1/2 cup butter, softened
1 cup packed brown sugar
1 large egg, room temperature
1-3/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 cup 2% milk
1-1/2 cups grated zucchini, squeezed dry
1/2 cup chopped walnuts
1/2 cup raisins
1 teaspoon grated orange zest

Steps:

  • In a bowl, cream the butter and brown sugar until light and fluffy, 5-7 minutes. Add the egg and mix well. Combine dry ingredients; add alternately with milk to creamed mixture. Stir in zucchini, walnuts, raisins and orange zest. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned and cookies are set.

  • In a large bowl, cream together the butter and brown sugar until smooth, then beat in the egg. Combine the flour, baking powder, salt, cinnamon, nutmeg and cloves; stir into the creamed mixture alternately with the milk. Finally, mix in the zucchini, walnuts, raisins and orange zest. Drop by heaping spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven, or until the edges are lightly browned.

1/2 cup butter (1 stick, softened)
1/2 cup granulated sugar
1/4 cup light brown sugar
1 whole egg
1 teaspoon vanilla extract
1 1/2 cups zucchini (shredded)
1 cup old fashioned oats
1 cups chopped walnuts (or almonds)
1 1/2 cups all purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 cup semi sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Add butter to a stand mixer with the paddle attachment. Cream for 2-3 minutes until light and fluffy.
  • Add both sugars and cream for another 2-3 minutes.
  • Add the egg and vanilla and mix until incorporated. Make sure to scrap the sides of the bowl.
  • Next add in zucchini and mix until combined.
  • Fold in oats and walnuts.
  • In a medium bowl combine flour, cinnamon and baking soda.
  • Fold the dry ingredients to the wet ingredients in two parts. Fold just until combined. Do not over mix.
  • Fold in the chocolate chips.
  • Drop by rounded tablespoons and space them 2 inches apart on a baking sheet lined with a silicon baking mat or parchment paper.
  • Bake for 10 minutes. The cookies should be slightly golden brown.
  • Allow them to cool for 2-3 minutes on the baking sheet then transfer them to a wire rack to cool completely.
  • Store them in an airtight container to keep them fresh and moist.

1 teaspoon cinnamon
1/2 tsp salt
1/2 cup butter (softened)
1 cup granulated sugar

1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Grease baking sheets or line with parchment paper

  • In a large bowl, beat butter and sugar with a mixer on medium speed until light and fluffy. Add egg and beat well.

CREAM TOGETHER IN A BOWL:
1 c sugar
1/2 c softened butter
1 beaten egg
SIFT DRY INGREDIENTS
2 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cloves
1 tsp cinnamon
ADD:
1 c grated zucchini
1 c raisins
1/2 c chopped walnuts

Steps:

  • 1. CREAM sugar, butter, & egg till creamy
  • 2. SIFT dry ingredients together and add to mixture
  • 3. ADD zucchini, raisins, nuts; blend well
  • 4. DROP by rounded teaspoonfuls on greased cookie sheet
  • 5. BAKE 375 F for 12-25 min or until done
  • 6. DON'T OVER BAKE -- These are soft cookies
  • 7. In searching for just the right picture for these, I did not really find one that is exact. And I noticed that other people add chocolate chips and oatmeal to their recipes. I think they are perfect the way they are. I don't think those things are needed, but that is up the individual. Enjoy!
