SODA CRACKER BARS
This is my recipe for soda cracker bars. It is almost like some of the others posted except I use chocolate and butterscotch chips for the topping. I love the combination of them with the butter crunch toffee piece. I hope you enjoy them as much as we do.

Steps:
- Line a jelly roll pan with aluminum foil.
- Spread with cracker crumbs.
- Boil butter and sugar for 3 minutes.
- Spread over the crackers.
- Bake for 5 minutes at 400.
- Spread chips on top carefully,
- As they melt, spread.
- Enjoy.

SALTINE CRACKER CRUNCH
This is an old favorite of mine. I was going thru some of my recipes and found this one and decided to post.

Steps:
- Combine sugar, milk and butter in a large saucepan, bring to full boil over moderate heat, stirring constantly.
- Boil for 5 minutes, remove from heat and add peanut butter, coconut, crackers and vanilla. Stir until well mixed.
- Pour the mixture into a buttered pan, 9 x 9 inches.
- Cut into squares. Makes about 2 1/2 pounds.

OLD-FASHIONED SODA CRACKERS
When I was in Mexico, one of the silliest but best things I remember eating, were homemade soda crackers that were served with our meal. They were still warm right out of the oven, and heavenly. We had them in a quaint little restaurant in a village called Taxco. These are just like them! It makes a lot, but you won't believe how quickly you'll go through them!!

Steps:
- In large bowl, combine flour, baking soda and salt.
- Cut in butter til crumbly.
- Add water, stir just until mixed.
- Turn dough out onto lightly floured surface and knead til thoroughly mixed. About 3 minutes.
- Roll out dough, a fourth at a time, on well-floured surface to 1/8" thickness.
- Cut into 2" squares.
- Place 1" apart on ungreased cookie sheets.
- Prick 2 or 3 times with a fork, then sprinkle with salt.
- Bake in preheated 350º oven for 20-25 minutes or til lightly browned.

BEST TOFFEE EVER - SUPER EASY
Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Steps:
- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
- Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

SALTINE TOFFEE THAT'S SIMPLY IRRESISTIBLE (CHRISTMAS CRACK RECIPE)

- Preheat oven to 400 degrees F. Line cookie sheet with parchment paper or Silpat mat. Place Saltine crackers on the pan and make sure they are touching and the parchment extends past the crackers.
- Combine sugar and butter in a medium saucepan and bring to a boil. Let boil for 3 minutes. Pour immediately over Saltine crackers making sure all the crackers are completely covered.
