SODA BREAD WITH WALNUTS AND RAISINS
This Irish soda bread is inspired by a classic, made with white flour and currants, called "spotty dog." My whole wheat version proved to be the perfect home for some particularly luscious golden raisins and walnuts that I get from a vendor at my farmers' market.

Steps:
- Preheat the oven to 400 degrees. Line a baking sheet with parchment. Sift together the flours, baking soda and salt and place in a wide bowl
- Make a well in the middle of the flour, add the walnuts and raisins and pour in the buttermilk. Using a wide rubber spatula, a wide wooden spoon or your hands mix in the flour from the sides of the bowl to the center, turning the bowl and sweeping the flour from the sides into the buttermilk. Mix until the buttermilk, raisins and walnuts have been incorporated into the flour, then scrape out onto a lightly floured work surface. The dough should be soft and a bit sticky. Flour your hands so it won't stick to them.
- Gently and quickly knead the dough, only enough to shape it into a ball, then with floured hands gently pat it down to a 2-inch high round. Place it on the parchment-lined baking sheet and cut a 1/2-inch deep cross across the top. You shouldn't let too much time lapse between the time you add the buttermilk to the flour and the moment you put the loaf into the oven.
- Bake 40 to 45 minutes, until the loaf responds with a hollow sound when tapped on the bottom. Remove from the oven, wrap loosely in a cloth or kitchen towel, and cool on a rack.

Then add in the walnuts, both types of raisins and the orange zest; mix to distribute evenly.
- Gradually stir in 1 1/2 cups of buttermilk and the beaten egg. With your hands, knead the dough in the bowl until it just comes together and all ingredients are evenly combined. Form the dough into a round, place it on the baking sheet and flatten slightly. Brush the round all over with the remaining 2 Tablespoons of buttermilk. Use a sharp knife to cut an "x" into the top of the round.
- Bake in the oven for 35 to 40 minutes or until nicely browned and a toothpick inserted into the center of the bread comes out clean. Remove from the oven and allow the bread to cool on the baking sheet for 10 minutes. Serve warm or at room temperature, plain or with a bit of jam or butter.

- Heat the oven to 200°C/180°C fan/400°F/Gas 6. Trim the rind from the Stilton, then crumble the cheese fairly coarsely into a medium bowl. Add the walnut pieces and sultanas and mix well.
- Tip the white and wholemeal flours into a very large mixing bowl. Add the bicarbonate of soda and salt and mix thoroughly. Make a well in the centre and pour in 800ml buttermilk. You need to work quickly from now on. Using your hand, or a wooden spoon, mix everything together to make a slightly soft, shaggy-looking dough. Flours vary, and if the mixture feels very dry, or there are crumbs at the bottom of the bowl and it's difficult to bring the dough together, work in more buttermilk (or milk) a tablespoon at a time.
- Lightly dust the worktop with wholemeal flour and turn out the dough. Divide it into 2 equal portions, by weight or by eye. Gently knead one portion, just for a few seconds, to form a ball about 17cm across. Set it on a lined baking sheet and cut a deep cross into the ball. Sprinkle with flour. Repeat with the second portion of dough.
- Bake the loaves in the heated oven for 30–35 minutes until they are a good golden brown and sound hollow when tapped on the underside – check the loaves after 25 minutes and rotate the baking sheets, if necessary, so the loaves bake evenly. Transfer to a wire rack and leave to cool.

- Preheat oven to 400° F. Grease a 10-inch top diameter cast-iron frying pan or an 8 or 9-inch round baking pan. Set aside.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, walnuts, figs, baking powder, sugar, baking soda and salt. Make a well in centre of the dry ingredients, then pour in the buttermilk. Stir to form sticky, thick batter. Scrape in to prepared baking pan, pushing the dough into the edges of the pan.
- Sprinkle top with a bit of flour. Bake in pre-heated 400° oven until golden and a tester inserted in the centre comes out clean, 25-30 minutes. **Note: Check bread after 20 minutes or so and if it is browned enough, simply put a piece of tin foil over the top to stop further browning while it finishes cooking.
- Let stand in pan for 5 minutes, then run a knife around the edges. Gently loosen from the edges and slide bread onto a cooling rack. Allow to cool for at least 15 minutes before cutting.
