SOFT & FLUFFY BANANA COOKIES
These soft & fluffy banana cookies are the perfect way to use up very ripe bananas - or the ones that you have stored in your freezer for baking!

Steps:
- Preheat your oven to 350 °F. Line your cookie sheets with parchment paper and set aside.
- Whisk the flour, baking powder, salt, nutmeg and baking soda together in a medium bowl, then set aside.
- Cream the butter with the sugars until it is light and fluffy.
- Beat in the eggs, one at a time, making sure each is incorporated thoroughly
- Stir in the vanilla and the mashed bananas.
- Add the flour mixture to the banana mixture slowly and mix until just combined.
- Stir in the raisins or the chocolate chips.
- Drop by tablespoonfuls onto prepared cookie sheets.
- Bake in the preheated oven for 12 to 13 minutes. The bottoms brown faster than the tops, so watch the bottoms first!

SOFT BANANA, CEREAL & WALNUT COOKIES
This is an adaptation of other recipes I've found online when I was looking for a way to use some very ripe bananas. They come out soft with just a bit of crunch from the walnut and cereal. Low fat is an added bonus.

Steps:
- Preheat the oven to 375.
- Mix the flour, sugar, salt, baking soda, cinnamon and nutmeg in a large bowl.
- Mix in the applesauce.
- Mash the bananas in a separate bowl and crush enough cereal to make 4 cups of the smaller pieces (this means a lot more than 4 cups of the whole flake cereal). Add the bananas, cereal and eggs to the large bowl and mix well to combine fully with other ingredients.
- Add the walnuts and fold through the dough. The dough will be very soft but should not be runny.
- Spoon onto greased cookie sheets using a tablespoon. They do not spread much and I suggest a nice big cookie that is thick in the middle.
- My oven bakes fast so I baked them for 7 minutes, turned the cookie sheet around and baked them another 3 minutes and they came out perfectly!
- Cool on wire racks and enjoy!

SOFT BANANA COOKIES WITH SPLENDA SUGAR BLEND BY KIM
This recipe produces soft, cookies that taste even better the next day. This is a great recipe to use for family functions or just to use up your browning bananas. A half cup of chocolate chips or walnuts make great additions. If you are skeptical that these taste great with Splenda (you can't even tell), then add 1/2 cup of sugar in place of the Sugar Blend. These cookies will be a hit.

- Preheat oven to 350 degrees.
- In a large bowl, stir applesauce, Splenda Sugar Blend, and brown sugar.
- Add in the bananas, walnuts, egg whites, and vanilla.
- In another bowl, mix the flour, baking powder, baking soda, and salt.
- Stir flour mixture into the sugar mixture and blend well.
- Scoop batter onto cooking sheet sprayed with Pam. Space cookies about 3 inches apart using a spoon.
- Bake for 10 minutes at 350 degrees.
- Cool on a wire rack.
- Let the cookies cool and coat with your favorite icing, glaze, confectioners sugar, or leave them plain. They're just as tasty without any icing.

- Preheat oven to 400 degrees Fahrenheit.
- Combine soy flour, wheat gluten, salt, baking soda, and ground cinnamon in a large mixing bowl. Add oatmeal and chopped walnuts.
- In a separate container, beat or mix Egg Beaters, butter, and brown sugar substitute until smooth.
- Cut banana into 1-inch pieces, and add banana and vanilla extract to the butter mix. Beat until smooth.
- Add liquid mix to the dry ingredients and mix with a spatula until even. Batter will be somewhat stiff.
- Drop in walnut-sized pieces on two greased baking pans. Bake for 8-10 minutes.
