Easy chocolate chip cookies made with malt milk powder.

115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
90 grams (1/2 cup) brown sugar
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon vanilla extract
1 large egg
210 grams (1 and 1/2 cups) plain flour or all purpose flour
1/2 teaspoon baking soda
35 grams (1/4 cup) malt milk powder
1/4 teaspoon salt
115 grams (3/4 cup) milk or dark chocolate chips, plus extra for decorating

Steps:

  • Line two baking trays with baking or parchment paper. Preheat the oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
  • In a large mixing bowl, beat the butter and sugars using an electric mixer for 1-2 minutes on medium speed until pale and creamy.
  • Add vanilla and egg and beat until combined. Sift in flour, baking soda, malt powder and salt and mix to combine. Add chocolate chips.
  • Use a cookie scoop to roll balls of dough (roughly 1.5 tablespoons each) in your hands and place them onto your prepared trays, leaving room for the cookies to spread out.
  • Bake for approximately 11-12 minutes or until golden brown on the edges. Press a few extra chocolate chips on top. Carefully transfer to a wire rack to cool completely.

2 cups (250g) plain/all-purpose flour
1/2 cup (65g) malted milk powder
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cornflour/cornstarch
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, melted
1/2 cup (100g) caster/granulated sugar
1/4 cup (50g) light brown sugar
1 large egg
2 teaspoons vanilla extract
1 cup Maltesers/Whoppers, chopped
1/2 cup (90g) chocolate chips, and some extra for topping

Steps:

  • Preheat the oven to 180C/350F/Gas 4, and line a baking tray with parchment paper, or a silicone mat. Set aside.
  • Whisk together the flour, malted milk powder, baking powder, cornflour, baking soda, and salt. Set aside.
  • Whisk together the butter and sugars until combined. Add the egg, and vanilla, and mix until combined. Add the dry ingredients, and mix until just combined. Fold in the chocolate chips and malted milk balls.
  • Roll the dough into 1.5oz balls, place on the prepared baking tray, and press the extra chocolate chips on top. Bake for 10 - 12 minutes. Do not over-bake.
  • Allow to cool on the baking tray for 5 - 10 minutes before transferring to a wire rack to cool completely.

½ cup malted milk powder

1¼ tsp kosher salt
2 tsp cornstarch
1 cup butter, melted
1½ cups light brown sugar

1 Tbsp vanilla

Steps:

  • Cream together the butter and brown sugar. Add in the eggs and vanilla.
  • Gradually stir in the flour, malted milk powder, baking powder, salt, and cornstarch until just combined.
  • Fold in chocolate chips.
  • Refrigerate dough for at least two hours.
  • Preheat oven to 350°
  • Line baking sheet with Silpat sheet.
  • Roll dough into balls and bake for 11-12 minutes.

2 1/2 cups flour
1/2 cup malted milk powder
1 tsp baking powder
1 1/4 tsp kosher salt
2 tsp cornstarch
1 cup butter, melted
1 1/2 cups light brown sugar
2 eggs
1 Tbsp vanilla
2 cups chocolate chips, (optional ~ plus 1 more cup for pressing into tops of cookies)

Steps:

  • Whisk flour, malted milk powder, baking powder, salt and cornstarch together. Set aside.
  • Melt butter in a small saucepan over medium low heat. Remove from heat.
  • In large mixing bowl combine the butter and brown sugar, using wooden spoon or mixer set on lowest setting.
  • Stir in eggs and vanilla with mixer still on lowest setting until combined.
  • Stir in dry ingredients until evenly incorporated.
  • Fold in chocolate chips.
  • Chill dough for 2 hours or up to 3 days.
  • Preheat oven to 350°
  • Line baking sheet with parchment paper.
  • Scoop approximately 2 Tbsp of dough and form into a ball. Place dough 3 inches apart on lined baking sheet. Press additional chocolate chips into the top of the dough balls if desired.
  • Bake for 11-12 minutes until the edges golden. Don't over-bake.
  • Allow to cool on baking sheet for 3 minutes and then transfer to a wire rack to continue cooling.

2 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.

3/4 cup golden brown sugar
3/4 cup granulated sugar
2 whole eggs
2 teaspoons vanilla extract
1/2 cup (rounded) malted milk powder
2 cups all-purpose flour
1 1/4 teaspoon baking soda
1 1/4 teaspoon salt
One 12-ounce bag milk chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter, then add both sugars and cream until fluffy. Add the eggs and beat slightly, then add the vanilla and beat until combined. Add the malted milk powder and beat until combined.
  • In a separate bowl, sift together the flour, baking soda and salt. Add to the butter mixture, beating gently until just combined. Add the chocolate chips and stir in gently.
  • Drop by teaspoonfuls (or use a cookie scoop) on an ungreased baking sheet, leaving plenty of space between the cookies (they spread out quite a bit). Bake for 9 to 11 minutes. The cookies will be very flat and very chewy. Allow to cool slightly before removing from pan with a spatula.
  • Optional: Allow to cool completely, then use 2 cookies to make an ice cream sandwich. Add sprinkles to the sides of the ice cream, then wrap individually in plastic wrap.

1 ⅔ cups all purpose flour
½ teaspoon baking soda
½ teaspoon kosher salt
1 tablespoon cornstarch
¼ cup malted milk powder
½ cup chilled unsalted butter (cut into pieces)
½ cup packed brown sugar (light or dark) (it should be fresh and soft)
¼ cup granulated sugar
1 large egg (cold, straight from the fridge)
1 teaspoons pure vanilla extract
½ cup milk chocolate chips (plus more for topping, if desired)
½ cup chopped malted milk balls (Whoppers or Robin Eggs)
flaky sea salt (for garnish, optional)

Steps:

  • Preheat oven to 350°F with racks in the middle-upper and middle-lower portions. Line two baking sheets with parchment paper.
  • Combine flour, baking soda, salt, cornstarch, and malted milk powder. Set aside.
  • Using a stand mixer fitted with the paddle attachment (preferred) or a hand mixer, beat butter, brown sugar, and granulated sugar until combined (about a minute or two). Because the butter is cold it won't look as soft and creamy as you might be used to, that's ok, keep beating it. Add egg and vanilla, beating until combined and scraping the sides and bottom of the bowl as needed. Beat in the flour mixture until fully combined. Add the chocolate chips and malted milk balls, mixing until combined (I mix them in by hand with a wooden spoon).
  • Scoop the dough into generous 2-tablespoon portions and form into tall balls. Balls should be a bit taller than wider (see photo). This makes thicker cookies. Place on the lined baking sheets with several inches in between each dough ball. If desired, you can press a few chocolate chunks/chips onto the top of each dough ball.
  • Bake*** for 9-11 minutes, until the edges are just beginning to set and the centers are still underdone. The cookies should be so soft that if you tried to pick them up off the baking sheet they would fall apart. Place the baking sheets on cooling racks and cool completely, they will firm up as they cool. See recipe notes regarding optional step of shaping the cookies after baking. If desired, sprinkle the tops of the cookies with flaky sea salt.
