SNOW ON THE MOUNTAIN GREEN BEANS
This is a side dish of fresh green beans cooked in olive oil and lemon juice and topped with feta cheese.

Steps:
- Bring a large pot of lightly salted water to a boil. Add green beans, and cook uncovered until just tender, 3 to 4 minutes. Meanwhile, melt the butter with the olive oil in a large skillet over medium-high heat. When the beans are almost tender, drain and add to the skillet. Continue cooking the green beans in the butter until they are tender, about 2 minutes more.
- Season the beans with salt, pepper, and lemon juice. Place onto a warmed serving dish, and sprinkle with crumbled feta cheese.

SNOW ON THE MOUNTAIN SALAD
I found this recipe years ago and thought the name was strange but I guess it does look like snow on a mountain when it is served. It is delicious.

Steps:
- Trim bases off lettuce.
- Separate leaves and rinse; pat dry.
- In small bowl combine mayonnaise, Parmesan cheese, lemon juice, garlic salt and pepper.
- Stack the lettuce leaves on a cutting board and cut crosswise into small pieces, enough to measure 9 cups.
- Transfer to a large salad bowl.
- Pour the seasoned mayonnaise over the lettuce and toss well; set aside.
- Wash and trim cauliflower.
- Cut the cauliflower head in half.
- Grate half the cauliflower.
- Mix the grated cauliflower with the bacon, blue cheese and chopped green onion tops.
- Sprinkle over the top of the salad.

- Add chicken and broth into Instant Pot. Sprinkle the chicken with curry powder, poultry seasoning, salt, pepper and garlic powder.
- If you’d like to make pot-in-pot rice add rice and water to a pan*. Cover the pan. Place a long legged trivet* into the Instant Pot on top of the chicken. Place the pan on top of the trivet.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. Carefully remove the rice pan.
- Shred the chicken. Make a cornstarch slurry. In a small bowl stir together 2-3 Tbsp of cornstarch with 3 Tbsp of water, until smooth. Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Salt and pepper the sauce to taste.
