LOW SODIUM ARTISAN BREAD
Steps:
- In a large bowl, whisk all the dry ingredients together. Stir in water until the mixture forms a shaggy but cohesive dough. Do not over-work the dough. The less you "work" it, the more little air pockets will form.
- Turn dough ball coating outside in olive oil and cover bowl with towel or grocery bag.
- Let dough sit at room temperature for anywhere from 8-24 hours. Dough should have bubbles visible and rise a bit. This does not seem to really rise that much so don't expect it to "double".
- When you decide the dough is ready, preheat oven to 450 degrees F. Put your Dutch oven, uncovered, (I put the lid on the shelf below) into the preheated oven for at least 30 minutes.
- As your Dutch oven preheats, turn dough onto a floured surface and with floured hands, form the dough into a uniform ball. Cover dough with previous bowl cover to keep moist and let rest as oven heats.
- After the 30 minutes are up, carefully remove Dutch oven. With floured hands, place the bread dough into it and cover. (I just slide rack out with pot and place dough in.)
- Bake for 30 minutes covered. Carefully remove cover and bake for about 5-10 minutes more, uncovered. Ovens are different so keep your eye on it for your desired golden brown.
- Remove bread to a cutting board and slice as needed with a bread knife.

LOW SODIUM WHITE BREAD - MACHINE RECIPE
My weekly made low sodium homemade white sandwich bread that always turns out with bakery fresh bread flavor, soft on the inside and a flaky crust outside.

Steps:
- Whisk measured dry ingredients together except for yeast.
- Add water and oil into the bread pan. Add whisked dry ingredients except for yeast.
- Make a small divot on top of flour in the middle and add the yeast to the indentation.
- Add ½ slice of the Tablespoon of no salt butter on top of flour in two corners of the pan.
- Insert the bread pan into the bread machine, press or twist to lock pan in place. Close the lid.
- Use Basic bread, 1.5 lb loaf, medium crust cycle (3 hrs 15 minutes)
- When bread is done, remove the bread pan using oven mitts. Turn bread pan upside down and shake it to release the loaf.
- Let bread loaf cool on a wire rack for about 30 minutes before slicing.

- Combine water and sugar, dissolve sugar.
- Add yeast to sugar water.
- Put flour, yeast mixture and olive oil into breadmaker.
- Start the breadmaker, with a plain or French loaf setting on your machine.
- When ingredients are almost completely combined (about 5 minutes in), add egg white.
- Allow breadmaker to complete baking.

Steps:
- Put water in large bowl. Add oil and sugar, then yeast. Mix in a little flour and let stand a few minutes until bubbles start to form. Stir in flour (may use mixer) until thick batter. Then add flour slowly until dough starts to come from sides of bowl.
- Turn onto floured surface, round into ball. Cover with bowl. Let stand 10 minutes. Knead, adding flour if necessary so it isn't sticky. Dough should feel smooth and soft.
- Put into well oiled bowl. Turn so it is covered with oil. Cover with towel. Should double in size in about half hour or a little more. Punch down and divide into 2 loaves.
- Put into well oiled or sprayed 9 5/8 x 5 1/2 x 2 3/4 inch pans. Oil tops, let rise until doubled in size. Set in oven. Turn heat to 350 degrees. Bake about an hour or until loaves are brown on top and pull away from sides of pan. Put on rack to cool. Makes excellent toast. If cut into 16 slices, 97 calories per slice.
