Pour chocolate over salty crackers for Trisha Yearwood's Sweet and Saltines recipe from Trisha's Southern Kitchen on Food Network

35 to 40 saltine crackers
2 sticks (1 cup) butter
1 cup light brown sugar
8 ounces semisweet chocolate chips (about 1 1/3 cups)

Steps:

  • Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer. In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the jelly-roll pan into the oven and bake for 3 to 5 minutes, or until just bubbly, watching carefully. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. Transfer the pan to the freezer for 15 to 20 minutes, or until completely cold. They will form one big sheet. Break up into pieces. Store in an airtight container.

1 (10 ounce) package saltine crackers
1 ½ cups butter
1 ½ cups packed brown sugar
2 (12 ounce) packages semisweet chocolate chips
2 cups chopped almonds

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 10x15 inch cookie sheet with aluminum foil.
  • Place crackers in a singe layer over prepared cookie sheet. Use more or fewer crackers as needed to cover the bottom of your pan.
  • In a small saucepan over low heat combine butter and brown sugar; bring to a boil. Boil for 3 minutes; pour over crackers.
  • Bake in preheated oven for 5 minutes. Sprinkle chocolate chips evenly over the top. Sprinkle almonds over chocolate chips; using the back of a wooden spoon, press nuts into chocolate.
  • Chill in refrigerator for at least 3 hours, or until set. Break into pieces and store, sealed, in refrigerator.

35 to 40 soda crackers
1 cup butter, cubed
1 cup packed brown sugar
1-1/2 cups semisweet chocolate chips
1-1/2 cups coarsely chopped walnuts

Steps:

  • Line a 15x10x1-in. baking pan with foil and coat with cooking spray. Place crackers in rows on foil. In a saucepan, melt butter; add the brown sugar and bring to a boil. Boil for 3 minutes. Pour over crackers and spread until completely covered. Bake at 350° for 5 minutes (crackers will float). Remove from the oven. Turn oven off. Sprinkle chocolate chips and walnuts over crackers. Return to the oven until chocolate is melted, about 3-5 minutes. Remove from the oven; using a greased spatula, press walnuts into chocolate. Cut into 1 in. squares while warm. Cool completely; remove candy from foil.

1/4 lb saltine crackers (one tube)
3/4 cup peanut butter (I like crunchy)
3 cups sugar
1 cup milk

Steps:

  • Crumble crackers into a mixing bowl.
  • Stir in peanut butter.
  • Combine sugar and milk in small saucepan.
  • Bring to boil and boil for about five minutes, stirring constantly.
  • Remove from heat and pour mixture over crackers.
  • Mix with electric mixer until smooth. (if not completely smooth, it will be like pieces of peanut).
  • Pour into buttered 8x8 pan.
  • Cut into 1" squares when set.
  • Pack into a tightly covered container, separating the layers of pieces by waxed paper and refrigerate.

HOMEMADE SODA CRACKERS



Homemade Soda Crackers image

2 teaspoons active dry yeast
2/3 cup warm water
1 1/2 cups all-purpose flour, plus more as needed
1/2 teaspoon salt
1/2 teaspoon baking soda
Kosher salt
2 tablespoons butter, melted, plus more for greasing bowl

Steps:

  • Try Chuck's homemade soda crackers and you'll never go back to the store-bought ones.
  • In a small bowl, sprinkle the yeast over the warm water; stir to dissolve and let stand for 5 minutes.
  • In a large bowl, mix the flour, salt and baking soda. Add the yeast mixture and stir vigorously with a wooden spoon to blend. If the dough is sticky, add sprinkles of flour until a soft dough forms.
  • Knead the dough until it is soft and has an elastic consistency, about 5 minutes. Add sprinkles of flour to control the stickiness. If using a mixer or a food processor, the dough will form a soft ball around the revolving dough hook and clean the sides of the bowl. Add flour, if necessary, to firm up the dough.
  • Drop the dough into a buttered bowl, cover with plastic wrap and place in the refrigerator to rest for at least 1 hour and up to 18 hours (the longer the better.)
  • Arrange the rack in the middle of the oven and preheat to 425 degrees F. Line a baking sheet with parchment paper.
  • With a heavy rolling pin, roll the dough into a rectangle about 18 by 6 inches and no thicker than 1/8-inch. Fold the dough from the short ends, brushing off the excess flour, to make 3 layers for extra flaky crackers. Roll again using the rolling pin.
  • Prick the dough with the tines of a fork to help cook evenly. Evenly cut the dough along the edge of a ruler or yardstick with a pizza or cookie cutter into desired shapes.
  • Place the crackers close together on the prepared baking sheet. Sprinkle lightly with salt from 12-inches above the crackers to distribute evenly.
  • Bake until lightly browned and crisp, 15 to 20 minutes, depending on the thickness of the crackers. Check the crackers several times during the baking period to make certain those on the outer edge of the baking sheet are not getting too brown. If so, switch the ones on the outside with the ones in the middle.
  • Remove from the oven and brush the crackers with melted butter. Let cool on a metal rack.

EASY PEANUT BUTTER FUDGE WITH SALTINES!



Easy Peanut Butter Fudge with Saltines! image

2 c sugar
2 Tbsp butter
1/2 c milk
1 c peanut butter
1 sleeve saltines, crushed
note: a sleeve is equal to 30 crackers or 4 ounces
1 tsp vanilla extract

Steps:

  • 1. Place the sugar, butter and milk in a saucepan and heat on medium until it starts to boil. Stir occassionally. Once it starts to boil, boil for 1 minute only and remove from heat. Be very careful as the liquid will be extremely hot. If it is lukewarm you didn't bring it to a boil.
  • 2. Stir in peanut butter, saltines and vanilla. Mix well. Pour into a greased 8 x 8 pan and chill. Cut into bite size pieces.
  • 3. Note: To crush the saltines just stick them in a plastic storage bag and roll a rolling pin over them. The key word here is crushed. You want them fine not in junks. Additional Note: you can add choc. chips during the second stage also. Others have tried this recipe using different butters as in almond butter and nutella. Have fun with it. It is a very versatile recipe.

  • Coat the sides of a heavy medium saucepan with non-stick cooking spray. Add the sugar and evaporated milk and cook, stirring, over MEDIUM-HIGH until mixture boils. Boil for 1 minute. Remove from heat. Add crackers, peanut butter, and vanilla, stirring until peanut butter is melted. Let stand, without stirring, for 30 minutes.
  • Using a wooden spoon, beat vigorously until fudge becomes very thick and just starts to lose its gloss (about 4 to 5 minutes). Immediately spread fudge into prepared pan.
  • Melt chocolate chips in a double boiler or a small, heavy saucepan over MEDIUM-LOW heat, stirring often. Pour over fudge and spread out evenly with an offset spatula. Sprinkle with chopped peanuts.
