EASY SUPER SOFT CINNAMON ROLLS



Easy Super Soft Cinnamon Rolls image

Number Of Ingredients 15

1/4 ounce package yeast
1/2 cup warm water
1/2 cup warm milk
1/4 cup granulated sugar
1/3 cup unsalted butter, melted
1 teaspoon kosher salt
1 large egg
3 to 3 1/2 cups all-purpose flour
1/2 cup melted butter
1/2 cup brown sugar
2 Tablespoons ground cinnamon
3 Tablespoons unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
3 Tablespoons milk

Steps:

  • For the Dough: In a small bowl, dissolve yeast in warm water and set aside.
  • In a large bowl, or the bowl of your stand mixer fitted with the paddle attachment, mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Pour in yeast mixture. Mix in remaining flour, 1/4 cup at a time, until dough is easy to handle. If mixture appears too dry, add 1 tsp. water at a time, mixing well after each addition.
  • Knead dough in your mixer with the dough hook, or by hand on lightly floured surface, for 5 to 10 minutes. Place in a well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.*
  • Once doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle.
  • For the Filling and Baking: Combine melted butter, cinnamon and sugar, spreading all over dough. Beginning at the longest (15 inch) side, roll up dough and pinch edges together to seal. Cut into 12 to 15 slices.
  • Coat a baking pan with nonstick cooking spray and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes.
  • When ready to bake, preheat oven to 350 degrees F. Bake for 20-25 minutes, or until golden brown.
  • For the Glaze: Mix butter, powdered sugar, and vanilla. Whisk in milk 1 tablespoon at a time until the glaze reaches desired consistency. (If you like a thinner consistency glaze, add more milk.) Spread over slightly cooled rolls.

1 teaspoon white sugar
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
½ cup milk
¼ cup white sugar
¼ cup butter
1 teaspoon salt
2 eggs, beaten
4 cups all-purpose flour
¾ cup butter
¾ cup brown sugar
1 cup chopped pecans, divided
¾ cup brown sugar
1 tablespoon ground cinnamon
¼ cup melted butter

Steps:

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

4 cups bread flour

½ teaspoon salt
2 ¼ teaspoons bread machine yeast
½ cup butter, softened
1 cup packed brown sugar
2 teaspoons ground cinnamon
¼ cup chopped walnuts
¼ cup raisins
1 teaspoon milk
1 ½ cups confectioners' sugar
4 tablespoons butter, softened
1 teaspoon vanilla extract

Steps:

  • In a bread machine pan, place the milk, beaten egg, melted butter, water, vanilla pudding mix, bread flour, sugar, salt and yeast in the order recommended by the manufacturer. Select the Dough cycle.
  • When cycle is finished, remove the dough, and knead for 3 to 5 minutes. Roll out to a large rectangle.
  • Mix together the softened butter, brown sugar and cinnamon. Spread over dough. Sprinkle with chopped walnuts and raisins, if desired. Starting with the widest end, roll the dough into a log. Pinch to seal seams. Cut into 1/2 inch to 1 inch slices, and place in a greased 9x13 inch pan. Place in a draft-free space, and allow to rise until doubled.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake for 15 to 20 minutes. To make frosting, mix the milk, confectioners sugar, softened butter and vanilla in a small bowl. Spread over warm cinnamon rolls.

I found this on Allrecipes, posted by Fionasmom, and tried it over the Christmas holidays this year. Everyone agrees it is a winner and pretty easy. You can make the dough the night before and finish making them in the morning.

1 cup milk
1 egg, beaten
4 tablespoons melted butter
4 tablespoons water
0.5 (3 1/2 ounce) package vanilla instant pudding mix
4 cups bread flour
1 tablespoon white sugar
1/2 teaspoon salt
1 package yeast
1/2 cup butter, softened
1 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 cup chopped walnuts (optional)
1/4 cup raisins (optional)
1 teaspoon milk
1 1/2 cups confectioners' sugar
4 tablespoons butter, softened
1 teaspoon vanilla extract

Steps:

  • Combine the 4 tablespoons water, yeast and 1 tablespoon sugar. Allow to proof for about 15 minutes in warm place covered with plastic wrap or a damp towel.
  • Mix remaining wet ingredients for dough in mixer (or by hand). Add yeast mixture. Mix till combined.
  • Switch whisk attachment w/ the dough hook or knead by hand. Slowly mix in the flour with the dough hook, on a low speed. Once flour is more or less blended, knead at a high speed till it forms a sort of ball around the dough hook.
  • Put in large greased and/or lightly floured bowl. Cover & let rise in warm place till doubled in size (about 30-40 minutes- don't leave longer, even not yet doubled).
  • Remove the dough, and knead for 3 to 5 minutes. Roll out to a large rectangle.
  • Mix together the softened butter, brown sugar and cinnamon. Spread over dough. Sprinkle with chopped walnuts and raisins, if desired. Starting with the widest end, roll the dough into a log. Pinch to seal seams. Cut into 1/2 inch to 1 inch slices, and place in a greased 9x13 inch pan. (This is the point where they can be placed in the fridge until morning. If doing so, just place a large pan of boiling water in the oven (near the bottom) and put the pan of rolls in above it. Within 30 minutes or so, they will rise and you will be ready to bake them.) Place in a draft-free space, and allow to rise until doubled.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake for 15 to 20 minutes. To make frosting, mix the milk, confectioners sugar, softened butter and vanilla in a small bowl. Spread over warm cinnamon rolls.
