Steps:

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

Steps:

  • Melt the butter in a medium-sized non-stick skillet over medium-low heat. We want the butter to pretty much coat the whole pan.
  • Whisk the eggs. When the butter is just barely bubbling, add the eggs to the pan directly in the center so that the butter gets pushed out to the sides. ZERO STICKAGE. This is good.
  • Watch for the edges to just barely start to set, and then gently swipe a spatula around the edges of the pan to create large soft curds. Don't flip the curds over. Continue this process, pausing in between to allow time for the eggs to cook but working quickly enough so as not to overcook the eggs, just gently pushing/folding the liquid eggs to form curds. The entire process should take 2-3 minutes or less.
  • When the eggs are barely set and you have some big folds of heavenly soft scrambled eggs laying in the pan, remove from heat. Serve on a breakfast sandwich or with your bowls or just by themselves. SO. AMAZINGLY. GOOD.

Steps:

  • Crack the eggs into a large bowl and whisk together until light and airy.
  • Melt the butter in a medium skillet over low heat. Add the eggs to the pan and wait about 10 seconds for them to start to set up. Swirl them with a rubber spatula to create soft curds. Season with salt and continue swirling until the curds are set but still a little wet.
  • Garnish with chives, and drizzle with extra-virgin olive oil.
  • Serve with roasted tomatoes and peasant bread.

Toast, for serving

Steps:

  • Crack the eggs into a mixing bowl. Whisk the eggs until the yolks and the whites are cohesive and light yellow.
  • Add the butter to a nonstick pan and heat over medium-low heat. When the butter is melted, add the eggs and 1/2 teaspoon salt. Continue moving the eggs with a rubber spatula; after a few minutes, some curds will start forming. Keep stirring and scraping the pan until the eggs come together, are creamy and look almost like a custard. This process can take between 15 to 20 minutes. Remove the pan from heat. Season with salt.
  • To serve, spoon the eggs onto the toast. Top with freshly ground black pepper.

By far the quickest and easiest egg dish to put on the table is scrambled eggs, which are warm, comforting, and softly luxurious. Scrambled eggs can resemble soft curds or a dry sponge depending on how they are treated. They are a good example of why cooking with gentle heat can be a good thing. Higher heat leads to a higher coagulation temperature, but it also increases the rate at which the eggs scramble. By lowering the heat, we slow down the cooking process, thereby upping the possibility of perfectly cooked results. Here we've taken the process one step further by using a hot water bath to cook the eggs. By controlling the temperature of the cooking medium, we can guarantee that the eggs will not overcook. While the eggs are cooking, your hands are free to prepare the rest of breakfast so that everything is ready at the same time.

1/4 cup plus 2 teaspoons/75 grams whole milk
3/4 teaspoon/4.5 grams fine sea salt
3 1/2 tablespoons/50 grams unsalted butter

Steps:

  • Heat a circulating water bath or a pot of water set over medium heat to 162.5°F (72.5°C).
  • Whisk the eggs together with the milk and salt. Cut the butter into small chunks and stir into the eggs. Pour the egg mixture into a vacuum or zip-top bag and seal. Place the sealed eggs in the water bath and cook for 25 minutes. Remove the bag from the bath and shake the contents. This will bring the butter into the eggs and create the small scrambled curds familiar in scrambled eggs. Serve immediately.
  • For a more decadent preparation, pour the contents of the bag into a whipped cream canister and aerate with one nitrous charge. Shake the contents thoroughly and then extrude the eggs.

Using a rubber spatula and broad sweeping motions, push eggs all the way around the circumference of the skillet, then across the bottom. Continue to push eggs around and across skillet until fluffy and barely set, about 2 minutes; they should still look runny on top. Immediately divide between 2 plates and sprinkle with sea salt.
