1 pound fresh snow peas
1/2 cup water
2 tablespoons sesame seeds
2 tablespoons reduced-sodium soy sauce
1 tablespoon sesame oil
1/8 teaspoon pepper

Steps:

  • Place the snow peas and water in a microwave-safe bowl. Cover and microwave on high for 6 minutes or until peas are crisp-tender; drain well. , Place the remaining ingredients in a jar with a tight-fitting lid; shake well. Drizzle over snow peas and toss to coat.

1 spring onion, sliced
2 tablespoons olive oil
2 cups English peas, shelled (about 12 ounces)
6 mint leaves, torn
Salt
Water

Steps:

  • Sauté the spring onion in two tablespoons olive oil over medium-high heat. Add the shelled peas, a pinch of salt, and enough water to barely cover. Cook over high heat for 2 minutes, then add the torn mint leaves. Continue cooking until the peas are tender, a few more minutes. Check for seasoning, and add more salt if needed.

2 tablespoons olive oil
2 medium yellow onions, peeled and diced
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 garlic cloves, minced or pureed
2 medium Yukon Gold potatoes, peeled and sliced thin
5 cups chicken stock
16 ounces frozen baby peas
1/3 cup sour cream
3 tablespoons freshly chopped mint

Steps:

  • Heat olive oil in large kettle over medium heat. Add onions, salt, and pepper, and cook 5 minutes until onions have softened. Sir in the garlic and cook 1 minute until its aroma is released. Add the potatoes and saute 5 minutes until they begin to color. Add the chicken stock, lower the heat, and simmer gently 25 minutes until potatoes are soft. Add the peas and cook 3 minutes until tender but still bright green. Puree the mixture either through a food mill, with an immersion blender, or in a food processor, until smooth. Place in a clean pot, stir in the cream, and rewarm gently. Stir in the fresh mint and serve.
  • In Portugal, this soup is often made with fresh fava beans. Use them if you can find them. Mint (horteln) grows abundantly in Portugal and is widely used in savory dishes, frequently in combination with coriander (coentro).

1/2 lb snow peas, trimmed (about 3 cups)
1 tablespoon fresh mint leaves

Steps:

  • NOTE: for a more Asian flare, use a little bit less butter and add some toasted or regular sesame oil. If using frozen snow peas, thaw first.
  • Melt butter over medium heat and lightly brown the slivered almonds.
  • Add snow peas, fresh mint and 2 tablespoons water.
  • Cover pan and cook 2-3 minutes or just until snow peas are crisp-tender.
  • Season with salt and pepper to taste.

1 pound (455g) sugar snap peas or snow peas (, ends trimmed)
1/2 medium onion (, sliced thin)
1/2 cup (30g) chopped fresh mint
1 cup (240ml) water
2/3 cup (160ml) distilled white vinegar
Zest of 1 large lemon
Juice of 1 large lemon ((about 3 tablespoons))
1 tablespoon (15ml) sugar
1 tablespoon (15ml) kosher salt
2 teaspoons (10ml) coriander seeds
1 teaspoon (5ml) cumin seeds

Steps:

  • In a 2-quart (2-L) jar, layer the peas, onion, and mint.
  • Make the pickling brine: In a large bowl, combine 1 cup (240ml) water with all the brine ingredients (vinegar, lemon zest, lemon juice, sugar, coriander seeds, and cumin seeds).
  • Pour the brine into the container with the peas, covering them completely.
  • Refrigerate for at least 8 hours before eating.
