This is my recipe for soda cracker bars. It is almost like some of the others posted except I use chocolate and butterscotch chips for the topping. I love the combination of them with the butter crunch toffee piece. I hope you enjoy them as much as we do.

1 cup butter
1 cup brown sugar
35 soda crackers
6 ounces chocolate chips
6 ounces butterscotch chips

Steps:

  • Line a jelly roll pan with aluminum foil.
  • Spread with cracker crumbs.
  • Boil butter and sugar for 3 minutes.
  • Spread over the crackers.
  • Bake for 5 minutes at 400.
  • Spread chips on top carefully,
  • As they melt, spread.
  • Enjoy.

SALTINE TOFFEE COOKIES

This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
¾ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Line cookie sheet with saltine crackers in single layer.
  • In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
  • Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

These taste almost like Score Chocolate bars and you would never know you are eating soda crackers! I was skeptical the first time I tried it but it's really true; they taste just like a Score Chocolate bar!!

40 soda crackers, Salted or unsalted (Turned the right way 40 will fit on a cookie sheet)
3/4 cup granulated sugar
1 cup butter, no substitutes (I've used a 50/50 butter-marg blend and it worked)
1 (345 g) package semi-sweet chocolate chips (I've used milk chocolate, mint, semi-sweet and all different amounts, sometimes more, sometimes less)

Steps:

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with aluminum foil and place whole crackers on sheet.
  • Melt butter and sugar in saucepan over medium-high heat.
  • Heat to boiling; boil until sugar is completely dissolved. Spread over crackers.
  • Bake for 10 minutes.
  • Remove from oven and immediately sprinkle with chocolate chips; let stand for 3-5 minutes.
  • Using paint brush/barbeque brush/silicone brush or even the back of a spoon, spread melted chocolate over baked crackers.
  • You can sprinkle coloured sugar crystals on top or whatever you want, red & green for Christmas, orange for Halloween, etc.
  • Cool in fridge until hard.
  • Break into chunks or cut into squares.

24 regular salted soda crackers
1 cup butter
1 cup brown sugar
1 cup semi-sweet chocolate chips

Steps:

  • Preheat ove to 350. Line a 13 x9 inch pan with Parchment paper for easy clean up. Arrange crackers evenly in pan.
  • In saucepan over medium heat melt butter. Stir in brown sugar until melted and smooth. Bring mixture to a boil stirring constantly until mixture is smooth and bubbly. Boil for 2 minutes and then pour mixture evenly over cracker.
  • Bake in oven for 5 minutes.
  • Sprinkle chocolate pieces evenly over caramel mixture. Return to oven just long enough for chocolate to melt. Spread chocolate evenly with spatula.
  • Place pan in refrigerator or freezer until chocolate is firm. Cut or break into pieces.
  • Cooking time is cooling time.

35 to 40 soda crackers
1 cup butter, cubed
1 cup packed brown sugar
1-1/2 cups semisweet chocolate chips
1-1/2 cups coarsely chopped walnuts

Steps:

  • Line a 15x10x1-in. baking pan with foil and coat with cooking spray. Place crackers in rows on foil. In a saucepan, melt butter; add the brown sugar and bring to a boil. Boil for 3 minutes. Pour over crackers and spread until completely covered. Bake at 350° for 5 minutes (crackers will float). Remove from the oven. Turn oven off. Sprinkle chocolate chips and walnuts over crackers. Return to the oven until chocolate is melted, about 3-5 minutes. Remove from the oven; using a greased spatula, press walnuts into chocolate. Cut into 1 in. squares while warm. Cool completely; remove candy from foil.

When I was in Mexico, one of the silliest but best things I remember eating, were homemade soda crackers that were served with our meal. They were still warm right out of the oven, and heavenly. We had them in a quaint little restaurant in a village called Taxco. These are just like them! It makes a lot, but you won't believe how quickly you'll go through them!!

4 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold butter, can sub butter-flavored crisco
1 1/2 cups water
salt

Steps:

  • In large bowl, combine flour, baking soda and salt.
  • Cut in butter til crumbly.
  • Add water, stir just until mixed.
  • Turn dough out onto lightly floured surface and knead til thoroughly mixed. About 3 minutes.
  • Roll out dough, a fourth at a time, on well-floured surface to 1/8" thickness.
  • Cut into 2" squares.
  • Place 1" apart on ungreased cookie sheets.
  • Prick 2 or 3 times with a fork, then sprinkle with salt.
  • Bake in preheated 350º oven for 20-25 minutes or til lightly browned.

  • Prepare 13x9 pan with liner and non-stick spray. Again, I used foil but it wasn't my favorite. You could also use wax or parchment paper.
  • To make the caramel, add condensed milk, milk, butter and brown sugar to a large saucepan on medium heat. YOU MUST STIR THE ENTIRE TIME. Once combined, increase heat slightly and boil for 5 minutes. Be careful, it's really hot and bubbly at this point but you do have to keep stirring or it will burn (you can see in my photos a few burnt pieces. These were kind of unavoidable. If you get them, don't worry, you can't tell at all in the end ?).
  • Pour about ⅓ of the caramel over crackers in pan. Add another layer of crackers and cover with another ⅓ of the caramel. Repeat one more time so you have 3 layers of crackers and caramel.
