SOFRITAS BURRITO BOWL RECIPE BY TASTY
Popularized by Chipotle, this protein-packed alternative to meat comes together with a medley of spices and soy sauce. Simply break apart your favorite extra firm tofu, mix in soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne, and cook until browned. Steps:
- In a large saucepan, heat the olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook until semi-translucent, 3-4 minutes.
- Use your hands to crumble the tofu into the pan, then use a spatula to continue to break apart while cooking for 3-4 minutes, until slightly browned.
- Add the soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne. Continue to cook and break the tofu apart until browned and crumbly.
- To assemble, spread brown rice on the bottom of a bowl, then layer on lettuce, black beans, corn, tofu sofritas, pico de gallo, guacamole, and onions.
- Serve topped with cilantro.

WEEKDAY MEAL-PREP CHICKEN BURRITO BOWLS RECIPE BY TASTY
Here's what you need: boneless, skinless chicken breasts, bell peppers, large red onion, olive oil, taco seasoning, salt, pepper, salsa, brown rice, black beans, corn, shredded cheddar cheese, lime, fresh cilantro

Steps:
- Preheat oven to 400˚F (200˚C).
- Line a baking sheet with foil.
- Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil.
- Sprinkle the taco seasoning evenly over both sides of the chicken breasts.
- Sprinkle salt and pepper on the bell peppers and onions, tossing to coat.
- Top each chicken breast with a generous pour of salsa.
- Bake in a preheated oven for 25 minutes.
- Rest chicken for 10 minutes, before slicing into strips.
- Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked bell peppers, and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge.
- Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.

- Prepare the Tofu:Preheat the oven to 350F (180C). Slice the pressed/drained tofu into (about) 1" (2.5cm) cubes and place on a parchment or silpat lined sheet pan. Bake for about 20 minutes or until the tofu is lightly golden. Some crispy edges is ok. This will dry the tofu out.
- Make the Sofritas: In a large saute pan, add the oil and heat on high heat until it shimmers. Keeping the heat on high and adjusting as needed, add the poblano, bell pepper and onion. Saute, stirring/tossing/flipping only occasionally for about 8-9 minutes. Charring is good!
- To the veggie mixture add the cumin, chili powder, and garlic. Stir to coat the veggies, then add the tomato paste, adobo sauce, chipotle chili (if using), fire roasted tomatoes, vegetable broth, and baked tofu. Stir and bring to a simmer. Stir, lid and simmer on medium-low for about 12-15 minutes.
- Once the sofritas are done braising, spoon them into a food processor and either pulse for chunky sofrias, or process with longer pulses until the sofritas are of the desired consistency, stopping a few times to scrape the bowl down.
