CHICKEN WITH PEARS AND HONEY-RUM SAUCE
This is a quick-to-fix dish of sautéed chicken, red bell pepper and chunks of fresh pear tossed in a lightly spiced rum sauce.

Steps:
- Combine the flour, cinnamon, cumin, cayenne and about 1/2 teaspoon salt in a plastic bag. Add the chicken and shake to coat.
- Heat the vegetable oil in a large skillet over medium-high heat. Using tongs, add the chicken pieces, shaking off the excess flour.
- Cook, stirring frequently, until beginning to turn golden in color, 3 to 4 minutes. Add the red pepper and cook 2 minutes longer.
- Add the rum, chicken broth and honey, bring to a simmer and add the pear.
- Reduce the heat to medium and continue cooking until the sauce has thickened slightly, about 3 minutes.
- Stir in the butter and scallions. Season to taste with salt and pepper and remove from the heat. Serve over Ginger Rice (see below).

HONEY GLAZED CHICKEN

- Put 2 chicken breasts, skin side up in a small baking dish and season.
- Squeeze the lemon into a bowl and stir in the honey and soy sauce. Spoon the mixture over the chicken, then tuck the squeezed-out half of lemon between the pieces (this will moisten and add flavour to the chicken).
- Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). Cook until done and richly glazed, basting with the juices at least twice. To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
- Serve with salad and potatoes roasted with herbs and garlic.

- Combine the Mayonnaise, Honey and Rum and set aside.
- Pat the Chicken Breast dry, apply the Pepper and Olive Oil to both sides.
- Sear in a very hot frying pan (cast Iron works great) 4 minutes on each side.
- Let the chicken rest for a couple minutes, and then slice.

- Place the chicken in the bottom of a 6-quart or larger slow cooker. In a medium mixing bowl or very large measuring cup, whisk together the soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour over the chicken. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken reaches an internal temperature of 165 degrees F on an instant-read thermometer. If you are available, flip the chicken over once halfway through to coat both sides. (If not, don't stress; it will still be tasty.)
- Remove the chicken to a plate and let cool slightly. Whisk the cornstarch into the slow cooker cooking liquid. Cover and cook on HIGH for 15 minutes, until the sauce thickens slightly, stirring occasionally. If you'd like the sauce particularly thick, you can cook it for a full 30 minutes in the slow cooker OR follow the stovetop method below.
- For quicker sauce thickening, reduce the sauce on the stove: After whisking in the cornstarch, transfer the cooking liquid to a medium saucepan. Cook on the stovetop over medium heat, stirring often until the sauce thickens, 5 to 10 minutes. (If your slow cooker insert is stovetop safe, you can remove it from the slow cooker and place it directly on the burner, but do not do this unless you are POSITIVE your insert is stovetop safe or it may crack.)
- With two forks (or your fingers if the chicken is cool enough), shred the chicken and place it in the slow cooker. If you reduced the sauce on the stove, add it back to the slow cooker now. Stir to coat the chicken with the sauce. Serve over rice, sprinkled with green onions and sesame seeds.

- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Combine the oil, honey, mustards, garlic and lemon juice in a small bowl to combine well.
- Place the chicken into prepared baking dish. Season generously with salt, pepper and paprika. Spoon 3/4 of the honey mustard mixture evenly over the chicken and spread evenly all over each breast. Arrange rosemary between each piece.
