Steps:
- Place bottom pastry in a 9-in. pie plate. Layer crackers in shell; set aside. In a small saucepan, combine remaining ingredients; bring to a boil. Carefully pour over crackers (filling will be very thin). Cool for 10 minutes. Cut lattice strips from remaining pastry; place over filling. Seal and flute edges. Bake at 400° for 25-20 minutes or until golden brown.

MOCK APPLE PIE III
I remember my mother baking this when I was young. She kept my dad guessing for awhile on this one. A good stand-in for the real thing. May use lemon juice instead of cider vinegar.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Arrange crackers in pastry-lined pie pan and set aside.
- In medium saucepan, combine water, sugar, and cream of tartar. Stir well and bring to a boil. Reduce heat and simmer for 15 minutes. Remove from heat. Stir in vinegar.
- Cool sugar mixture, then pour over crackers. Dot crackers with butter and sprinkle with cinnamon. Cover with second pastry shell. Seal edges and cut steam vents in top.
- Bake in preheated oven for 30 minutes or until crust is golden brown. Cool and serve with ice cream or whipped cream if desired.

MOCK APPLE PIE II
Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a saucepan, combine sugar, water, butter, cream of tartar and cinnamon. Bring to a boil, and continue to boil for 2 minutes.
- Break 16 (double) soda crackers into pie shell. Pour hot syrup over.
- Add top crust, seal and flute edges. Bake at 425 degrees F (220 degrees C) for 30 to 35 minutes.

- Pour over whole crackers and stir lightly.
- our into unbaked pie crusts.
- Sprinkle cinnamon on top of the pie mix.
- Also, dab small dots of butter on top.
- Cover with a top crust.
- Bake at 350 for 40 minutes.

Steps:
- 1. Boil all of the ingredients for 5 minutes ; EXCEPT for the crackers ; Let cool.
- 2. Make a regular pie crust as you would for an apple pie.
- 3. Break up crackers and place in the bottom of the pie crust.
- 4. Pour the first ingredients over top of the crackers ; dot with butter.
- 5. Add top pie crust ; Sprinkle with sugar.
- 6. Bake @ 350° till golden brown.

- Roll out 1 crust on lightly floured surface to 11-inch circle; place in 9-inch pie plate. Place cracker crumbs in crust. Pour sugar syrup over crumbs; top with butter and cinnamon.
