SOFT SANDWICH BUNS (DOUGH HOOK MIXER VERSION)
My entire family absolutely loves these buns with sloppy joes. They hold their shape and don't fall apart when combined with the 'juiciness' of the sloppy joes. I'm not going to buy sandwich buns again. They couldn't compare to these.

Steps:
- In a small bowl or liquid measuring cup, whisk together the warm water, yeast and sugar.
- Let sit for 10 minutes or until bubbly -- this is how you know your yeast is working. This step is technically not required when using instant yeast, but I do it always anyways, so that I know my buns will be a success.
- In the bowl of a stand mixer (or a very large bowl if you are kneading by hand), whisk together the 2 cups warm water, butter, 1/3 cup sugar and salt.
- Add the bubbly yeast mixture and stir to combine.
- Place the bowl in the stand mixer and put the dough hook on the machine. You can also knead by hand.
- Add the flour, one cup at a time, and mix until nearly combined before adding more. You can use all purpose or whole wheat or a combination. Start with 4-5 cups flour, mixing until each is incorporated.
- The closer you get to your dough being ready, the less flour you will add at once. We want a smooth, soft dough, never stiff, so we need to watch and stop adding flour at just the right moment.
- Add up to 6-7 cups flour total, very gradually at the end, until the dough comes together in a smooth, soft ball and does not stick to the sides of the stand mixer. When you touch it, it should be smooth and slightly tacky but not sticky.
- Place dough in a large lightly greased bowl (you can use the same bowl and grease it), and cover with plastic wrap or a clean kitchen towel.
- Set in a warm spot (I use the oven with the light on -- turn the oven on to preheat for 2-4 minutes before turning off and adding the dough) and let rise until doubled, about 1.5 hours.
- Uncover dough, punch down, and roll out 20-24 rounds -- smoothing the top and pinching the seam in the back to smooth (see video for additional details).
- Place on a parchment lined baking sheet and let rise (you don't have to cover them) in a warm spot for 30 to 90 minutes (instant yeast will be quicker) until doubled.
- Bake at 350 degrees for 15-20 minutes, until light golden brown.

Steps:
- If using Active Dry Yeast (not the Instant I use) you have to proof the yeast first. Add the Active Dry Yeast, sugar, and 1/4 cup plus 2 Tablespoon of warm water in a bowl of a stand mixer.
- Using a whisk or spoon, mix and set aside for 5-10 minutes or until the yeast has bubbled quite a bit.
- In the bowl of a stand mixer fitted with the dough hook (this would be the same bowl your yeast mixture is in) add 2 cups of flour and the remaining cup of water. Start off on low. Mix for 4 minutes.
- Go to Step 1 of Recipe Continuation and follow the rest of the recipe
- In the bowl of a stand mixer fitted with the dough hook add in 2 cups of flour, water, sugar, and Instant Yeast. Start off on low. Mix for 4 minutes.
- Go to Step 1 of Recipe Continuation and follow the rest of the recipe.
- Add in the salt and 1 cup at a time of the remaining flour and mix for 5-6 minutes until the dough is slack (See note). At this point, your mixer should be at medium speed. If your dough, after 5-6 minutes is not slack add up to 1/4 more cup of water (taking you up to a full 1 1/2 cups used) but add one Tablespoon at a time. The additional water will fully depend on how humid your room is.
- Add in the butter 1 Tablespoon at a time and mix until almost fully melded in before adding the next Tablespoon. In total, mix for 1-3 minutes or until the dough comes back together and the dough until it pulls completely away from the side and is smooth and shiny. Remove from bowl and transfer to a greased, covered bowl until doubled in size. ~1 hour.
- Punch the dough down and place it on a very lightly floured board. Divide into 4-8 pieces and shape. I would advise using as little flour as possible when shaping these. The more flour you add, the tougher the hoagies will be. Transfer to a parchment-lined tray and cover with lightly sprayed plastic wrap. Allow to rise again until almost doubled. ~30-45 minutes. Do NOT overproof them otherwise they will fall flat.
- Preheat the oven to 375 F. If you want to slash your bread, using a lame, make your slashes. If desired, brush with a coating of choice and bake for 16-23 minutes or until golden brown. To ensure doneness, test the internal bread temp. It should be at 200F.
- Allow to cool before cutting with a quality bread knife ( Sani-Safe S162-8SC-PCP 8″ Scalloped Bread Knife with Polypropylene Handle Pan )

- Place the milk, water, butter, salt, sugar, onion powder, 3 tablespoons of dried onion, potato flakes, flour and yeast into the pan of a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press Start.
- When the cycle has completed, remove the dough from the machine, and knead on a lightly floured surface. Cut into 8 equal pieces, and form into balls. Gently flatten the balls until they are 4 inches in diameter. If they keep shrinking back, just let them relax for a minute before flattening. Place on a baking sheet, and cover loosely with a towel. Set in a draft-free place to rise until doubled in size, about 40 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Whisk together the egg white and water in a cup. Brush over the tops of the risen rolls, and sprinkle with remaining minced onion.
- Bake for 15 to 20 minutes in the preheated oven, until golden brown. Cool completely, then slice in half horizontally before using.

- In a large mixing bowl or the bowl of a stand mixer add the flour, sugar, yeast, and salt. Whisk to combine. Add the warm water, oil, and barley malt syrup if using. Mix the ingredients together until you've formed a shaggy dough.
- To make by hand: Turn the dough out onto a clean counter. Knead by hand for 3 minutes. If needed, add a little extra flour (a tablespoon at a time), but expect the dough to start out sticky and get less sticky, turning more tacky, as you knead. Let the dough rest for 5 minutes, then knead an additional 4-5 minutes until you have a smooth and slightly tacky dough. The dough should be soft and a bit bouncy.
- If using a stand mixer: Using the dough hook, knead the dough on low speed for 3 minutes. Let the dough rest for 5 minutes, then turn the stand mixer back on and knead an additional 3 minutes. Turn the dough out onto a clean counter and knead by hand for 1-2 minutes, making any final adjustments to add more flour if needed. The final dough should be soft, bouncy, smooth, and slightly tacky.
- Place the dough into a lightly oiled large mixing bowl and turn to coat the dough in oil. Cover with plastic wrap or a lightly dampened towel and let rise for 1 hour. The dough should be 1 1/2 to 2x risen in volume.

- First you combine 4 cups of flour (I use 3 cups of all purpose flour, 1 cup whole wheat flour), the sugar, salt, and yeast in the bowl of stand mixer (or in a large bowl if you would rather knead by hand)
- Once combined, switch to the dough hook and keep mixing on low. Slowly add in 1-2 cups more flour (I typically only need 1 more cup). It will come together and become less sticky once enough flour has been added.
- Once the flour is stirred in, mix on low for about 7 minutes with the dough hook (or knead for about 10-12 minutes on a lightly floured countertop) until it forms a cohesive smooth ball that is slightly sticky. (See TIP in the notes)

- Combine all of the dough ingredients, and mix and knead — by hand, mixer, or bread machine set on the dough cycle — to make a smooth, supple dough., Transfer the dough to a lightly oiled bowl; cover the bowl with plastic wrap, and set the dough aside to rise until doubled in bulk, 1 1/2 to 3 hours, depending on the warmth of your kitchen., Divide the dough into eight pieces.
- Shape each piece into a smooth ball, and flatten the balls until they're about 4" in diameter, trying to keep the tops of the rolls smooth; the nicer the top looks at this point, the nicer the roll will turn out to be once it's baked., Drape the rolls with lightly greased plastic wrap, and set them aside to rise until they're very puffy, 1 1/2 to 2 hours.
- Towards the end of the rising time, preheat the oven to 350°F., Bake the rolls for 20 to 22 minutes, or until they're golden brown., Remove the rolls from the oven, set them on a rack to cool, and brush them with melted butter, if desired.

- Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. , To make the dough: Mix and knead all of the dough ingredients — by hand, mixer, or bread machine — to make a soft, smooth dough.
- Cover the dough and let it rise until it's nearly doubled in bulk, about 1 to 2 hours., To shape the buns: Gently deflate the dough and divide it into eight pieces (about 100g each); to make smaller or larger buns see "tips," below. Shape each piece into a ball., Flatten each dough ball with the palm of your hand until it's about 3" across.
- Place the buns on a lightly greased or parchment-lined baking sheet. Cover and let rise until noticeably puffy, about an hour. Toward the end of the rising time, preheat the oven to 375°F.
- Brush the buns with about half of the melted butter. To make seeded buns, brush the egg white/water mixture right over the melted butter; it'll make the seeds adhere. Sprinkle buns with the seeds of your choice., To bake the buns: Bake the buns for 15 to 18 minutes, until golden. Remove them from the oven and brush with the remaining melted butter; this will give the buns a satiny, buttery crust. If you've made seeded buns apply the melted butter carefully, to avoid brushing the seeds off the buns., Cool the buns on a rack before slicing in half, horizontally. Use as a base for burgers (beef or plant-based) or any favorite sandwich filling., Storage information: Store leftover buns, well-wrapped, at room temperature for several days; freeze for longer storage.

- In a large mixing bowl combine the warm water, yeast, and sugar. Let stand until yeast is foamy- about five minutes
- Add butter, salt, milk, and egg. (I usually melt the butter in the milk as I heat it, either on the microwave or on the stovetop) Whisk to combine. Add flour one cup at a time stirring until combined.
- Either turn on to a floured surface knead until smooth and no longer sticky, about 6-8 minutes. Or mix in a stand mixer until the dough pulls away almost completely from the sides of the bowl. Resist the urge to add more flour, this dough will be sticky until it is not (sorry that’s the most helpful descriptor I could come up with). I use a kitchenaid and it almost always takes about two minutes longer to pull away from the bowl than I think it should.
- Form the dough into a ball and put in a greased bowl. Cover and let rise until doubled, about an hour.
