This is a great gift idea. Quick and cheap too. They're great on a cookie tray if you choose to make them yourself. For smaller gifts, put half the recipe into two pint jars and on the label adjust the yield to 2 dozen and adjust the tag ingredients to half.

Number Of Ingredients 3

1/2 cup confectioners' sugar
2 cups all-purpose flour
1 cup chopped pecans

Steps:

  • In a medium bowl, combine the confectioners' sugar and flour. Place into a 1 quart canning jar. Put the chopped pecans on top. Close the lid and attach a tag with the following instructions:

  • Makes 4 dozen
  • Preheat the oven to 325°F Grease cookie sheets. In a medium bowl, cream together 3/4 cup of shortening and 1/4 cup of margarine. Stir in 2 teaspoons of vanilla. Add the entire contents of the jar and mix well. Roll dough into 1 inch balls and place them on the prepared cookie sheet. Bake for 20 to 25 minutes, until lightly browned. Cool, and roll in confectioners' sugar.

These snowball cookies are a must for Christmas, New Year's and weddings. They are delicious and are very easy to make. I usually double the recipe because they tend to disappear quickly.

Number Of Ingredients 6

2 stick butter (16 tablespoons or 1 cup)
1/4 c powdered sugar (plus extra 2 cups in a shallow dish/bowl for coating baked cookies)
2 tsp pure vanilla extract
1 Tbsp water
2 c all purpose flour
1 c chopped pecans

Steps:

  • 1. Preheat oven to 300 degrees F.
  • 2. Using electric hand mixer, cream together the butter and 1/4 cup powdered sugar.
  • 3. Add vanilla, water and flour and mix well with sturdy spoon.
  • 4. Stir in pecans.
  • 5. Using hands, form mixture into small balls and place on ungreased cookie sheets or cookie sheets lined with parchment paper.
  • 6. Bake at 300 degrees F for 25 to 30 minutes.
  • 7. Working quickly, roll in powdered sugar while still hot.
  • 8. Let cool, then roll in powdered sugar again.
  • 9. Store in an airtight container.

These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.
