1 package butter cake mix
1 cup sour cream
1/3 cup vegetable oil
1/4 cup water
4 eggs
1/2 cup white sugar
2 teaspoons vanilla extract
3 teaspoons ground cinnamon
1/2 cup brown sugar
1 1/2 cups pecans (chopped)
1 cup confectioners' sugar (sifted)
2-4 tablespoons milk
2 tablespoons pecans (chopped)

Steps:

  • Preheat oven to 375 degrees. Spray a 10 cup bundt pan with nonstick cooking spray.
  • Remove 2 Tablespoons of cake mix to a small bowl and reserve set aside.
  • In a large bowl beat together the remaining cake mix, sour cream, oil, water, eggs, sugar, and vanilla, using a handheld electric mixer, for 2 minutes on high.
  • Mix together 2 tablespoons of reserved cake mix, brown sugar, cinnamon, and pecans; set aside.
  • Pour about 3/4 of batter into the prepared pan and then sprinkle cinnamon sugar mixture in the center of the batter. Spoon the remaining batter over the cinnamon-sugar layer and spread evenly.
  • Bake 45-55 minutes in the preheated oven. Cool for 25 minutes before removing from pan. Cool completely on a wire baking rack.

This classic Southern Sock It To Me Cake has a moist tender crumb, a ribbon of cinnamon pecan streusel in the middle and is drizzled with vanilla glaze.

3 cups all-purpose flour
1 teaspoon Kosher salt
1/2 teaspoon baking soda
1 cup 8 oz. unsalted butter, softened
2 1/4 cups granulated sugar
6 large eggs
1 cup sour cream ((8 ounces))
2 teaspoons vanilla extract
1 cup pecans (roasted/toasted and chopped)
1/3 cup packed brown sugar
2 teaspoons ground cinnamon
2 1/2 cups powdered sugar ((about 10 ounces))
3 tablespoons whole milk (plus more if needed)
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, combine the pecans, brown sugar and cinnamon. Set aside.
  • Preheat the oven to 325 degrees Fahrenheit and coat the inside of a (12 -cup) bundt pan with baking spray. You can also butter and then flour the pan.
  • Sift together the flour, salt and baking soda in a mixing bowl. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed for about 1 minute or until creamy.
  • Add the granulated sugar and beat on medium-high speed for about 3-4 minutes or until light and fluffy, stopping to scrape down the sides of the mixing bowl as needed.
  • Add the eggs one at a time, beating after each addition until just combined.
  • Add the flour mixture and sour cream alternately to the batter, beginning and ending with the flour mixture. Add the vanilla extract and mix to combine.
  • Pour half of the batter into the prepared bundt pan, sprinkle the pecan filling evenly over the batter. Spoon the remaining batter over the pecan mixture.
  • Bake for about 65 to 75 minutes or until a skewer inserted in the middle comes out clean.
  • Remove from the oven and allow the cake to rest in the pan for about 10 minutes, then invert onto a wire rack and allow to cool completely.
  • In a medium bowl, whisk together the powdered sugar, milk and vanilla until smooth. Add additional milk or sugar to get the right consistency.
  • Spoon the icing over the cooled cake.

1 cup sour cream
⅓ cup vegetable oil
2 teaspoons ground cinnamon
2 tablespoons brown sugar
1 cup chopped pecans
¼ cup white sugar
1 cup confectioners' sugar
2 tablespoons milk
4 eggs
¼ cup water

Steps:

  • Combine the 2 tablespoons of cake mix, cinnamon, brown sugar, and pecans; set aside.
  • In a large bowl, blend cake mix, sour cream, oil, water, eggs, and sugar. Beat on high speed for 2 minutes.
  • Pour 2/3 of batter into a greased and floured bundt pan. Sprinkle the cinnamon sugar mixture in the center of this and spread remaining batter evenly over this.
  • Bake at 375 degrees F (190 degrees C) for 45 to 55 minutes. Cool in pan for 25 minutes. Remove from pan.
  • To Make Glaze: Blend powdered sugar and milk together to make a glaze. Drizzle over cake. Enjoy!

1 box Betty Crocker™ Super Moist™ butter recipe yellow cake mix
1/2 cup granulated sugar
1 cup sour cream
3/4 cup vegetable oil
1 tablespoon butter flavoring
4 eggs
3 tablespoons packed brown sugar
2 teaspoons granulated sugar
2 teaspoons ground cinnamon

Steps:

  • Heat oven to 325°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray; lightly flour.
  • In large bowl, beat Cake ingredients with electric mixer on medium speed until well blended. Spread half of batter in pan.
  • In small bowl, stir together Cinnamon Mixture ingredients. Sprinkle over batter in pan. Pour remaining batter over top.
  • Bake 55 to 60 minutes. Cool in pan 5 minutes. Run knife around edge and center of pan. Place cooling rack upside down over pan; turn rack and pan over. Remove pan.

- TOPPING INGREDIENTS
1 teaspoon(s) cinnamon
1 teaspoon(s) chopped nuts
2 tablespoon(s) confectioners' sugar
- STREUSEL
4 - eggs
1/2 cup(s) oil
1 cup(s) chopped pecans
1/2 cup(s) sugar
8 ounce(s) sour cream
1 teaspoon(s) cinnamon

Steps:

  • Mix cake mix, sugar and oil well.
  • Add eggs, beat well.
  • Add sour cream and nuts.
  • Grease bundt pan with butter.
  • Mix and sprinkle streusel mix in bottom of pan, pour 1/2 cake mix into pan.
  • Top with topping mix.
