SIMPLE AND DELICIOUS KALE SOUP

Steps:
- Melt butter in a pot over medium-high heat. Saute onion in hot butter until tender, 5 to 10 minutes. Stir chicken broth and tomato into onion.
- Heat broth mixture to near-boiling and stir kale into liquid until completely submerged. Cook until kale wilts, 3 to 5 minutes. Stir beans into soup and cook until heated through, another 2 to 3 minutes.

SOUPER CHICKEN SOUP
I'm sure you already have your favorite chicken soup recipe- if you like give this hearty soup a try...filled with veggies and chicken pieces..this soup like most soups can be adjusted to your preference in vegetables and pastas, broken spaghetti, orzo, fresh home made noodles, dumplings,rice, etc...I hope you get a chance to try it soon..

Steps:
- In a large Dutch oven heat the oil. add the next 8 items; sauté over medium heat until vegetables begin to soften.Add the chicken broth, soup granules and chicken. Bring to a boil.Just before serving add parsley and cinnamon.Remove bay leaf.Place lemon slice on each serving.
- If using option #2- Blend the butter and flour together. Then gradually add it to the soup mixture. Simmer 10 minutes more, stirring frequently. Beat the egg yolks until light color. Gradually add some of the hot soup to the yolks stirring constantly.Add Romano cheese to mixture then return all the mixture to the soup pot and heat through .If you like add one of the items from option #1 and simmer until cooked through. Just before serving add parsley and cinnamon and remove bay leaf. Place lemon slice on each serving.
SOUPER-SIMPLE MEATBALL STEW
Very simple to put together; very big on taste! You can also use cream of mushroom soup in place of the tomato soup for a different flavor. This is a family favorite; even the kids and husband can make it.

- Place meatballs in a crock pot set on low power. Add potatoes, carrots, celery, and onion in layers. Sprinkle with the black pepper.
- Combine soup mix and boiling water in a mixing bowl until dissolved. Stir in tomato soup until uniform. Pour over meatballs and vegetables in crock pot. Top off with water if necessary to just barely cover vegetables.
- Cover and cook on low power for 5 to 6 hours. Taste and adjust seasonings. It may not need extra salt because of the salt in the soup mix. Let your taste be your guide. Stir and serve in soup plates, with corn muffins, sourdough rolls, or biscuits.
SO SIMPLE SOUPER SOUP
Today we are awaiting an ice storm (again) so after grocery shopping I needed to make a quick dinner that was hearty and warm. (just in case we lose power like they are predicting) Delicious and filling according to my DH and DS.

Steps:
- In large kettle add all ingredients except parsley, bring to a boil, reduce to simmer.
- Simmer for 30 minutes til carrots are done but not mushy.
- add in parsley last 2 minutes.
- pepper to taste.
