SOFT WHOLE WHEAT SUGAR COOKIES

I make these cookies for Thanksgiving and Christmas as presents. Decorating them in the colors of the season makes for a nice present. If I just would stop nibbling on them, my presents would be larger :) Cookies are not real sweet, but are soft and moist and perfect for tea.

1 cup white sugar
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
½ cup butter flavored shortening
2 tablespoons milk
1 teaspoon apple pie spice
1 teaspoon vanilla extract
1 egg
2 cups whole wheat flour
2 teaspoons white sugar
½ teaspoon ground cinnamon
½ pound mini candy-coated chocolates

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In large bowl, combine first 10 ingredients and blend well. Stir in whole wheat flour.
  • Shape into 1 inch balls and place on ungreased cookie sheet, 2 inches apart. Flatten each cookie slightly with a fork.
  • Combine sugar and cinnamon and sprinkle over each cookie. Decorate with M and M's.
  • Bake in pre-heated oven for 8 to 10 minutes or until light golden brown.

Steps:

  • In large bowl, combine 1 cup sugar and margarine; beat until light and fluffy. Add milk, lemon peel, vanilla and egg; blend well. Add flour, baking powder, baking soda, salt and nutmeg; mix well. Cover with plastic wrap; refrigerate 30 minutes for easier handling.
  • Heat oven to 375°F. In small bowl, combine 2 tablespoons sugar and cinnamon. Shape dough into 1-inch balls; roll in sugar-cinnamon mixture. Place 2 inches apart on ungreased cookie sheets.
  • Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

1 cup powdered sugar
1 cup butter or margarine, softened
3/4 cup vegetable oil
2 tablespoons milk
1 tablespoon vanilla

4 1/4 cups Gold Medal™ white whole wheat flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt

Steps:

  • In large bowl, beat 1 cup of the granulated sugar, the powdered sugar, butter, oil, milk, vanilla and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda, cream of tartar and salt. Cover and refrigerate about 2 hours or until firm.
  • Heat oven to 350°F. Shape dough into 1 1/2-inch balls. In small bowl, place remaining 1/2 cup granulated sugar. Coat balls with sugar. On ungreased cookie sheet, place balls about 3 inches apart. Press bottom of drinking glass on each ball until about 1/4 inch thick. If glass starts to stick, press bottom of glass on cookie dough as needed before pressing balls of dough (the fat in the dough helps to grease the bottom of the glass). Sprinkle each cookie with a little additional sugar.
  • Bake 12 to 14 minutes or until set and edges just begin to turn brown. Immediately remove from cookie sheet to cooling rack.

The best chocolate chip cookie recipe! These cookies are easy to make with basic, wholesome ingredients. No mixer required! They're miraculously vegan, too (no softened butter here). Recipe yields 13 large cookies.

2 cups white whole wheat flour or regular whole wheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon fine sea salt
1 1/4 cups chocolate chips*
2/3 cup lightly packed coconut sugar or 1/2 cup packed brown sugar
1/2 cup sugar
1/2 cup plus 1 tablespoon melted coconut oil or extra-virgin olive oil**
1/4 cup plus 1 tablespoon water
Maldon flaky sea salt for sprinkling (optional)

Steps:

  • In a medium bowl, combine the flour, baking powder, baking soda and salt. Whisk to combine, then add the chocolate chips and toss to coat.
  • In a large bowl, combine the coconut sugar, regular sugar, oil and water. Whisk until the sugar has incorporated into the oil and the mixture is smooth, about 1 to 2 minutes.
  • Add the flour mixture to the sugar mixture, then stir just until combined and no more flour is visible (don't overdo it).
  • Line 2 baking sheets with parchment paper for easy cleanup. Fill an ice cream scoop two-thirds with dough (or spoon the mixture into even 2-inch mounds), and place the dough onto one of the prepared sheets. Repeat with remaining dough, leaving several inches of space around each cookie.
  • Freeze the cookies on their pans for 30 minutes, or chill them for up to 24 hours in the refrigerator.
  • When you're ready to bake, preheat the oven to 350 degrees Fahrenheit. Bake until the edges are just starting to turn golden, about 14 to 17 minutes. Place the baking sheet on a cooling rack and sprinkle the cookies with flaky salt, if using. Repeat with the remaining cookies.

1 ½ cups white whole wheat flour
1 ½ teaspoons baking soda
¼ teaspoon salt
¾ teaspoon ground ginger
¾ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

½ cup solid-state coconut oil, softened (but not melted!)
½ cup plus 2 tablespoons coconut sugar
3 tablespoons unsulphured molasses
1 large egg
1 teaspoon vanilla extract
about ¼ cup granulated sugar, for rolling

Steps:

  • In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, nutmeg and cloves.
  • In a large bowl, beat together the coconut oil and coconut sugar with a hand mixer for 2 minutes, until sort of fluffy (it won't be as fluffy as with regular butter).
  • Add in the molasses, egg and vanilla and beat again until combined. Slowly add in the flour mixture and beat on low until just combined.
  • Transfer the bowl to the refrigerator and chill for 30 to 35 minutes.
  • Preheat the oven to 350ºF. Line a large baking sheet with parchment paper.
  • Scoop about 1 ½ to 2 tablespoons of the chilled dough and form into balls (about 1 ½-inch in size). Roll the balls in the granulated sugar and place on the prepared baking sheet about 2 to 3 inches apart.
  • Bake for about 8 to 9 minutes, until the tops of the cookies have cracked / crinkled (do not over bake these!). Let the cookies cool directly on the baking sheet.
