SOBA-NOODLE BOWL WITH TOFU

Everyone will adore the combination of cold soba noodles, gingery asparagus, and luscious steamed tofu in this quick and easy dinner that's vegan to boot.

12 ounces soba noodles
3 tablespoons reduced-sodium soy sauce
1/4 cup fresh lime juice (from 2 to 3 limes)
4 teaspoons chili sauce, such as sambal oelek
4 teaspoons light-brown sugar
1 1/2 teaspoons toasted sesame oil
Kosher salt
2 tablespoons julienned fresh ginger (from a peeled 2-inch piece)
1 pound asparagus, trimmed
1 pound silken tofu, drained
Cilantro leaves and toasted sesame seeds, for serving

Steps:

  • Cook noodles in a pot of boiling water until al dente, about 4 minutes. Drain; run under cold water. Stir together soy sauce, lime juice, chili sauce, sugar, and 1/2 teaspoon oil. Season with salt.
  • Heat a large straight-sided skillet over medium-high. Add remaining 1 teaspoon oil, ginger, and asparagus; season with salt. Cook 1 minute. Add 1 cup water and bring to a boil, then cover, reduce heat to low, and cook, shaking pan occasionally, until crisp-tender, 3 minutes. Transfer asparagus to a cutting board; let cool, then slice on the bias. Toss with noodles and 1/4 cup dressing. Return skillet to medium-high heat; add tofu. Bring to a boil, then reduce heat to low, cover, and cook 6 to 8 minutes. Divide noodles among bowls. Top with tofu, cilantro, sesame seeds, and more dressing; serve.

3 ounces dried soba noodles
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon olive oil
½ green bell pepper, chopped
¼ onion, sliced
½ cup fresh green beans, trimmed and cut into 1 1/2-inch pieces
1 cup baby spinach leaves

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Drop in soba noodles and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain.
  • Meanwhile, combine soy sauce, oyster sauce, and mirin in a small bowl. Set aside.
  • Heat olive oil in a skillet over medium-high heat. Add bell pepper, onion, and green beans and saute until softened but still crisp, 2 to 3 minutes. Add soba noodles and toss with the cooked vegetables. Mix in soy sauce mixture and cook for an additional 1 to 2 minutes. Add baby spinach and cook until desired doneness, 2 to 3 minutes. Serve in a bowl.

1 package (12 ounces) uncooked Japanese soba noodles or whole wheat spaghetti
2 tablespoons sesame oil
2 cups fresh small broccoli florets
1 medium onion, halved and thinly sliced
3 cups frozen shelled edamame, thawed
2 large carrots, cut into ribbons with a vegetable peeler
4 garlic cloves, minced
1 cup reduced-fat Asian toasted sesame salad dressing
1/4 teaspoon pepper
Sesame seeds, toasted, optional

Steps:

  • In a 6 qt. stockpot, cook noodles according to package directions; drain and return to pan., Meanwhile, in a large skillet, heat oil over medium heat. Add broccoli and onion; cook and stir until crisp-tender, 4-6 minutes. Add edamame and carrots; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Add vegetable mixture, dressing and pepper to noodles; toss to combine. Sprinkle with sesame seeds if desired.

1 garlic clove, minced
3 tablespoons toasted sesame oil
2 1/2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 teaspoons honey
2 teaspoons sriracha garlic sauce
1 lime, zest and juice
2 cups sliced savoy cabbage
1 cup cooked shelled edamame
2 carrots, peeled and julienned
4 scallions, divided
1/2 cup sliced red onion
1/2 cup chopped cilantro (optional)
2 tablespoons toasted sesame seeds
salt and pepper, to taste

Steps:

  • Bring a pot of salted water to a boil. Cook soba noodles until al dente, 8 minutes. Drain and rinse.
  • Meanwhile, make the dressing: Whisk together garlic, sesame oil, soy sauce, vinegar, honey, Sriracha, and lime juice and zest. Season with pepper. In a large bowl, combine cabbage, edamame, carrots, scallions, red onion, cilantro, and sesame seeds. Add reserved soba and dressing; toss. Season with salt and pepper.
