So-Cal University Girl's Granola Bars image

I adapted a few granola bars to fit my needs as a short-on-cash college kid. They're easy to adapt to what you have in your pantry and perfect to store individually for a healthy grab-and-go snack! Using dried cherries gives the bars a tarty edge! I recommend cutting bars and storing in refrigerator wrapped individually for grab-and-go snacking.

cooking spray
1 ½ cups quick-cooking oats
1 cup almond flour
¾ cup chopped dried mixed fruit
½ cup crispy rice cereal
½ cup brown sugar
½ cup chopped pecans
½ cup chocolate chips
¼ cup flax seeds
1 tablespoon instant coffee granules, or more to taste
1 teaspoon ground cinnamon
¾ cup applesauce
½ cup honey
1 egg
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Mix oats, almond flour, dried fruit, rice cereal, brown sugar, pecans, chocolate chips, flax seeds, instant coffee granules, and cinnamon in a large bowl.
  • Whisk applesauce, honey, egg, and vanilla extract in a small bowl; pour into oat mixture. Stir until evenly incorporated. Press batter into prepared baking dish.
  • Bake in the preheated oven until edges are golden brown, 25 to 30 minutes. Cool completely before cutting into granola bars.

2 cups rolled oats
½ cup shredded coconut
½ cup honey
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
  • Spread the oats and coconut evenly across a baking sheet.
  • Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
  • Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
  • Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

2 ½ cups oats
1 ½ cups quinoa
1 cup slivered almonds
⅓ cup chia seeds
1 cup crunchy peanut butter
½ cup honey
¼ cup coconut oil, warmed
½ cup flaxseed meal
1 teaspoon salt
2 cups dark chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread oats, quinoa, almonds, and chia seeds on a baking sheet.
  • Toast in the preheated oven, stirring halfway through, until golden brown, about 15 minutes.
  • Mix peanut butter, honey, and coconut oil together in a bowl until thoroughly combined. Mix in oat mixture, flaxseed meal, and salt until well combined. Press granola mixture into a 12x18-inch baking pan.
  • Bake in the preheated oven until bars set, about 5 minutes. Remove from oven; sprinkle with chocolate chips. Bake until chocolate is just melted, about 5 minutes. Spread melted chocolate evenly over bars with a rubber spatula.
  • Place in the freezer until chocolate is firm, about 20 minutes; cut into bars.

Great quick and easy granola bar recipe that kids can make. Perfect to throw in lunches or in your purse for travel. You can also add 1/4 cup wheat germ without changing the consistency. Change up the dried fruit, nuts, and chocolate for different flavors. I generally keep the bars in the refrigerator until I am ready to eat them, but these keep well to take to work or school.

1 ¼ cups chunky natural peanut butter
1 cup ground flaxseed
¾ cup honey
¾ cup dried cranberries

1 cup dried cranberries
1 cup pecan halves
½ cup ground flax seed
½ cup milk chocolate chips
¼ cup wheat germ
1 cup packed light brown sugar
½ cup honey
2 tablespoons vegetable oil
½ teaspoon salt
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking dish with parchment paper or waxed paper.
  • Mix oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ together in a bowl.
  • Stir brown sugar, honey, vegetable oil, and salt together in a large microwave-safe bowl; heat in microwave for 30 seconds. Stir mixture and heat in microwave again until smooth, about 30 seconds more. Stir vanilla extract and cinnamon into brown sugar mixture.
