I have been making lots of bread lately, and this is wonderful, soft, fluffy sandwich bread. The dough had the best texture of any I made so far. No bread machine required! Even though there is no machine, it's very easy for a first time bread maker to make. Prep time does not include rising. **I am sorry you didn't have success.. I have passed this on to lots of friends and they all had lots of success! 5 -7 cups bread flour
1 2/3 cups milk
1/2 cup warm water (110 degrees)
2 tablespoons active dry yeast (or 3 packets)
3 tablespoons honey
2 teaspoons salt
2 tablespoons oil
1 pinch sugar
1 egg, beaten (optional)

Steps:

  • add yeast and a pinch of sugar (to feed the yeast) to warm water, let it sit 5-10 minutes until very foamy. water should be warm, but not hot, about 110 degrees.
  • put proofed yeast into a large mixing bowl. add milk, honey, oil, and salt.
  • add flour, start with 3 cups. mix with a sturdy spoon until smooth.
  • add in more flour, one cup at a time until it gets to hard to stir.
  • turn out dough onto a floured surface and knead for about 10 minutes adding more flour as needed. dough should be smooth, elastic and not too dry, but not sticking to your hands either.
  • put dough in a greased bowl and turn it over to lightly grease it. cover the bowl with plastic wrap and a towel (you can use a damp paper towel and towel if you don't have plastic).
  • sit it in a warm place (like on top of the fridge) for 1-1 1/2 hours until doubled in size.
  • cut the dough in half as equal as you can. punch dough down, getting all the air out. form into a rectangle and roll up tight, tucking in the ends. it should look like a small loaf.
  • place each loaf in a greased (I use shortening) loaf pan. cover again and let rise 45 minutes until about doubled in size.
  • if you choose, brush with the egg for a nice glossy look (i prefer it).
  • bake at 350 for 35 minutes on the middle rack (leave room, they will rise more in the oven!).
  • the bread is done when it's golden and sounds hollow when you tap on it.
  • remove immediately from the pans and cool on a cooling rack so the bottoms don't get soggy (check to make sure it's done by also tapping on the bottom-it should sound hollow also).
  • cool at least 10 minutes before cutting.

Easy bread machine recipe for sandwich bread.

1 cup (225 grams) milk, see note
⅓ cup (75 grams ) half and half, see note
3 tablespoons (45 grams) softened butter, salted or unsalted
3 ¾ cups (450 grams) bread flour, see note
3 tablespoons (35g) sugar
1 ½ teaspoons salt
1 ½ teaspoons instant yeast or active dry

Steps:

  • Place the ingredients into the pan of a 1 ½ to 2 pound bread machine in the order recommended by the manufacturer.
  • Select the program for basic white bread. Press Start.
  • When the baking completes, remove the pan from the machine. Allow the bread to cool in the pan for about 5 minutes. Remove the bread from the pan, sometimes this requires a shake to get the bread out of the pan. Set the loaf on a wire rack to cool.
  • Store, in a bread box, bread bag or well wrapped on the counter for 4 days, or freeze for up to 3 months.

1 cup warm water (110 degrees F/45 degrees C)

Steps:

  • Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.
  • Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces, and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix together the egg white and 2 tablespoons water; brush lightly onto the rolls. Bake in the preheated oven for 15 minutes, or until the rolls are golden brown.

1 ¼ cups milk (70 to 80 degrees F)
¼ cup sugar
2 tablespoons butter, softened
¾ teaspoon salt
1 cup bread flour
1 egg, beaten
1 ¼ teaspoons active dry yeast
2 ¾ cups bread flour
1 tablespoon butter or margarine, melted

Steps:

  • Combine milk, sugar, butter, and salt in small saucepan over medium heat; cook and stir until butter melts. Remove from heat and allow to cool to lukewarm.
  • Combine 1 cup bread flour, egg, yeast, and milk mixture in the bowl of a stand mixer fitted with a dough hook; beat at lowest speed for 1 minute. Let rest 5 to 10 minutes. Add 2 3/4 cups bread flour; mix at next-to-lowest speed until dough cleans sides of bowl and sticks to dough hook, about 2 minutes.
  • Place in lightly greased bowl, cover, and let raise in warm place until doubled (about 1 hour).
  • Turn dough out onto lightly floured surface, punch down to get out air bubbles, and shape into rolls, placing rolls onto 2 lightly greased baking sheets. Cover with waxed paper and let rise for another 45 minutes to 1 hour.
  • Brush tops of buns with melted butter. Cover and let rise in a warm place until doubled, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until lightly browned, 10 to 15 minutes.

Super soft bread machine buns - a sweet dinner roll recipe that's easy to make. The secret is in how you form them!

1 c milk
1 egg
2 tbsp. butter (sliced)
3 c all-purpose flour
1/4 c granulated sugar
1 tsp. salt
1 1/2 tsp. active dry yeast

Steps:

  • Make sure to add all of the ingredients in order to your bread machine pan.
  • Measure 1 cup of milk and add the egg. Warm both in the microwave until luke-warm (about 30 seconds). Add to your bread machine pan.
  • Next add the 2 tablespoons of butter - cutting it into pieces.
  • Then add all of the dry ingredients in order: 3 cups flour, ¼ cup sugar, 1 tsp salt and 1 ½ teaspoons of active dry yeast (room temperature).
  • Set the bread machine on the dough/pizza dough setting and press start. (This cycle is about 1 hour and 40 minutes.)
  • Once the bread machine is done, let the dough rise to the top of the bread machine pan.
  • Prepare a baking sheet by greasing it with shortening.
  • Now on to the fun part - forming the buns. Grease your hands with shortening. Take a little more than a golf ball size piece of dough, pinching it off the rest of the dough. Then work the edges and push up in the middle at the same time to make a bump. The center should be smooth. Gather the outer edges in one hand. Squeeze the dough at the bottom with your opposite hand, pinching off the very end.
  • Put it on the pan and flatten it with your hand.
  • Place about 5 or 6 to a pan, depending on the size of the pan.
  • For the remaining dough, prepare sheets of aluminum foil with shortening. Form the rest of the buns.
  • Let the buns rise until they have almost doubled in size.
  • Bake one pan at a time at 350 degrees for about 12 minutes (time may vary depending on your oven). The buns should be golden brown on the top and bottom.
  • Once you remove it from the oven, rub butter on the top of each bun. Enjoy!

3 1/2 - 4 cups bread flour/448-512 grams *see note
1 1/4 cups plus 2 tablespoon - 1 1/2 cups warm water (110-115F degrees) / 308-355 grams *see note
2 Tablespoon sugar
1 packet instant yeast (2 1/4 teaspoon of RedStar Platinum Yeast) / 7 grams
1 teaspoon kosher salt / 6 grams
4 Tablespoon cold butter, cubed *see note

Steps:

  • If using Active Dry Yeast (not the Instant I use) you have to proof the yeast first. Add the Active Dry Yeast, sugar, and 1/4 cup plus 2 Tablespoon of warm water in a bowl of a stand mixer.
  • Using a whisk or spoon, mix and set aside for 5-10 minutes or until the yeast has bubbled quite a bit.
  • In the bowl of a stand mixer fitted with the dough hook (this would be the same bowl your yeast mixture is in) add 2 cups of flour and the remaining cup of water. Start off on low. Mix for 4 minutes.
  • Go to Step 1 of Recipe Continuation and follow the rest of the recipe
  • In the bowl of a stand mixer fitted with the dough hook add in 2 cups of flour, water, sugar, and Instant Yeast. Start off on low. Mix for 4 minutes.
  • Go to Step 1 of Recipe Continuation and follow the rest of the recipe.
  • Add in the salt and 1 cup at a time of the remaining flour and mix for 5-6 minutes until the dough is slack (See note). At this point, your mixer should be at medium speed. If your dough, after 5-6 minutes is not slack add up to 1/4 more cup of water (taking you up to a full 1 1/2 cups used) but add one Tablespoon at a time. The additional water will fully depend on how humid your room is.
  • Add in the butter 1 Tablespoon at a time and mix until almost fully melded in before adding the next Tablespoon. In total, mix for 1-3 minutes or until the dough comes back together and the dough until it pulls completely away from the side and is smooth and shiny. Remove from bowl and transfer to a greased, covered bowl until doubled in size. ~1 hour.
  • Punch the dough down and place it on a very lightly floured board. Divide into 4-8 pieces and shape. I would advise using as little flour as possible when shaping these. The more flour you add, the tougher the hoagies will be. Transfer to a parchment-lined tray and cover with lightly sprayed plastic wrap. Allow to rise again until almost doubled. ~30-45 minutes. Do NOT overproof them otherwise they will fall flat.
  • Preheat the oven to 375 F. If you want to slash your bread, using a lame, make your slashes. If desired, brush with a coating of choice and bake for 16-23 minutes or until golden brown. To ensure doneness, test the internal bread temp. It should be at 200F.

  • Using a dough hook on a mixer, knead for 5 minutes until the dough pulls away from the sides, but still sticks to the bottom, adding a bit of flour as needed (up to 1 to 2 tablespoons). Alternately, you can knead by hand about 8 minutes or use a dough cycle on a bread machine. ****See notes for overnight rise instructions at this point if desired.
  • On a floured surface (I use a tea towel for easy clean up), shape dough by patting into a rectangle the length of the pan, rolling up tightly, and pressing the seam together. Pull the short sides under to create tension on top of the loaf. Place shaped dough into prepared pan.
