This recipe intrigued me because I'm drawn to Amish cooking. Although I really liked it just as written (it's tasty comfort food), I believe it has the potential to be tweaked by just the right Zaar chef to make it a winner in the inexpensive-yet-delicious category (if there is one)...So have at it, Zaar chefs!!! :)

1 1/2 lbs ground chuck
1/2 onion, chopped
2 garlic cloves, minced
1/4 cup catsup
1/2 head green cabbage, coursely chopped
6 -8 yukon gold potatoes, diced
1/4 lb Velveeta cheese, sliced
1 1/2 cups whole milk
4 tablespoons butter, sliced into 8 pats
salt & pepper

Steps:

  • Brown ground chuck, onions and garlic in a skillet. Drain. Mix in catsup and set aside.
  • In a 2 quart baking dish, layer 1/2 of the cabbage, then 1/2 of the potatoes, and salt & pepper to taste.
  • Layer the Velveeta cheese slices on top.
  • Then spread on all of the meat mixture.
  • Add another layer of the cabbage, then another layer of potatoes and salt & pepper to taste. Arrange pats of butter evenly on top.
  • Pour milk over entire casserole and bake, COVERED, for 1 1/2 hours to 2 hours in a preheated 350 degree oven.

1 cooking spray (such as Pam®)
3 pounds ground beef
2 cups coarsely chopped celery
1 cup coarsely chopped onion
1 pinch salt and ground black pepper to taste
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10.75 ounce) can condensed Cheddar cheese soup
1 large head cabbage, coarsely chopped
5 medium Yukon Gold potatoes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan and an 8-inch square or round pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, celery, and onion in the hot skillet with salt and pepper until beef is browned and crumbly and vegetables are translucent, about 10 minutes. Add cream of mushroom and Cheddar cheese soups and mix well.
  • Layer cabbage into both of the prepared pans. Add 2 sliced potatoes to the 8-inch pan and remaining potatoes to the 9x13-inch pan. Spread around to cover. Spoon meat mixture over the potatoes and cabbage in both pans.
  • Bake, covered, in the preheated oven for 1 hour. Uncover and continue to bake for 15 minutes more.

Optional: 2 ounces bacon or pancetta, or 4 ounces bulk or country sausage
1 to 2 tablespoons unsalted butter
1 head green cabbage
1/2 pound potatoes
1/2 cup heavy cream, half-and-half, or broth
1 teaspoon coarse grain or country mustard
1/2 teaspoon salt
Freshly ground black pepper to taste
1/2 cup freshly shredded melting cheese (Gruyère, Swiss, or Gouda)

Steps:

  • Preheat an oven to 375 F. Chop the sausage, bacon, or pancetta, if using.
  • Melt the butter in a large ovenproof frying pan or baking dish over medium heat. Add the pancetta, bacon, or sausage, if using, and cook, stirring occasionally until the meat is no longer pink and beginning to brown.
  • Meanwhile, remove and discard the first layer or two of cabbage leaves. Cut the cabbage in half lengthwise, remove and discard the core, and roughly chop the leaves into bite-sized pieces. Alternatively, you can shred it or cut it into ribbons, which will create a greater variety of texture within the final casserole.
  • Add the cabbage to the pan and cook, stirring occasionally, until the leaves are wilted, about 5 minutes.
  • Meanwhile, peel and chop the potatoes into small bite-sized pieces. Add them to the pan and stir to combine. Remove the pan from the heat.
  • In a small bowl, whisk together the cream, mustard, salt, and pepper. Add the mixture to the pan and stir to combine with the potatoes and cabbage. Cover the pan, transfer to the oven and bake until the potatoes are just tender, from 15 to 30 minutes.
  • Sprinkle the casserole with the cheese, return to the oven and cook, uncovered, until bubbling and browned, 10 to 15 more minutes.

Steps:

  • Gather the ingredients.
  • Place cabbage, onion, and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover, and simmer about 8 minutes until tender. Do not overcook.

5 cups shredded cabbage
6 medium potatoes, sliced
4 medium carrots, sliced
1 small onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
1 pound lean ground beef
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-1/2 ounces) condensed vegetable beef soup, undiluted

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture; toss gently. Transfer to a greased 3-qt. baking dish. Spread soups over top. , Cover and bake at 350° for 1-1/2 hours or until the meat is no longer pink and the vegetables are tender.

This is an unusual, healthy and absolutely delicious combo. It's billed as a main dish, but we like it as a side with sausages. The caraway seed gives it zing. We were out of dill weed, so subbed rosemary, and used all low-fat Greek yogurt to cut calories. It's even better the second day. From The Moosewood Cookbook.

4 potatoes, medium
1 1/2 cups cottage cheese
1/2 cup sour cream or 1/2 cup Greek yogurt
1/2 cup plain yogurt
3 tablespoons butter
1 1/2 cups white onions, chopped
1 1/2 teaspoons salt, divided
4 cups cabbage, packed, shredded
1/2 teaspoon caraway seed, ground
1/2 teaspoon dill weed or 1/2 teaspoon rosemary
2 tablespoons cider vinegar
1/4 cup sunflower seeds, divided
black pepper, to taste

Steps:

  • Preheat oven to 350°.
  • Peel and cut potatoes into small pieces and boil until mashable.
  • Drain and mash, while still hot, with cottage cheese, sour cream & yogurt.
  • In a large pot, saute onions in butter with 1/2 tsp salt for 5 minute.
  • Add ground caraway, cabbage & remaining 1 tsp salt.
  • Saute until cabbage is tender (may need to add small amount of water to avoid scorching).
  • Remove from heat & add potato mixture & the rest of the ingredients except 2 T sunflower seeds and paprika.
  • Taste to correct seasoning.
  • Spread into a deep, buttered casserole.
  • Top with paprika & remaining sunflower seeds.
  • Bake @ 350°, uncovered, 40 minute
  • Let rest 5-10 minutes before serving.
