Goat's cheese, pear & candied pecan salad image

This extra-special vegetarian starter is bursting with contrasting flavours and textures, such as spiralized pear, crunchy roasted nuts and creamy cheese

Provided by James Martin

Categories     Starter

Time 30m

Number Of Ingredients 9

100g pecans
2 tbsp soft brown sugar
1 tbsp maple syrup
2 red-skinned pears , cut into long, thin strips (use a spiralizer, or julienne them)
100g wild rocket
4 x 35g rounds of goat's cheese
1 tsp mustard powder
2 tbsp white wine vinegar
4 tbsp extra virgin olive oil

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put the pecans on a non-stick baking sheet. Sprinkle over the sugar and maple syrup, and toss to combine. Roast for 5-7 mins until golden, then leave to cool completely before roughly chopping.
  • Meanwhile, make the dressing by combining the ingredients and seasoning well. In a large bowl, combine the pear with the rocket, and toss with a little of the dressing.
  • Just before serving, blowtorch or grill the goat's cheese rounds until golden. To serve, put the remaining dressing in a squeezy bottle and swirl around the edge of the plate. Put the pear and rocket salad in the middle, scatter over the nuts and top with the goat's cheese.

Mesclun Salad with Goat Cheese, Maple-Glazed Pecans and Maple Dijon Vinaigrette image

This is the perfect fall salad for entertaining. The dressing has that savory-sweet flavor combo that everyone loves.

Provided by Jennifer Segal, adapted from The Washington Post

Categories     Salads

Yield 6

Number Of Ingredients 13

1 cup (4 ounces) pecan halves
2 tablespoons real maple syrup
Pinch salt
1 small garlic clove, minced
1 tablespoon finely chopped shallots
¼ teaspoon salt
¼ teaspoon ground black pepper
1½ tablespoons real maple syrup
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
6 tablespoons vegetable oil
10 cups mesclun greens (or favorite mixed greens such as green or red leaf, boston, bibb, or romaine)
3 ounces goat cheese (or blue cheese), crumbled

Steps:

  • Preheat the oven to 375 degrees. Lightly oil or line 2 baking sheets with parchment paper. In a small bowl, combine the pecans and maple syrup and toss gently to combine. Spread the pecans in a single layer on one of the prepared baking sheets. Roast in the preheated oven, stirring once, until the syrup is bubbling vigorously, about 5 minutes. Immediately scrape the glazed pecans onto the other prepared baking sheet, spreading them in a single layer. Sprinkle with a pinch of salt and set aside to cool.
  • In a small bowl, whisk together the garlic, shallots, salt, pepper, maple syrup, mustard and vinegar. Whisking constantly, slowly add the oil in a steady stream. (Alternatively, add all your ingredients to a jar, cover with lid, and shake vigorously to blend.) Set aside.
  • Place the greens in a large bowl, drizzle with about half of the vinaigrette and toss to combine. Add as much of the remaining vinaigrette as desired and toss again. Divide among individual plates, sprinkle with the cheese and reserved pecans and serve immediately.

  • TO ASSEMBLE SALAD 1. Toss spring mix with 2/3 cup blackberry vinaigrette.vOn each individual salad plate place: - 2 cups spring mix - 2 goat cheese medallions (place near center) - Approx. 6 fresh blackberries - 1 Tablespoon sliced dates - 1 heaping Tablespoon spicy sugared pecans - Add another drizzle of vinaigrette if needed.
  • For Goat Cheese Medallions 1. Cut goat cheese into ½ inch medallions (1 ounce each). Easiest to use dental floss to cut: place floss under log, then pull floss up each side and cross strands over top of log, and pull. This will easily cut the goat cheese without pressing down on it like a knife would. 2. Gently dip goat cheese medallion into beaten egg whites. Shake off excess egg and place in bowl of panko bread crumbs to coat. 3. Melt 2 Tablespoons butter in medium frying pan on medium heat. Fry crumb covered medallions on each side just until crisp (about 1 minute per side.) 4. Place on paper towel covered plate to absorb any excess grease. Serve quickly while cheese is still warm.
  • For Spicy Sugared Pecans 1. Pre heat oven to 400 degrees. 2. You can leave them in halves, or chop pecan halves lightly if desired. 3. Place pecan halves in metal baking pan and sprinkle with brown sugar and pepper. 4. Place pan in oven and toast pecans just until sugar melts (about 5 minutes). Stir once during baking. Watch carefully so sugar doesn’t burn. 5. Pour onto aluminum foil sprayed lightly with cooking spray to cool.
  • For Blackberry Vinaigrette 1. Rinse blackberries; measure and place in blender. 2. Chop red onion, measure. 3. Measure all other ingredients and add to blender. 4. Blend until smooth. 5. Place in tightly sealed container and refrigerate until ready to use. Dressing will stay fresh in refrigerator one week. Shake before serving.
