LINGUINE WITH CLAM SAUCE
This is an easy, inexpensive, white clam sauce. Try it over any kind of pasta; lemon pepper linguine is especially tasty. Extend the sauce for larger portions by adding in one half cup of chicken broth.

- Bring a large pot of salted water to boil. Cook pasta according to package directions.
- Combine clams with juice, butter, oil, minced garlic, parsley, basil, and pepper in a large saucepan. Place over medium heat until boiling. Serve warm over pasta.

THE BEST CLAM SAUCE
I cannot order better white clam sauce in a restaurant. My boyfriend begs me to make this! Thanks Mom! Serve this dish with fresh garlic bread and a nice white wine. I promise this is a keeper and you won't like any other white clam sauce!

Steps:
- Bring a large pot of salted water to a boil, add linguini and return water to a boil. Let linguini cook until al dente; drain well.
- In a large skillet, saute the onion and garlic in olive oil until the onions are translucent. Drain the cans of minced clams, reserving half of the juice.
- Stir the clams, reserved juice, butter, salt and pepper, and wine. Simmer the mixture for 20 minutes, until the sauce has reduced 1/3 and has thickened.
- Spoon the clam sauce over the linguini and serve.

- Begin preparing pasta. While preparing pasta, saute onions and garlic in olive oil. Add all ingredients except can of clam sauce. Heat on medium. Once mixture is heated, reduce heat to medium low and add clam sauce. Heat slowly.
- Once pasta is done, combine with sauce mixture and garnish with parmesan cheese. Enjoy!

LINGUINI AND WHITE CLAM SAUCE
The cost could be prohibitive but I get Snows minced clams from the 99 Cent store at half the price of grocery stores!

Steps:
- 1. Open the canned clams, and strain off the juice into a separate bowl.
- 2. Begin melting the butter/heat olive oil in a large skillet over medium high heat. Slice garlic (for milder taste) or use a microplane to grate the garlic (stronger taste) directly into the pan. Cook garlic for 2-3 minutes.
- 3. Stir flour into the butter/oil mixture and cook, stirring for 1-2 minutes. Pour the clam liquid, into the frying pan, whisking to avoid lumps. Bring to a boil, and cook 2 minutes.
- 4. Stir in the cream and continue cooking for 1 minute. Sauce should coat the back of a spoon.
- 5. Turn off heat, stir in clams and parsley. Taste for seasoning and add salt and pepper. Serve over hot linguini with a green salad and crusty bread.

- In a 4 quart saucepan, satue garlic and onion in oil til soft. Do not brown.
- Add wine, chicken broth, and clam liquid. Add pepper, tabasco, and oregano. Simmer for 15 minute
- Add cream cheese, stir into sauce til well blended. Add clams and if desired other seafood.
- cook linguine, drain well and add to sauce. Let pasta rest in sauce for 5 min to absorb flavors.

LINGUINE AND WHITE CLAM SAUCE

- 1. Boil water for Linguine with 1/4 cup of olive oil to keep pasta from sticking. Cook pasta according to package directions. 2. put remaining oil in skillet with minced garlic over medium heat. 3. Heat for about five minutes and add onions. 4. After another five minutes, or once garlic is golden and the moisture is goen (you'll see them get smaller), add clam juice and wine. 5. heat over medium heat for around 5 minutes as the juices bubble, add the clams. 6. Stir the clams into the juice then add the parsley, salt, and pepper. Simmer all of these together 10 minutes. 7. Remove from heat. 8. I like to toss the linguine with the sauce and then serve, but you can also serve pasta with sauce over it.
WHITE CLAM SAUCE
Steps:
- Pour olive oil to coat bottom of 4 qt saucepan. Heat on med high. Mince garlic and toss into hot oil. Turn heat to low and stir constantly until softened but do not allow to brown. Add contents of 2 cans chopped clams. rinse can with tbsp of water to get all pieces of clams, and add to pot. Add basil, oregano and red pepper flakes. Stir to mix and let simmer for 10 minutes. Meanwhile cook lb. of linguini to desired doneness. Serve in pasta bowls, using ladle to cover pasta with sauce. Sprinkle with parmesan cheese if desired.
