll never have another salty, dry ham again! I use this recipe every Christmas and Easter and get a pretty, moist, and succulent ham every time.

smoked ham
2 tablespoons prepared mustard
1 cup brown sugar
1 whole clove
pineapple ring
maraschino cherry
1 cup white wine (slightly sweet)
1 cup ginger ale
1/2 cup honey

Steps:

  • Preheat the oven to 250 or if pressed for time 300.
  • Remove the rind from the ham and most of the fat if there in a lot. I always score the ham - cut it diagonally so you get the pretty diamonds. Put a clove in the center of each diamond. Place ham in a baking pan lined with aluminum foil - eliminates that nasty clean up later.
  • In a small bowl, combine mustard, brown sugar and honey. Pour glaze over the ham and press into the cuts. Using toothpicks, secure slices of pineapple to the ham with a cherry in the middle of each ring.
  • Bake the ham from 4 hours to all day. Baste every 30 minute with equal parts wine and ginger ale, or ginger ale only. Later in the cooking process use the pan juices for basting.
  • Remove from the oven and let ham stand for 30 minutes before carving. Enjoy!

I made a 10 pounder for Easter Sunday 2004 on the boat. I served it as sandwiches with beans, and potato salad. The problem I incurred was that when I went to place it in the oven, it was too big! I had to cut a 1/2" slice off of the bottom before it would go in. If you use one of the "spiral sliced" hams, follow the directions for cooking that comes with it. However I will still turn the heat up to 425 for the last 1/2 hour and baste it with a mixture of frozen orange juice concentrate and ground cloves. You should also be aware that I have never had a "spiral sliced" ham that wasn't dry. and I've been known to go to great extremes to find one that wasn't spiral sliced. 1 (8 ounce) can frozen orange juice concentrate, small can
1/2 cup dark brown sugar
whole cloves, as needed

Steps:

  • Preheat oven to 325°F.
  • Cut slices in the top of the ham on a diagonal, and press one whole clove into each square.
  • Mix up the orange juice and dark brown sugar.
  • Bake in oven for 20 minutes per pound at 325°F.
  • Baste every 1/2 hour or so, making sure you work fast to get the ham back into the oven quickly. You'll probably notice that the top may start to burn (caramelize), cover with a strip of tin foil. As the cooking process continues, you'll have to lightly cover the whole ham with a larger piece of aluminum foil.

This is not your grandmother's traditional Easter lamb, which of course can be so wonderfully satisfying. But if you want to spike the lamb a bit, this is the recipe for you. The lamb, pink, juiscy and tender, is redolent of wonderfully spicy aromas. The jus is scented by the whole green chilis, but retains its essential lamby flavor. & the mint sauce provides the kick & freshness that elevates this dish from the ordinary. Enjoy, & happy Easter!

1 tablespoon chili powder or 1 tablespoon cayenne pepper
1 tablespoon dry mustard
1 tablespoon jeera powder (ground cumin)
1 tablespoon sweet paprika or 1 tablespoon hot paprika
1 tablespoon red pepper flakes
2 teaspoons ground cinnamon
6 tablespoons olive oil
1 tablespoon chopped garlic
1 tablespoon honey
2 tablespoons coarse sea salt
1 leg of lamb, bone in, 8-to-10-pound
1 cup dry red wine or 1 cup lamb stock
5 -6 fresh green chilies
2 cups chopped fresh cilantro
1 cup chopped mint
1 tablespoon fresh ginger, finelygrated
1 tablespoon garlic, chopped
1 tablespoon green chili pepper, chopped
1/4 cup lemon juice

Steps:

  • Place the dry spices in a small fry pan & toast briefly, about 1-2 minutes to awaken the flavors. Place the toasted spices in a small mixing bowl & add the olive oil, chopped garlic, honey & sea salt. Mix well to form a paste & rub in on all sides of the lamb leg. Refrigerate & marinade overnight.
  • The next day about an hour before cooking, remove lamb from refrigerator and let stand.
  • Pre-heat oven to 350 degrees F.
  • Place the lamb leg in the center of a roasting rack and place the rack in the roasting pan. Cook in center of oven for I hour. Use an instant-read meat thermometer and take the temperature of the thickest part of the leg meat. Your meat thermometer should read about 118 degrees F. If it does not, watch carefully and continue to cook until the temp reads just 118 degrees F. Remove the lamb from the roasting pan to a flat surface to rest.
  • For mint sauce: Blend all ingredients in a blender until semi-smooth.
  • For jus: Pour off as much of the fat as you can from the bottom of the roasting pan. Put the pan on top of a burner on your stove. Start a low heat under the pan and when the drippings begin to sizzle, pour in the wine or stock and add the fresh chiles. Simmer, scraping the pan to release solids, for 3-4 minutes. Remove from heat, taste and adjust seasoning. Pour over the leg of lamb.

My husband wanted ham for Christmas, but the local meat market sold out early of honey glazed hams. I decided to try baking my own ham and found this recipe on the internet. I adapted it just a bit using regular mustard and honey instead of Dijon mustard. It turned out great and my husband says he prefered it cooked this way over the honey baked ham! It wasn't near as salty and had a wonderful flavor! Plus, the cost of preparing this ham was about 1/3 of the cost of a Honey Baked Ham!

15 lbs bone-in smoked ham (partially cooked)
1 1/2 cups orange marmalade
3/4 cup mustard
1/8 cup honey
1 1/2 cups firmly packed light brown sugar
1 tablespoon whole cloves (I use "Ceylon")

Steps:

  • Trim outer skin and excess fat from ham.
  • Place ham, meat side down in a large roasting pan and score, making crosshatch incisions with a sharp knife.
  • Turn ham back on its side.
  • Roast at 300F for 2 hours.
  • Remove from oven.
  • Mix together the orange marmalade, mustard, honey, and brown sugar.
  • Stud ham with cloves, either by inserting one clove at the intersection of each crosshatch or by inserting in the center of each square.
  • Brush ham with glaze.
  • Increase oven temperature to 350F and return ham to oven for about 1 1/2 hours, or until themometer inserted near bone (but not touching bone) reaches 160°F.
  • Glaze the ham at least 3 times while baking.
  • When ham is done, transfer to a large cutting board or platter and allow to rest for 30 minutes before carving.

cooked bone-in ham (rump half or shank portion)
1/2 cup packed brown sugar
1/2 cup red wine vinegar
4 sprigs of fresh mint (each sprig about 2 inches)
green onions and leek (optional)
cracked black pepper (optional)

Steps:

  • Preheat oven to 325°F If desired, score ham by making diagonal cuts 1-inch apart in fat in a diamond pattern. Place on rack in a shallow roasting pan. Insert meat thermometer. Thermometer should not touch bone. Bake until thermometer registers 125°F For rump, allow 1-1/4 to 1-1/2 hours; for shank, allow 1-3/4 to 2 hours.
  • Meanwhile, for glaze, in a medium saucepan stir together sugar, vinegar, and mint sprigs. Bring to boiling. Reduce heat. Boil gently, uncovered, about 30 minutes or until reduced to 1 cup. Remove from heat. Remove and discard mint. Brush ham with some of the glaze.
  • Baked ham for 20 to 30 minutes more or until thermometer registers 135°F, brushing three more times with additional glaze. Sprinkle with pepper. Let stand 15 minutes before carving. (The meats temperature will rise 5 degrees during standing to the safe temperature of 140°F.) Serve meat on a platter layered with green tops of uncooked leeks and green onions, if desired. Sprinkle with pepper, if desired. Bring any remaining glaze to boiling and serve with ham. Makes 16 to 20 servings.

You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

1 (5 pound) ready-to-eat ham
¼ cup whole cloves
¼ cup dark corn syrup
2 cups honey
⅔ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Score ham, and stud with the whole cloves. Place ham in foil lined pan.
  • In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
  • Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.
