Surprisingly tasty muffins with fresh fruit. Use any type of fresh berry or chopped fresh fruit for a delightful breakfast.

¼ cup applesauce
¾ cup white sugar
2 eggs
1 ¼ cups all-purpose flour
½ teaspoon baking soda
¾ cup nonfat sour cream
1 cup fresh blueberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin pan with paper muffin liners.
  • In a medium bowl, stir together the applesauce, sugar and eggs. Combine the flour and baking soda, add to the wet mixture and mix well. Stir in the sour cream, then fold in the berries. Spoon the batter into the prepared muffin cups. Cups should be at least 3/4 full.
  • Bake for 12 to 15 minutes in the preheated oven, until muffins spring back when touched lightly.

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup butter
1 egg
3/4 cup sour cream
1/4 cup milk

Steps:

  • Heat oven to 400 degrees F.
  • Mix flour, baking powder and baking powder in a large bowl. Cut in butter until mixture resembles coarse crumbs then make a well in center of mixture.
  • Beat egg in a small bowl; add sour cream and milk.
  • Add to flour mixture, mixing just until moistened.
  • Spoon into greased muffin pans until cups are about 2/3 full. Or grease pans and the surface around the pan as well, filling cups all the way, this will produce muffins with larger tops, though less muffins.
  • Bake for 15 minutes or until lightly browned.

1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup sour cream
1/2 cup granulated sugar
1/2 cup coconut oil (melted (see note for other oil options))
1 teaspoon vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a 12-cup muffin tin with nonstick cooking spray or line with muffin liners.
  • In a medium bowl, whisk together the flour, baking soda, salt and nutmeg.
  • In a liquid measuring cup or in a separate bowl, whisk together the sour cream, granulated sugar, coconut oil, vanilla and eggs.
  • Pour the wet ingredients into the center of the dry and using a rubber spatula or large spoon, fold and mix until just incorporated (no overmixing unless you want dense, dry muffins!). The batter will be on the thick side of things.
  • Fill the muffin tins evenly, 1/2 to 2/3 full, and bake for 14-16 minutes until the top lightly springs back to the touch.

2/3 cup milk
1 teaspoon vanilla extract

Steps:

  • Put Global Sun Oven out to preheat. Spray muffin tins with cooking spray or line with paper muffin cups. Spray silicone molds with cooking spray and place on a baking sheet. Whisk the flour, sugar, baking soda, baking powder, and salt in a medium bowl until blended. In a large bowl, whisk the eggs and sour cream until smooth, then whisk in the milk and vanilla extract. Stir in the flour mixture with a wooden spoon until just incorporated. Fill prepared muffin tins three-quarters full. Use a toaster oven rack or canning jar rings to separate the two muffin pans and cross stack them in the Sun Oven. Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Bake any leftover batter in a second batch. Set pans on a wire rack to cool for 10 minutes. Gently rock each muffin back and forth to release and remove it from the tin. Cool the muffins an additional 5 minutes on the rack before serving. Cool muffins completely before storing in an airtight container for up to 24 hours or freezing for up to 1 month.

Whisk buttermilk, eggs, sour cream and oil in medium bowl to blend; whisk in herbs and lemon peel. Stir buttermilk mixture into flour mixture. Divide batter among prepared cups. Brush tops lightly with melted butter.
  • Bake muffins 20 minutes. Brush tops with butter. Continue baking until golden on top and tester inserted into center comes out clean, about 15 minutes longer. Turn muffins out onto rack. Serve warm or at room temperature.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease or line a 12-cup muffin tin with paper liners.
  • Combine brown sugar, walnuts, and cinnamon in a bowl for the filling/topping.
  • Beat butter, sugar, and eggs together in a large bowl with an electric mixer on medium speed until creamy. Add sour cream and vanilla extract and combine well.
