Number Of Ingredients 18

BATTER:
1/2 cup self-rising flour
1 cup white sugar
1/4 teaspoon baking soda
1 cup chopped dates
1 cup chopped pecans
4 eggs, beaten
2 teaspoons vanilla extract
1/4 teaspoon salt
FILLING:
5 oranges - peeled, sectioned, and cut into bite-size pieces
5 bananas, cut into bite-size pieces
1 (8 ounce) can crushed pineapple, with juice
1/4 cup white sugar
TOPPING:
1 pint whipped cream
1 cup flaked coconut
1 (4 ounce) jar maraschino cherries

Steps:

  • 1. Preheat oven to 350 F. Grease two 9 x13 inch cake pans. 2. In a medium bowl combine flour, sugar, baking soda, dates, pecans, eggs, vanilla extract and salt. Mix well and spread evenly between prepared pans. 3. Bake in preheated oven for 20 minutes. Crumble into small pieces and cool. 4. In a large bowl combine oranges, bananas, pineapple and sugar. 5. On a large serving platter spread 1/2 of crumb mixture. Spoon fruit mixture on top. Sprinkle remaining crumb mixture over fruit. Spread whipped cream over crumbs, sprinkle with coconut and top with cherries. Chill before serving.

1 cup butter, softened
2 cups sugar
4 large eggs, separated
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2-1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt, divided
1 cup whole milk
1 cup sweetened shredded coconut
1-1/2 teaspoons grated orange zest
ICING:
2 cups sugar
3 large egg whites
5 tablespoons melted snow (or water)
2 teaspoons light corn syrup
1 teaspoon vanilla extract
Sweetened shredded coconut

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Add egg yolks and extracts; beat well. Combine flour, baking powder and 1/2 teaspoon salt. Add to creamed mixture alternately with milk. Add coconut and orange zest. In a small bowl, beat egg whites with remaining salt until stiff peaks form; gently fold into batter. Pour into three greased 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean (if wood burning stove is used, start peeking after 25 minutes). Cool in pans for 10 minutes; remove to wire racks to cool completely. , For icing, combine sugar, egg whites, water and corn syrup in a heavy saucepan or double boiler. With a portable mixer, beat on low for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 8-10 minutes. Pour into a bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Place one cake layer on a serving plate. Spread with frosting and sprinkle with coconut. Repeat. Top with last layer. Frost top and sides of cake; sprinkle with coconut.

1/2 cup butter
1 1/4 cups sugar
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
3 egg whites
3 squares semi-sweet chocolate, grated
2 teaspoons vanilla
3 egg yolks
2 cups icing sugar
1/2 cup butter
2 teaspoons vanilla
3 squares semi-sweet chocolate

Steps:

  • CAKE: Beat butter and 1 cup sugar until light and fluffy.
  • In a separate bowl, mix flour, baking powder and salt together; add to butter mixture and mix well.
  • Add milk gradually.
  • In another bowl, beat egg whites with remaining 1/2 cup sugar, and fold gently into mixture; add grated chocolate and vanilla.
  • Grease two 9-inch round cake pans and line with parchment paper.
  • Pour cake batter evenly between the pans and bake at 350F for 25-30 minutes. Let cake cool.
  • ICING: Mix yolks, sugar, butter and vanilla until fluffy.
  • Spread icing on one cake layer; place second layer on top and spread icing over top and sides.
  • Melt chocolate and drizzle over icing. Use the tines of a fork to make squiggly lines, giving the impression of ski marks in snow.
  • Makes 14 servings.
